Here is the baked bean cake/bread/muffins.

An unusual "veggie cake" made with baked beans! I find this similar to a carrot cake, it is easy to make and very tasty. .

Baked Bean Bread or Muffins
SERVES 12 -15 , 1 cake
1 cup raisins
1 cup boiling water
1 (19 ounce) can baked beans in tomato sauce
3 eggs
1 cup canola oil (I used 1/2 cup oil, 1/2 cup unsweetened applesauce)
1 1/2 cups granulated sugar
3 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder Watkins #01039
1 teaspoon cinnamon Watkins #01117
1/2 teaspoon salt
1 cup pecans, chopped
1 teaspoon pure vanilla extract Watkins #01108
Coconut Icing
1 cup granulated sugar
1/2 cup whipping cream
1/3 cup butter
1 cup shredded coconut
1 teaspoon pure vanilla extract Watkins #01108
1/2 cup pecans, chopped

Cake:.
Place raisins in a bowl and pour boiling water over them, set aside. In large mixing bowl, mash beans with a fork. Add eggs, oil and sugar, beat well. Combine flour, baking soda, baking powder, cinnamon and salt. (I sometimes add a 1/2 tsp nutmeg, 1/4 tsp cloves to spice it up a little!). Stir into bean mixture. Drain raisins and reserve liquid. Add raisins, nuts and vanilla to batter. If batter is too thick, add a little of the raisin water, stirring to combine.
Pour mixture into a greased 13" x 9" baking pan. Bake at 325 degrees for approximately an hour or until tester inserted in center comes out clean. Remove from oven and let cool in pan on rack.

Icing:.
Combine sugar and cream in a heavy-bottomed saucepan over medium heat. Bring to a boil, cook for 2 minutes. Add butter, remove from heat and stir in nuts, coconut and vanilla. Pour evenly over the cake, allow to cool before cutting.
Note: you can reduce 1 cup oil to 1/2 cup and 1/2 cup applesauce and reduced the sugar from 2 to 1 1/2 cups with good results. This recipe will makes 24 large muffins, baking time is 30 minutes.

Good morning Nancy,
In the 2/16 newsletter Joseph J. was wanting to know what RO water is. Well, in places where our natural water tastes terrible because of way too many natural minerals, etc., there are companies that use a special filter system to “clean” the water so it can be used without a nasty taste, etc. That is RO water. It means Reverse Osmosis. We lease a system here in Alamogordo for drinking, cooking and for our ice machine in the freezer.

Nancy, I have made the pork & bean bread before, too, and it tastes like a spice cake/bread. So good! I sometimes put a cream cheese frosting on top. Here is my recipe:

1 c. raisins
1 c. boiling water, OR 1 c. rum
2 c. sugar
3 eggs, beaten
1 c. vegetable oil
1 tsp. vanilla
1 (15 oz.) can pork & beans
3 c. flour
1 tsp. cinnamon
1/2 tsp. baking powder
1 tsp. baking soda
1 c. chopped nuts

Add raisins to boiling water and set aside. Mash beans with a fork in a large bowl until very smooth. Add sugar, eggs, oil & vanilla. Mix well. Sift together dry ingredients and fold in. Drain raisins and fold in with chopped nuts. Spoon batter into three greased and floured loaf pans. Bake in a 325 º oven for 50 to 60 minutes, or until a knife inserted in the center comes out clean.

*Tip: A slice of this bread is delicious spread with cream cheese, butter or honey.

We got a little sifting snow yesterday morning, but it melted on the way down. Guess the ground and surface air were too warm. It is supposed to get in the 60’s today.

I spent the weekend with my friend, Carol. She is having chemo treatments and needed someone to stay with her. Onion Ring Baked Chicken
Makes 4 servings
Weight Watcher Points - 5 points

4 (3 ounce) chicken breasts (skinless, boneless)
1/4 cup fat free margarine
4 tablespoons Worcestershire Sauce
1 can (2.5 ounces) fried onion rings (crushed)
salt to taste
pepper to taste

Flatten each chicken b r e a s t , season to taste. Combine
margarine and Worcestershire sauce. Dredge chicken in margarine
mixture, then crushed onion rings. Arrange on baking dish that has
been sprayed with nonstick spray. Top with any remaining margarine
mixture. Bake at 350 degrees for 45 minutes or until tender.
Makes 4 servings.

Beef Casserole
Weight Watcher Points - 5 Points
Makes 6 servings.

1 pound lean ground beef
1 can (16 ounce) whole kernel corn (drained)
1/2 onion, chopped
1 jar (12 ounce) taco sauce
salt to taste
pepper to taste

In large skillet, brown ground beef and onion, add corn and taco
sauce. Simmer mixture for 5 minutes. Serve with tortilla chips (4
chips per serving).

Zucchini Chips
Weight Watcher Points - 1 Point
Yield: 8 servings - 1/2 cup serving

3 med. zucchini
1/4 c. frozen egg substitute, thawed
2 tbsp. commercial reduced-calorie Italian dressing
1/2 c. fine, dry bread crumbs
2 tbsp. grated Parmesan cheese
1/8 tsp. freshly ground pepper
Vegetable cooking spray

Cut zucchini into 1/4 inch thick slices; set aside. Combine egg
substitute and Italian dressing in a small bowl; stir well. Combine
bread crumbs, Parmesan cheese and pepper in a small bowl; stir well.
Dip zucchini in egg mixture; dredge in bread crumb mixture. Place
zucchini on a baking sheet coated with cooking spray. Bake at 475
degrees for 5 minutes; turn and bake an additional 5 minutes or
until golden. Serve immediately.

Yield: 8 servings - 1/2 cup serving

Carolyn in West Tenn. regarding scratches in her hardwood floor. Sorry I did see your original post. You might try taking a paste wax rubbing into the scratches very well and letting it dry thoroughly, and then take a car buffer, or by hand might work if you rub hard and buffing it out. Also another idea is depending on the color of wood is to get paste shoe polish close to your floor color, rub into scratches and let dry and buff. Repeat as needed. Just some ideas that might help.

I like chocolate pudding made with tofu-I use one package silken tofu and 2 packages of sugar free chocolate pudding with 3 cups of milk. This is good with a lower protein dinner or lunch. Would be an easy way to get extra protein into picky children also.

I make a smoothie which we eat in place of a meal . A box of tofu drained, 2 C frozen mixed berries 3 T apple juice concentrate (or sugar or Splenda). Sometimes you have to add a bit of water to make it workable in the blender. Blend until smooth. This is especially nice in the summer instead of dinner on a hot night. The frozen berries make it come out like sherbet.

Another trick I learned with tofu is to freeze it. When you thaw it and cook it in broth it takes on the consistency of chicken. I fooled a friend who disliked tofu by doing this in stir fry. Told her afterwards it wasn't chicken.

Another favorite is to bread it and fry it. Serve with a dipping sauce of soy, ginger and a bit of sugar.

This is for Tammy in Pensacola, who in the 2/16/08 newsletter was looking for bar cookie recipes. I have never tried baking drop cookies as bar cookies, so I don’t have any suggestions for that, but these are two of our favorite bar cookies. Both have been sent to soldiers serving in the Middle East.

Hoosier Bars
Yields 3 dozen.
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 cup packed brown sugar, divided
1/2 cup granulated sugar
1/2 cup (1 stick) butter or margarine, softened
2 large eggs, separated
1 teaspoon vanilla extract
2 cups (12 ounce package) Semi-Sweet Chocolate Morsels, divided
3/4 cup honey roasted peanuts, divided

Combine flour and baking soda in small bowl.

Beat 1/2 cup brown sugar, granulated sugar and butter in large mixer bowl until creamy. Beat in egg yolks and vanilla extract. Gradually beat in flour mixture until crumbly. Stir in 1 1/2 cups morsels and 1/2 cup nuts.

Press dough onto bottom of greased 13 x 9-inch baking pan.

Beat egg whites in small mixer bowl until soft peaks form. Gradually beat in remaining brown sugar until stiff peaks form; spread over dough. Sprinkle with remaining morsels and remaining nuts. Bake in preheated 325 degree F oven for 35 to 40 minutes or until top is set and lightly browned.

Cool in pan on wire rack for 20 minutes. Cut into bars while still warm.

Oh Henry Bars
1 cup butter or margarine
1/2 cup granulated sugar
1 cup brown sugar
4 cups quick-cooking oatmeal
6 ounces chocolate chips
1 cup crunchy peanut butter

Melt butter or margarine with both sugars. Add oatmeal. Spread mixture in a greased 13 x 9-inch pan. Bake at 350 degrees F for 15 minutes.

Melt chocolate chips with peanut butter. Spread over the oatmeal mixture and refrigerate. Cut into bars when cool.

Phyllis C/Ky in 2/16 issue wanted a chicken salad recipe with grapes and pecans. Here is the one I use but calls for slivered almonds but you could use pecans. I tweaked it a bit. It was sort of bland to me I usually buy a rotisserie chicken to make mine.

Party Chicken Salad
4 c cooked chicken, shredded or diced
1 c chopped celery
1 c halved seedless green grapes (I add 1 1/2 c)
1 pkg slivered almonds, toasted (or pecans) I would still toast them
1 teaspoon salt
1/4 teaspoon pepper
3/4 c mayo
1/4 c sour cream

My additions:
1 - 2 Tablespoon Dijon mustard
2-3 Tablespoons sweet pickle relish

Combine mayo and sour cream and if using mustard mix it in. Set aside. Mix all other ingredients together and mix well. Add mayo mixture and stir until well blended. Chill for a couple of hours. Serve with crackers or as sandwiches. Good as long as there is some.

Hi, Nancy!
I hope you and your babies are doing well.

I have a computer question I hope you or someone else with more computer knowledge than I have can help me with. Sometimes my Delete button quits working and I have to use the Backspace button instead (quite a pain!) To try to "fix" this, I've tried pressing the Control key and the Alt key, (separately) but they don't do anything to help with my problem. I'm wondering if anyone can tell me what I can do to make my Delete key start working again when this happens.

This is for Nancy in Michigan: Hot Bacon Dressing for Wilted Lettuce Salad

Hot Bacon Dressing #1
Fry desired amount of bacon until crisp. Drain on paper towels. Discard all but 2 tablespoons drippings from the pan. Crumble the bacon into small pieces.

In a blender, blend together: ¼ cup sugar, ¼ cup vinegar, 2 tablespoons flour and 1¼ cups milk.

Pour into the reserved bacon drippings. Using a fork to scrape up the drippings, heat until the mixture starts to boil. Taste; add more vinegar if desired, more water if the dressing is too thick. Remove from heat and add the crumbled bacon.

Pour over lettuce for Wilted Lettuce Salad. Also
delicious over baked or boiled potatoes.

Refrigerate a few hours. Just before ready to serve, to the contents of the bowl, add 1 cup water, 4 generous tablespoons vinegar and if desired, salt and pepper.

For the person who wanted a toffee recipe. This is the easiest and the best I have made. I got it off a recipe list but don't know when or where.

Easy Toffee
3/4 C packed brown sugar
1 stick BUTTER
1C chopped nuts
1/2 C chocolate chips
1/2 tsp. baking soda

Grease well a 9X9 cake pan and spread shopped nuts in the bottom. Over high heat, stirring constantly and watching carefully mix sugar and butter. Bring to a boil and then boil for 7 minutes. Add baking soda and mix well. Pour over nuts, smooth out in pan. Immediately sprinkle chocolate chips over top and cover pan with a cookie sheet to hold heat in. When melted spread with a knife. Cool and break into pieces.
 


For Tammy in Pensacola (2-17) - These are great bar cookies and so easy. Always a hit!

Peanut Butter Brownies
2/3 cup margarine
1 cup sugar
1 cup brown sugar, packed
4 eggs
1 cup peanut butter, smooth or crunchy
2 cup self-rising flour
1 teaspoon vanilla
12 oz. semi-sweet chocolate chips ( sometimes do half peanut butter chips with chocolate chips)

Preheat oven to 350. I used Bakers Joy to spray the 9x13 inch pan. Melt margarine in a 3 qt. saucepan over low heat. Remove from heat and stir in remaining ingredients in order listed. I stir after adding each ingredient. Mix well. Spread in prepared pan and bake for 30-40 minutes. Cool in pan. Cut into desired size bars.

Nancy & Nancylanders: I've just finished reading and re reading the Saturday 2/16/08 newsletter and the outpouring of recipes for "Wilted Lettuce". Brought back many fond memories of going to the garden and picking leaf lettuce and spinach leaves so that my late mother could fix wilted greens for lunch. All of the recipes posted were very similar and also very much as I remember my mother using. The only exception that I throw out for consideration was that mom always sliced a couple of hard boiled eggs and incorporated them into our wilted lettuce/spinach salad. The slices of hard boiled egg add another dimension to an already wonderful salad.

Wilted lettuce salad brings back such tasty memories. Our family of 3 could eat a huge bowl of it. I would rather have it than dessert. Hope to have lettuce this spring in the garden. It is hard to grow here as the weather gets hot early.

With regards to "WHAT IS R.O. WATER" from Joseph J. & Cheryl, Charlotte; R.O. WATER, is Reverse Osmosis. It is a process that is done by filtration of you regular tap water. The water goes through a sediment filter & a charcoal filter to take out the impurities that are in some city's water systems. Making your tap water taste better, & all your foods taste better that are cooked in R.O. water. And ice tea, coffee, koolaid & juices are wonderful made with R.O. water.

Some water stores sell these R. O. systems starting @ $499.00 for their units and some are more expensive than that!!!

A good unit can be purchased from "Lowe's Home Improvement" for just over a hundred dollars-$100.00. Of course the "water stores" will tell you those don't do the job, but we have had ours a year & our water is fine & causes me no stomach discomfort that our regular city tap water caused me. We need to change the filters about every 6 months at a cost of around $20.00. The "water store" filters have to be changed every 6 months also, at a cost of $34.00. I hope this answers your question about R.O. water. ****And it's MUCH CHEAPER than buying the "bottled water" that is sold in stores--that have been proven to be no better than tap water.*****

This is for Geri, Spring Hill, TN who is looking for the shower cleaner containing fabric softener.
Sorry, I do not know who sent this in but I have been using it for several months and it works like a charm.

Shower Cleaner
Use a spray bottle (about 32 oz.)
Add 1 cup white vinegar
2-3 Tablespoons Dawn dishwashing liquid
1 oz. fabric softener for fragrance
Fill the bottle with water

Spray your shower walls and floor after every use. After a few days of using this your shower will sparkle. I just love using this.

Crock Pot Mulled Cider
1/2 Cup Brown Sugar
2 Quarts Apple Cider
1 Tsp Allspice whole
1-1/2 Tsp Cloves whole
2 Sticks Cinnamon
Orange Slices

Put all ingredients in crock-pot. If desired tie whole spices in cheesecloth or put in tea strainer. If spices are added loose strain before serving. Cover cook on Low 2 to 8 hrs.
Serve from the crock pot with a ladle.

Chinese food & Marie from Hudson in NY: Would love if you would post your recipes. I too am trying Chinese at home. I can not duplicate the flavor of the brown sauce that comes on many of the dishes in take-out. Our favorite is Chicken & Broccoli if anyone has a recipe to share.

For Phyllis in KY that wanted a chicken salad recipe. Mix the following in proportions you prefer:

Chicken Salad Recipe
shredded or chopped chicken
seedless grapes-halved
chopped celery
pineapple tidbits, drained
chopped water chestnuts-optional
halved nuts-your preference

Stir together with mayo, may add a bit of sour cream, if preferred. Serve in tortilla bowls lined with lettuce leaves or just on lettuce leaves. Nice with pumpkin bread or muffins.

This is for Carolyn in West Tenn. We used to use Old English brand scratch cover to cover scratches in wood. It comes in a few different colors. I can still remember that smell of it as my mother and aunt used it and when I smell it nowadays , it reminds me of when I was a kid. I have seen it about everywhere. It is a liquid. U pour it on a cloth and rub it in.

Hi everyone in Nancy land, hope you all are having a great weekend. For Marie in Hudson NY, the brown in the Chinese take out food is probably soy sauce - just experiment and use the amount to your liking. Phyllis in KY, I have been making curried chicken salad.

My son brought some home from Stew Leonards near us, and I have tried to duplicate it. I poach 2 chicken breasts in chicken broth for about 20 mins (don't let it boil hard) let cool completely, then cube up into chunks. I dice up celery, a small amount of onion, shallot, or green onion - whatever I have on hand, but not a lot as it shouldn't over power the flavor. Also, about a cup of red grapes, cut in half, and about a half cup of pecans, chopped.

The dressing is a cup of mayo (I use light Hellmans) and 2 teaspoons of curry powder - taste, maybe you would like more. If you have never made anything with curry, try 1 tsp, let it sit a few minutes, taste and add more if you would like,

I find 2 tsp is plenty to my liking with this amount of salad. If you don't want the curry, leave it out, and just add salt and pepper and maybe dill weed. I like this for dinner especially. I will make my regular salad, and leave a space in the middle of the plate to place the chicken salad and enjoy. Everyone that I have made this for has liked it also, so I hope you try it.

For Pat regarding mulled apple cider (2-15-08 Newsletter):

Mulled Apple Cider
If I am making the apple cider in a large coffee pot (i.e. the type you use in church kitchens...20 cup capacity or larger), I place about 2 gallons of apple cider in the pot and place the following in the percolating basket:
1 Tbsp. whole allspice
1 Tbsp. whole cloves
6-8 cinnamon sticks that are about 2" long
Just percolate until it stops. You will enjoy a flavorful cider.

Here is another recipe that came from a 1983 edition of Southern Living magazine:

Perky Cranberry Punch
2-32 oz. bottles of cranberry juice cocktail
1-46 oz. can of unsweetened pineapple juice
2 c. water
1 and 1/3 c. firmly packed brown sugar
2 Tbsp. whole allspice
1-2 Tbsp. whole cloves
12-2" sticks of cinnamon

Pour cranberry juice, pineapple juice, water, and brown sugar into a 20 cup percolator. Stir until sugar is dissolved. Place remaining ingredients in the percolator basket. Perk through complete cycle of percolator. Serve hot. Yields 16 cups.

It's been a long time since I made a request but always had good results from my queries in the past. Now I'm in need of a recipe for Italian Wedding Soup for a church dinner. I have found several online but not exactly the one I'm looking for that has tiny meatballs in a chicken broth base with tiny pasta and some kinds of vegetables. Does this sound like something anyone has?

Also looking for a recipe for eggless, milkless, butterless cake that my Mother used to make during WW2.

How do I make just plain old apple cider. The kind in the stores don't taste like what we used to get from the produce stands in the north. Thanks.

Nancy I have a question and I can not find it online. For 1 square of chocolate what would be the measurement for cocoa? I have found a recipe that calls for chocolate in squares and I want to use up cocoa. Thank you to anyone that can answer this question.

thank you so much for this recipe, I have been looking for it for so long we go to barbecues all summer and one lady makes this spinach salad that everyone loves, and she won't give anyone the recipe for the dressing.

I know the ingredients for the salad are spinach, walnuts, bacon, dried cranberries, mushrooms, hard boiled egg, croutons and the dressing.
Now I think I have it thanks to you.

You would have been surrounded by love, food, help with your children and anything else you needed. We are a very small church but the hearts of the people in it are huge. This is for Tammy in Fl. It is so sad that no-one came forward to help you in your time of troubles. I live in Fl also and have wonderful friends. I have been very sick with heart trouble and they call me and pray for me, ask me if they need anything all the time. I do not have any family here, so they kind of act like it. I had a triple by-pass at 48 and still have problems and I am on disability. So I will say a prayer for u too. Hope u are feeling better.
