Last year I made this for Christmas morning. I made it the day before,
put in fridge wrapped in clear wrap.
This is easy to make.
Raspberry Jelly Roll
3 eggs
1 cup sugar
1/3 cup water
1 tsp Watkins Vanilla
3/4 cup flour OR 1 cup cake flour
1 tsp baking powder
1/4 tsp salt
powdered sugar
2/3 cup raspberry jelly, jam, or use strawberry
Heat over to 375º. Line jelly roll pan with parchment paper, aluminum foil
or waxed paper:; generously grease paper. Beat eggs in a small bowl with
electric mixer on high speed about 5 minutes or until very thick and lemon
colored. Pour eggs into medium bowl. Gradually beat in sugar. Beat in
water and vanilla on low speed. Gradually add flour, baking powder, and
salt, beating just until batter is smooth. Pour into pan, spreading to
corners.
Bake 12 - 15 minutes or until toothpick inserted in center comes out
clean. Immediately loosen cake from edges of pan and turn upside down onto
towel generously sprinkled with powdered sugar. Carefully remove paper.
Trim off stiff edges of cake if necessary. While hot, carefully roll cake
and towel from narrow end. Cool on wile rack at least 30 minutes.
Unroll cake and remove towel. Beat jelly slightly with fork to soften;
spread over cake. Roll up cake. Sprinkle with powdered sugar.
Tomorrow egg nog.

I went to Ohio to visit my brother Ralph (Bud). I fist saw him when he
came home from the Hospital. He was weak but in Good Spirits. During the 4
days of the visit he regained strength and the swelling on his arms
reduced to normal size. Since this is Nancy’s brother your prayers have
been well appreciated.
Included in this email is a recipe for Croatian Stuff Cabbage (Cleveland
Style).
I notice that most recipes for Stuffed Cabbage includes tomatoes or tomato
soup. While I did grow up with that type of stuffed cabbage I have become
very fond of Croatian Stuffed Cabbage, as made by most of the immigrants I
know here in Cleveland, which has no tomatoes added. Below is one such
recipe also note the recipe calls for pickled cabbage, here in Cleveland
Zagreb Meat market offers these, they are whole heads of cabbage made like
you would make sauerkraut. Dobar tek!
Stuffed Cabbage
2 heads pickled cabbage
1 lb. ground beef
1 lb. smoked ham, chopped
1/4 c. smoked bacon, chopped
2. tbsp. flour
1 c. uncooked rice
2 tsp. paprika
1 onion, chopped
1 egg
2 tbsp. oil
1 lb. smoked ham hocks or pork ribs
salt and pepper to taste
Fry bacon in its own fat. Add onion and saute five minutes. Remove from
heat and drain excess fat. Allow to cool slightly, combine with ground
beef, chopped ham, rice, egg, 1 teaspoon paprika, salt and pepper, remove
large outer leaves of the cabbage, place filling in each leaf and roll up
from center to outer edge. Tuck sides into center to hold roll together.
Cut remaining cabbage into strips. Add another half pound of sauerkraut,
if desired. Place half the sauerkraut in the bottom of a large pot.
Arrange cabbage rolls over sauerkraut. Add smoked ribs or ham hocks. Cover
with remaining sauerkraut. Heat oil and brown flour in it. Add a teaspoon
of paprika and water to make a thick roux. Cook for 5 minutes. Pour roux
over cabbage rolls. Add water to cover cabbage and simmer over low heat
for 1/2 to 2 hours until rice is fully cooked. Do not stir cabbage rolls
while cooking. Instead, shake pot occasionally to prevent sticking.
Transfer to warm serving dish.
By the way sarma is thought by some to come from a Turkish word meaning
"to roll".

catalogs. You might make a personal hanger, use card board shaped like
something of personal interest or hobby, cover with contact paper, punch

attached to the top (or back) for a hanger.

A blessed Christmas to you Nancy and all of our Nancyland folks. To
Boots in Va. you can display the earrings, pins, broaches, any type of
jewelry on velvet that has been placed over a lightweight cardboard and
secured. (like the back of a notepad for instance). Just push earrings
thru, pin on from back of velvet, or the cardboard if it is lightweight
enough. Size everything so that the final result will fit a photo frame.
This is a great way to display them for a gift. Then give the earring
trees that everyone has been talking about, just in case they want to use
the items, as they would be easier to access and put away. I have a small
collection of costume jewelry, rhinestones, bakelite, etc. that I have
collected over the years. I display them for all to see in this manner,
and found a lovely old antique picture frame to put them in. I placed mine
on the black velvet, but you could use any fabric you like, velour or
others. This is more for display than for daily use. Hope this helps.
While I am here, I have a recipe some might like at this holiday time.
Nadya's Christmas Candy
1/2 cup butter
1/4 cup sugar
5 Tbsp. cocoa
1 tsp. vanilla
1 egg.
Place in double boiler and stir until butter melts and mixture resembles
custard.
Remove from heat and add :
2 cups graham cracker crumbs
1 cup coconut
1/2 cup chopped Walnuts or pecans. (Your choice)
Pack evenly in 9" square pan.
Cream 1/2 cup butter. Combine with 2 Tbsp. Custard Dessert mix and add to
the creamed butter. Blend in 2 cups powdered sugar and spread over the
first mixture. Let stand 15 minutes or until firm.
Melt 4 squares semi-sweet chocolate with 1 Tbsp. butter and spread over
the mixture. Cut in finger lengths or squares. This really isn't difficult
and it is very good. Enjoy.

In Nancy's 12/8 Newsletter Yolanda asked for a recipe for a chocolate cake
with vinegar and no eggs. I searched for a chocolate cake recipe
with vinegar and no eggs and found the following recipe.
No Egg Wonder Cake
1-3/4 cups sifted cake flour
1 cup sugar
1/4 cup cocoa
1 tsp. baking soda
1/2 tsp. salt
1/3 cup shortening
1-1/2 tsp. vanilla extract
1 tbsp. vinegar
1 cup cold water
Preparation:
Sift dry ingredients together into a mixing bowl. Add remaining
ingredients and beat until almost smooth. Pour into a greased and floured
9 inch square baking pan. Bake at 350º for about 30 minutes, or until a
wooden pick or cake tester inserted in center comes out clean. Frost cake
or serve with whipped topping.

Hi Nancy and Recipe Lovers! This is an easy cookie recipe that I just
got. I had some of these cookies at work! They are wonderful! I am going
to make some this weekend!

One Cup of Everything Cookies
1 C. butter softened
1 C. brown sugar
1 C. white sugar
3 eggs
1 C. peanut butter
1 C. chocolate chips
1 C. flour
1 T. baking soda
1 C. oatmeal
1 C. raisins
1 C. pecans - chopped
Preheat oven to 350° F. Beat margarine, both sugars, eggs, and peanut
butter until creamy. Add remaining ingredients and mix well. Drop by
tablespoonfuls on cookie sheet and bake for 10 minutes. Makes approx 9
dozen.
The mini peanut bites are great with chocolate but you can also use the
white bark and dip . I also use the larger crackers add peanut butter and
dip in both the chocolate and the white. .Makes a lot of cookies fast.

JAMIES COCONUT CAKE
Basic 1-2-3-4 Cake but substitute 1 cup canned, unsweetened coconut milk
for regular milk, recipe follows
Filling
3/4 cup sugar
1 cup sour cream
4 tablespoons milk
1/2 cup flaked, sweetened coconut
Frosting
1 recipe 7-minute Frosting
Flaked, sweetened coconut, for sprinkling
Follow directions for Basic 1-2-3-4 Cake, substituting coconut milk for
regular milk. While cake is baking, prepare filling. Stir together sugar,
sour cream, milk, and coconut in a bowl until well blended. Remove cake
layers from oven and allow cake to remain in pans as you prepare to stack
and fill. Remove first layer and invert onto cake plate. Using the wrong
end of a wooden spoon, poke holes approximately 1-inch apart until entire
cake has been poked. Spread 1/3 of filling mixture on cake layer. Top with
second layer, repeat process. Top with last layer and repeat process
again. (As I stack layers together I stick them with toothpicks to prevent
cake from shifting).
Prepare 7-Minute Frosting. Frost top and sides of cake. Sprinkle top and
sides of cakes with additional coconut.
Yield: 1 (3-layer) cake
Preparation time: 30 minutes
Cooking time: 25 minutes
Ease of preparation: Easy
Basic 1-2-3-4 Cake:
1 cup (2 sticks) butter, at room temperature
2 cups sugar
4 eggs
3 cups sifted self-rising flour
1 cup milk
1 teaspoon pure vanilla extract
Preheat oven to 350 degrees F.
Grease and flour 3 (9-inch) cake pans. Using an electric mixer, cream
butter until fluffy. Add sugar and continue to cream well for 6 to 8
minutes. Add eggs, 1 at a time, beating well after each addition. Add
flour and milk alternately to creamed mixture, beginning and ending with
flour. Add vanilla and continue to beat until just mixed. Divide batter
equally among prepared pans. Level batter in each pan by holding pan 3 or
4 inches above counter, then dropping it flat onto counter. Do this
several times to release air bubbles and assure you of a more level cake.
Bake for 25 to 30 minutes or until done. Cool in pans 5 to 10 minutes.
Invert cakes onto cooling racks. Cool completely and spread cake layers
with your favorite frosting to make a 3-layer cake.
Yield: 3 layer cakes
Preparation time: 10 minutes
Cooking time: 25 to 30 minutes
Ease of preparation: Easy
7-Minute Frosting:
1 1/2 cups sugar
1/4 teaspoon cream of tartar or 1 tablespoon white corn syrup
1/8 teaspoon salt
1/3 cup water
2 egg whites
1-1/2 teaspoons pure vanilla extract
Place sugar, cream of tartar or corn syrup, salt, water, and egg whites in
the top of a double boiler. Beat with a handheld electric mixer for 1
minute. Place pan over boiling water, being sure that boiling water does
not touch the bottom of the top pan. (If this happens, it could cause your
frosting to become grainy). Beat constantly on high speed with electric
mixer for 7 minutes. Beat in vanilla.

I love them but could not find them so now I make them for the whole

The advantages are that they can be made to the sizes you need and they
cost MUCH less than buying them (about a third of the cost...) and are
extremely simple to make. When I have the time I also embroider or
appliqué them.

Re: Dear Nancy and All, I was watching the food network this weekend and
they were having different chefs with different cookies. Anyways, This
particular chefs first name was Ina and her last name was I think Garten
she was making cookies from a pie dough and had a very thin layer of jam
over the dough. Then in another bowl she mixed up walnuts, raisins and
brown sugar and I think something else. Then she lay the layer over the
jam layer and rolled IL all out with a rolling pin then cut the dough into
triangles and rolled them into crescents and baked them up. Oh I hope I've

Italian Cheese Ball
8 ounces cream cheese, softened
8 ounces blue cheese, crumbled
1/3 cup butter, softened
1 tablespoon chives or green onion, chopped
2/3 cup black ripe olives, coarsely chopped
1/3 cup walnuts, finely chopped
Blend cream cheese, blue cheese and butter. Add chives and olives. Mix
well and form into a ball. Wrap in plastic wrap and chill a few hours or
overnight. Roll in chopped walnuts before serving. Serve with Wheat Thins
or other similar crackers.

Date Macaroons
2 egg whites
1 cup chopped dates
1 cup powdered sugar
1 cup chopped nuts
Preheat oven to 325 degrees. Beat egg whites until stiff and dry. Add
remaining ingredients in order given. Drop by teaspoonfuls onto well-oiled
baking sheet.
Bake in slow oven (325) until delicate brown. Cool before removing from
pan.
Makes 2 dozen.

This is the best breakfast casserole I have ever made and I've made
several different ones. Hope you enjoy it.
Farmer's Strata
Preheat oven to 325º
1 pound sliced bacon, cut into 1/2" pieces
2 cups chopped cooked ham
1 small onion, chopped
10 slices day old white bread, cubed
1 cup cubed cooked potatoes (I buy them in a can)
3 cups (12 oz.) shredded Cheddar cheese
8 eggs
3 cups milk
1 Tbsp. Worcestershire sauce
1 tsp. ground mustard
pinch salt & pepper
In skillet, cook bacon until crisp; add ham and onion. Cook and stir until
onion is tender; drain. In greased 13 in x 9 in x 2 in baking dish, layer
half
of bread, potatoes and cheese. Top with all of the bacon mixture. Repeat
layers of bread, potatoes and cheese. In a bowl, beat the eggs; add milk,
Worcestershire
sauce, mustard, salt & pepper. Pour over all. Cover and chill overnight.
Remove from refrigerator 30 min. before baking. Bake, uncovered at 325º
for 65
to 70 minutes.

I have 2 requests that are cooking related but not recipes. I am hoping
someone will be able to help me!
I brought a yummy Mexican casserole in my Pyrex set to church for our
Advent dinner on Wednesday night. Someone took all of the lids that were
on a counter and threw them into my carrier. I have tried my best to clean
it using warm soapy water and it still smells a bit. Weren’t even in there
for an hour, but boy did it make a mess. I don’t think I can wash the
carrier – any helpful hints?
This is trickier, last year at Christmas I brought a dessert to some
friends. We didn’t finish all of it and the daughter begged me to keep it
(I don’t even remember what it was but it was good!). She promised she
would return my silicone bakeware and tray before she went bake to
college. Well – just got it back last night … must want a refill for this
year! The Dad is a very heavy SMOKER and my silicone baker is embedded
with smoke smell. My husband wants me to toss it – I only had it a year
before they had it for a year – as I have had it soaking in Dawn all day
and then just ran it through the dishwasher. It still reeks badly of
smoke. Any ideas? I really don’t want to waste a lot of time on it, and my
husband said he will not eat anything out of it anymore, but I can’t bear
the thought of throwing it out either.
Thanks so much for any help on either of these … I know things usually
come in 3’s so I may have another request soon!

I haven't seen a fruitcake recipe like the one we always make.
Our family does NOT like fruitcakes , but will eat this one. It is really
good!
1 # whole pitted dates
3 cups brazil nuts, whol1 cup maraschino cherries, add a few green for
color
Mix and pour over the above and toss to coat:
3/4 cup flour
3/4 cup sugar
1/2 tsp. baking powder
1/4 tsp. salt
Beat 3 eggs till foamy and add 1 tsp. vanilla.
Mix all together..
Use a good sized bread pan. Grease well and line with wax paper. Grease
wax paper as well. Pour in and bake 300 degrees for 1 hour and 30 min, or
until it looks done.
Very good. Enjoy!

Merry Christmas and happy baking to all. this is a wonderful and easy
pan cookie and Yes, you do bake it for 1 hour at 275. They melt in your
mouth. I call them rubber glove cookies because it is so much easier
working with disposable gloves to press them out with on the pan. I think
they are Norwegian in origin.

Jan Hagel Cookies
Combine and cream till very pale in color
1 cup butter
1 cup white sugar
The add and beat really well:
1 egg yolk (save remaining egg white)
1 tsp cinnamon
Then add:
2 Cups flour
Then put on rubber gloves, spray them with pam, and lightly spray a jelly
roll pan size or an equivalent size cookie sheet. And spread very thin.
You may have to spray gloves occasionally and spread mixture with more
flour as you are pressing it out.
When done with that:
Lightly mix egg white and spread over top of the mixture. Sprinkle with a
little sugar, then cover with finely ground nuts of your choice, pressing
them down in slightly. Then sprinkle your choice of spices over top,
cinnamon or nutmeg, etc.
Bake at 275 for 1 hour. When done, immediately cut into about 3 x 3 inch
squares or little less. Then cut from corner to corner, making them little
triangles. When cool, remove from pan. Using a pizza cutter works just
great for doing this.
Date and Nut Bars
1 cup pecans or walnuts, coarsely chopped
1/2 cup dates, pitted and chopped
3/4 cup sifted flour, divided
3 eggs
1-1/2 cups brown sugar, firmly packed
3/4 tsp baking powder
1/4 tsp salt
Preheat oven to 350 degrees. Grease a 10x10-inch non-stick baking pan. If
it's an older pan without the non-stick, then grease, line with waxed
paper, and grease again.
Place chopped nuts and dates into a bowl. Add about 1 tbsp of the flour
and mix with your fingers until dates are coated and mixed with the nuts.
Set aside. In a mixing bowl, Beat the eggs, add sugar gradually and beat
until fluffy. Sift together remaining flour, baking powder, and salt. Add
to the egg mixture and stir until well mixed. Stir the date and nut
mixture into the batter. Spread in the prepared pan and bake for 20
minutes, or until cake rebounds to the touch when pressed gently in the
center. Remove from oven, cool slightly; turn out of the pan and cut into
bars measuring 1 x 2 1/2-inches. Makes 40 small bars.

3-4 cans slender green beans, drained
bacon strips, cut in half
Heat oven to 350°. Wrap bacon around 3 whole green beans. Put in casserole
dish. Cover all with Catalina “lite”salad dressing. Use lite because the
bacon will add the fat. Bake 1 hour.

Rolo Candy
Pecan halves
Preheat oven to 250 degrees. Line a cookie sheet with foil. Put pretzels
on foil. Put 1 Rolo candy on top of each pretzel. Put in a preheated oven
for 5 minutes. Remove from oven and immediately put one pecan half on top
of Rolo candy mashing it down to fill the pretzel. Refrigerate until set.
Store in a tight sealing dish.
MillieD in Baltimore is looking for a breakfast casserole she can
prepare ahead of time for her neighbors. The following is a very good
breakfast casserole and even though it calls for making it just before
eating I bet you could do this the night before and just add a little

Cheesy O'Brien Egg Scramble
1 pkg.-28 oz.-frozen hash brown potatoes
1/2 t. garlic salt, or to taste
1/4 t. pepper, or to taste
1 can cheddar cheese soup, undiluted
1 lb. bacon, cooked and crumbled
12 eggs, lightly beaten
2 T. butter
2 c. shredded cheddar cheese (8 oz.)
In large skillet prepare hash browns according to pkg. directions.
Sprinkle with salt and pepper. Transfer to a greased 2 1/2 qt. baking
dish. Top with soup. Set aside 1/2 c. crumbled bacon and sprinkle
remaining bacon over soup. In another skillet, scramble eggs in butter
until nearly set. Spoon over bacon. Sprinkle with grated cheese and
reserved 1/2 c. bacon. Bake, uncovered, at 350 degrees for 20-25 min. I
would put this in the refrigerator overnight, covered, and bake in
preheated oven for a good 30-35 min. or until hot.
I hope you will try this. It is very good.

I guess you are the one I want to ask this question. On the 2
ingredients fudge can you use the whipped icing as well as the
other types of icing.
I have several can and would like to use them if they will work.
I think that is an excellent recipe and an easy on to make in a hurry
during
the holiday rush.

To the person who was looking for Lady Lock forms, many years
ago before I had those I used clothes pins , not the clip kind but the old
ones that you slip over the lines. They work very well .Just wrap the
dough around the pin loosely and when they are baked ,wait a few minutes
and slip off.

In Dec 8th letter Toni in Canada
asked for a recipe for Pizzelle. This is the one my daughter uses and we
have good luck with it. We usually make them at my house because her
husband doesn't care for the smell of anise oil. As we take them off of
the grille we usually lay them on a layer of newspaper covering the
newspaper with paper towels. This helps keep them crisp as they cool.

Sweet Celebration Pizzelle
6 eggs
1-1/2 cup sugar
1 cup of margarine melted (1/2 lb.)
2 tbsps. vanilla or anise
3-1/2 cups flour (approx.)
4 tsp. baking powder
.
Beat eggs, adding sugar gradually. Beat until smooth. Add cooled melted
margarine and vanilla or anise. Sift flour and baking powder and add to
egg mixture. Dough will be sticky enough to be dropped by spoon. Bake for
30-40 seconds on each side. This will make 5 dozen.

Does anyone else besides me , feel guilty about using nice paper plates? I
have nice china, but, would rather spend time with company than cleaning
up, or. trying to keep clean plates available for seconds. As I get older
it doesn't seem that important to have everything just so.

I have a question for the group. I was given an old crystal bowl that
originally had a metal ring around the rim. The bowl has since lost it's
metal ring and where the ring was there are now patches of rust on the
glass. Does anyone know of a safe way to remove the rust from the glass
without damaging the bowl? It is a family keepsake that I would love to
use as a serving bowl if I can get the rust off of it.

have told the group, my hubbie works for a dairy company and I am make the
guys goodies often. I am always looking for "theme" goodies. These will be
this year's goodie for their office basket. I will give you feed back, but
I am sure they will go over well.
Double Trouble Chocolate Pound Cake
I combined two recipes and made this. It was good and was really pretty.
1 Pillsbury Golden Butter Cake Mix-dry-DON'T mix as directed
5 oz Hershey's Chocolate Bar-chilled
4 oz devil's food instant pudding
8 oz sour cream
1/2 c Wesson oil
4 eggs
1 t vanilla flavoring
1 t butter flavored extract
1 T confectioner's sugar-garnish
Baker's Joy
Preheat oven 350*. Spray tube pan liberally with Baker's Joy. Mix all
ingredients except Hershey bar and confectioner's sugar for 2 minutes on
medium. Scrape sides and mix for 2 more minutes. Fold in chocolate with
spoon-mixing well. Pour into prepared pan and bake 55 minutes or until
toothpick inserted comes out clean. Place on wire rack and cool 20
minutes. Remove gently from pan and cool completely. Dust with powdered
sugar if desired.
**I bought a regular sized Hershey bar, chilled it until serving time, and
make chocolate curls on top of the sugar.
Baked English Pea Casserole
2 cans small English Peas with juice
2 cans cream of mushroom soup
4 oz chopped pimentos, drained
16 oz sharp cheddar cheese-grated
1 can Durkee fried onions
salt & pepper to taste
Preheat oven 325 degrees. Mix peas, soup, pimentos, salt, pepper, and half
of the cheese in a bowl. Spray a 13x9 dish and pour in casserole. Top with
onions and remaining cheese. Bake 25-30 minutes until well heated and
cheese is bubbly.

Yolanda is looking for a chocolate cake with vinegar and no eggs, plus
an easy icing. I have made this for at least 20 years and it is one of our
favorites. The name comes from the name and location of the person who
gave me the recipe. It's so easy - doesn't even require a mixer! I
recently saw a recipe for this cake which said to mix the dry ingredients
directly in the baking pan, make the wells, and stir with a fork until
mixed. The recipe I saw said it made the cake lighter. One less dish to
wash is OK with me.

Sandy's New York Chocolate Cake
3 c flour
2 c sugar
6 heaping Tablespoon cocoa
2 tsp baking soda
Dash salt
3/4 c. oil
2 tsp vanilla
2 tsp vinegar
2 c cold water
Preheat oven to 350º. Prepare two 9” pans. Combine dry ingredients and
whisk together. Make three holes in the dry mixture and put the oil,
vanilla and vinegar in them. Pour cold water over all and stir with a fork
until well mixed.
Bake 30-35 minutes.
Sandy's New York Chocolate Frosting
4 squares (oz) unsweetened baking chocolate, melted - OR ¾ c cocoa & 2
Tablespoons oil
2 c sugar
6 Tables cornstarch
2 c boiling water
2 Tables butter
2 tsp vanilla
Few grains of salt
Whisk together sugar and cornstarch until thoroughly mixed. Add to melted
chocolate in the saucepan. Stir in boiling water and cook over medium heat
until thick and bubbly, stirring frequently. Add butter vanilla and salt.
Cool to spreading consistency.

never serve diet soda for a large crowd as many people are allergic to

Are ya'll in the middle of the "Christmas Dash" like I am? Well, I made
this simple cookies this afternoon and they are just wonderful. Thought
someone might like to try them too. My friend Fred gets the credit for the
recipe. This one id doubly TNT!
Mint Chocolate Chip Cake Mix Cookies
1 package of your favorite yellow cake mix
½ cup (1 stick) butter melted and cooled slightly
1 egg beaten (or equal amount egg substitute)
6 oz. Chocolate chips
1 tspn. Pure mint extract
Preheat oven to 375 degrees f.
Melt butter and while cooling add the 1 tspn. Pure mint extract.
Combine cake mix, beaten egg, butter mixture in a 3 quart mixing bowl,
stir in chocolate chips. (note, when well mixed and no dry ingredients
show, mixture forms to a ball and separates from bowl sides).
Using a 1-1/4” cookie scoop, scoop and drop onto non stick cookie sheet
about 2”apart.
Bake for 9 minutes, remove from oven and allow to set for about 4-5
minutes on sheet before removing to cooling rack. Allow to fully cool
before storing in a sealed container.
Makes about 4 dozen cookies.

For Mary in Newton Falls, Ohio re: using dried cherries. I just made my
favorite chocolate chip recipe yesterday for our church’s annual cookie
exchange. To make them a bit more festive for the holidays I added dried
cherries that I had roughly chopped. I used dark chocolate chips and
walnuts and used an ice cream scoop to place the dough on cookie sheets
(approx. 1/3 cup dough per cookie). They make uniform jumbo size cookies.
Also, I always use at least double the vanilla called for in most basic
cookie recipes. I learned that from a baker and you’ll be amazed at how it
makes cookies smell and taste like the ones that are so tempting when you
go to the mall.

After reading about peoples dilemmas about what kind of cookies to send
to troops overseas remembered a famous Australian cookie.
The Anzac biscuit was developed to send to troops in the middle East in
WW1.
Dennis Weaver had a recipe for them some time ago.

Anzac Biscuits (Cookies)
125g(4 ozs) butter
2 tablespoons golden syrup (Corn Syrup will be OK)
1 teaspoon baking Soda
1 tablespoon hot water
1/2 cup Shredded coconut
1/2 cup Sugar
1 cup rolled oats
3/4 cup plain flour
Melt butter and golden syrup in a saucepan large enough to mix all the
ingredients. Cool slightly. Dissolve baking soda in water and add to the
saucepan with coconut, sugar, rolled oats and flour. Mix well. Place
rounded teaspoonfuls of mixture on a greased oven tray, allowing room for
spreading.
Bake at 180ºC(350ºF) for 15 minutes or until golden.
Makes 24
We have this at every holiday meal .It's so good!
Blueberry Delight Salad
1 lg. grape Jell-O
2 cups hot water
1 lg. can crushed pineapple (drained)
1 can blueberry pie filling
Topping
8 oz. cream cheese (softened)
1/2 pt. sour cream
1/2 cup sugar
1 tsp. vanilla flavoring
1 cup chopped pecans
Lightly grease with mayonnaise a 9x13glass baking dish. Mix Jell-O and
water together well, add pineapple and pie filling. Pour into dish and
congeal until set. Mix topping ingredients and spread on top of congealed
mixture.

Marinated Shrimp Appetizer
2 lb Shrimp peeled and cleaned
1 Lemon, thinly sliced
1 Onion, thinly sliced
1/2 cup Sliced pitted ripe olives
2 tb Chopped pimiento
1/2 cup Fresh lemon juice
1/4 cup Oil
1 tbsp Wine vinegar
1 Clove garlic
1/2 Bay leaf
1 tbsp Dry mustard
1/4 tsp Cayenne pepper
1 tsp Salt
Black pepper to taste
Boil shrimp. Drain, peel and clean. Add lemon and onion slices, olives and
pimiento. Toss. In second bowl combine remaining ingredients and pour over
shrimp. Refrigerate overnight, stirring occasionally. Serve in marinade
and have toothpicks for spearing the shrimp.

Margo/Boston If you take a screen or use new screen from a hardware
store and put over a frame, you can paint something on it or not and put
you earring throw the screen and display and they will be safe at the same
time. If you know someone that can makes a frame out of wood the size of
the inside measurement of a picture frame you can cover with screen and
put inside the frame and hang up. I do double stroke painting so I made
roses on one, the paint goes on the screen but leaves the holes open.

Yesterday, Sunday, I made Breakfast Lasagna (I believe it was a
recipe from Tona). It was delicious and very easy to prepare. It's
