Turkey Steamer
Beer-can chicken is a favorite with everyone that loves crispy, moist, and
savory chicken, but did you know that you can the same
principle can be used for a perfect turkey?
You place a whole turkey over a large filled beer can, and place it on the
grill, or in an oven. Steam is created as the beer inside the can heats
up.
The steam rises, carrying with it the flavor of your
beer, and saturating every ounce of the turkey from the
inside out.
The steam keeps the inside of the turkey moist, while the
surrounding heat creates a nice texture on the outside of
the turkey.
This was added to Nancy's some time ago by Anne in NY. It is good.
Crock Pot Stew Meat with Gravy
1 can cream of celery soup
1 can of cream of chicken dijon soup
1 pound stew meat.
Mix together in a crockpot, and let it cook all day.
Serve over rice, noodles or mashed potatoes.

Here is a really wonderful holiday bread recipe my sister has been
making for years. Enjoy!
Holiday Bread
2 cups Nonesuch mincemeat (Borden's)
1 cup raisins
1 cup brown sugar
1 cup nut meats
10 Maraschino cherries, cut up
1 tbsp Maraschino cherry juice
1 tsp vanilla
3 eggs, separated
1 cup shortening
1 tsp baking soda
1 tbsp hot water
2 cups sifted flour
In a large bowl mix together well mincemeat, raisins, brown sugar, nuts,
Maraschino cherries and juice, vanilla, egg yolks, and shortening; mix
very well. Add baking soda dissolved in the hot water; stir well. Add
flour; mix well. Lightly fold in well beaten egg whites. Grease and flour
baking pans. Preheat oven to 350 degrees.
Small loaf pans, 30-40 minutes
Mini muffin pans, about 15 minutes
Cupcake pans, about 25 minutes
Layer pans, 30-40 minutes
Loaf pans, about 1:45
Test with toothpick for doneness.

Baked Beans with Ham
1 can (16 oz.) Lima beans, drained
1 can (16 oz.) red kidney beans, drained
1 can (28 oz.) Navy beans with pork
1/2 lb. bacon, cut in 1 inch pieces
1/2 lb. cooked ham
1/3 c. vinegar (cider)
3/4 c. brown sugar
3 lg. onions, sliced
1/3 c. ketchup
2 tbsp. sharp mustard
Combine all beans in a large bowl. In a heavy skillet, slowly fry the ham,
pour off all fat except a glaze on the bottom of pan. To the skillet add
cider vinegar, ketchup, mustard and onions. Mix well. Simmer until onions
are soft (about 10 minutes). Put all ingredients together and stir well.
Cover and bake at 275 to 300 degrees for 2 hours. Add more ketchup if
beans get dry.

Porcupine Balls
Meatballs:
2 pounds lean ground beef
1/4 C finely chopped onion
1 egg
1/2 C milk
1/2 C uncooked white rice
salt and pepper, to taste
Sauce:
2 cans tomato soup
1 1/2 soup cans of water
In a large Dutch oven, mix the two cans of tomato soup and 1-1/2 soup cans
of water. Add some salt and pepper to taste. Bring the sauce to a boil and
reduce heat to simmer. Mix together the ingredients for the meatballs and
make large meatballs and add to sauce. Cover. Simmer, stirring
occasionally, for 1-1/2 hours on top of the stove.
We always make mashed potatoes and pour some of the sauce on the mashed
potatoes and serve with corn on the side.

also contatin real sugar, but you can check the package.

ragdoll cat.
Mine are both only two yrs old so I hope I have them for a long time yet.
When my dear husband was alive I couldn't have cats because he was
allergic to the hair. I've been a widow for five years now and last year
decided I wanted a cat. Well, as the story goes you can't have just one
lol. And this past June I went back to the Humane Society and adopted my
precious Toby. I'm still trying to figure out just who is trained-me or
them lol.Now I can't imagine my life without either of my kitties. They
sure have
their own personalities. Jean I would suggest you get another cat or maybe
even two. They won't take the place of the one you lost but will fill the
void.

It is cold here in southern NM, but no snow. Nancy, hope you are staying
warm and dry! Is it still snowing there?
Everyone down here is either trying to get over a very bad cold or just
coming down with it. It does last 2 to 3 weeks, so please stay healthy
everyone! Hubby and I are getting over ours!
I made a version of the 2 ingredient fudge yesterday. It is setting up in
the fridge now. I also made another type of fudge using marshmallow cream.
I made a version of the 2 ingredient fudge this afternoon! I used a can of
regular fudge frosting, 1 (12 oz.) bag semi sweet chocolate chips, a small
handful of chopped pecans and a handful of mini-marshmallows. We have a
pan of rocky road fudge to enjoy for Christmas! Yum!
And for Pat Russell in cold SW Oklahoma who wanted lucky new year’s dishes
(and Christmas), everyone in the south, especially NM, has red or green
tamales. If you ever try any, make sure you get the ones baked by a
family. They are very good! These are difficult to make, if you never have
before, and is a long drawn out process.

This is for Jack who bought a Pancake Puff Pan and is not having any
luck with it. I bought one recently from Prepared Pantry and made some
good little puffs with it. I bought the iron pan because I read that it
works better than the aluminum. Also, I sprayed it with Pam each time I
added batter. This is the recipe I used and it was quite good.
Pancake Puffs ( aka Danish Aebleskiver)
2 cups all purpose or cake flour
1 teaspoon salt
1 teaspoon baking soda
1 and 1/2 tablespoons granulated sugar
3 large eggs
2 cups buttermilk
filling of your choice ( I used apple pie filling)
powdered sugar
Mix together the flour, salt, baking soda, and sugar.
Separate the eggs, and set aside the yolks. Beat the egg whites until
light and fluffy and soft peaks form.
Add the egg yolks and buttermilk to flour mixture and stir until combined.
Gently fold the beaten egg whites into the batter. Grease the pan with Pam
or with butter. Heat the pan over medium heat. When hot, fill each cup
with a tablespoon of batter. Add a teaspoon of filling to each, then cover
with an additional tablespoon of batter. Cook for one and one-half minutes
before turning. (You can turn the puffs with a toothpick on each side,
then flip to cook the other side). You may have to loosen the puffs around
the edges with a knife before turning. Cook for another minute until done.
Sprinkle with powdered sugar and serve warm. It took me a while to master
the turning of the puffs, but it really wasn't that hard to do. This made
quite a few puffs, but they are so small and good, that you can eat quite
a few.

Baked Lima Beans
1-1/4 c. dry lima beans (1/2 lb.)
1 ham bone
1/2 tsp. salt
1/4 tsp. dry mustard
1/2 tsp. vinegar
2 tbsp. molasses
3 tbsp. chili sauce
Place beans in soup pot with ham bone. Add 3 cups water. Boil 2 minutes,
remove from heat, cover and let stand 1 hour. Preheat oven to 300 degrees.
Drain beans, reserving 1 cup liquid. Combine beans and reserved liquid
with remaining ingredients. Bake in 1 1/2 quart casserole for 2 1/4 hours,
uncovering last 30 minutes. More liquid may be added if necessary.

Happy Holidays all, this is for Fran in Upstate New York in her quest for
Baked Scallops. I have used this recipe many times and agree it is
properly named, Awesome Baked Scallops. You may want to use a little less
bread crumbs but that will be a matter of taste., just enjoy. I believe
the original recipe came from
www.Allrecipes.com but not sure, sorry.
Awesome Baked Scallops
Large sea scallops are combined with garlic, shallots, butter and bread
crumbs then baked to perfection.
Serves 4.
16 sea scallops, rinsed and drained
5 tbsp butter, melted
5 cloves garlic, minced
2 shallots , chopped
3 pinches ground nutmeg
Salt and pepper to taste
1 cup bread crumbs
4 tbsp olive oil
1/4 cup chopped parsley
Lemon wedges for garnish (optional)
Preheat oven to 425 degrees F (220 degrees C). Place scallops, melted
butter, garlic and shallots in a bowl. Season with nutmeg, salt and
pepper. Stir gently to combine. Transfer to a casserole dish. In a
separate bowl, combine bread crumbs and olive oil. Sprinkle on top of
scallops.
Bake in a preheated oven until crumbs are brown and scallops are done,
about 11 to 14 minutes. Top with parsley and serve with lemon wedges on
the side.
Also, I would like to thank Carolyn in KY for sending along the recipe for
the Pineapple Sprite Cake....can't wait to make it.

Cranberry Sauce for Ham
1/2 c. brown sugar
1 1/2 tbsp. cornstarch
1/8 tsp. cinnamon
1/8 tsp. cloves
1 c. cranberry juice cocktail
1 tbsp. concentrated orange juice
1/4 c. mandarin oranges
Cook all ingredients except oranges over low heat until thick. Then add
the oranges and serve hot over ham.

To Fran in Upstate New York who asked about baking scallops (12/22/07
Newsletter), here is a very simple one that is quite tasty, easy, fast and
we enjoy it:
Baked Scallops
2 lbs. frozen or fresh scallops - thawed, drained well
Salt lightly (crackers will add more salt)
1/2 cup buttermilk
1 cup Ritz crackers, crushed
1/4 cup butter, melted
2 Tbsps lemon juice
Preheat oven to 400 degrees. In a bowl, season the scallops with salt (go
easy). Add buttermilk and toss to coat scallops. Place scallops in an
oven-proofed, buttered casserole and cover with the Ritz cracker crumbs.
Top with melted butter. Bake for 20 minutes uncovered. Sprinkle the lemon
juice over the scallops and serve. I get about 4 servings out of this.
I serve it with:
Easy Microwave Potatoes
3 or 4 red, new potatoes - diced into bite-sized cubes (about 3/4").
Paprika
Onion Powder
Lawry's Seasoning salt
Pepper
Place in a microwave-safe covered dish and sprinkle with seasonings to
taste. Toss to coat the potatoes. Cover, (cut to vent) and microwave for 4
minutes on high (according to your microwave - mine is really hot so I
have to watch it.) Remove and stir. Repeat procedure until potatoes are
done. (Mine take about 6 minutes.) Notice: No oil or cooking spray is
needed!

My (Barbara's) Cole Slaw
I really do not have a recipe for this, but it is my favorite cole slaw. I
shred about 1/2 cabbage and some carrots and onion on my hand grater.
Sprinkle lightly with sugar and salt. Add enough mayo to moisten. GOOD!
And dinner is served!

Brenda in NH asked for a pumpkin dip. I made this at Halloween and
served it in a hollowed-out pumpkin. I took it to an event and had to give
out the recipe to almost everyone. It is light and creamy. I used cinnamon
graham crackers for dipping, but fruit wedges (apple, pear, etc) or any
other suitable "dipper" could be used.

PUMPKIN DIP
1 cup solid pack pumpkin
1/2 cup sour cream
1/2 tsp cinnamon
1/4 cup packed brown sugar
1 cup Cool Whip, thawed
chopped pecans - optional
cinnamon graham crackers
Combine pumpkin, sour cream, brown sugar & cinnamon in large bowl with
whisk. Fold in Cool whip. Pour mixture into serving bowl and sprinkle with
pecans, if desired. Serve with cinnamon chips, and apple or pear wedges.

I just finished making the 2 ingredient fudge.. I used white chips and
strawberry frosting, I let it sit and cool abit then stirred in miniature
marshmallows !!! Turned out "sinfully rich and good" LOL

Ham Steak
1 pre-cooked ham steak, about 1 lb.
2 tsp. brown sugar
1/2 tsp. prepared mustard
Put ham steak in a baking dish. Cook covered with plastic wrap for 9
minutes. Remove and drain off juices. Mix juices with brown sugar and
mustard. Spread over top of steak. Cook for 3 to 4 minutes. Cover loosely
and let stand 2 to 3 minutes.

Leftover Mexican Turkey Casserole
2 c. chopped cooked turkey
1 can cream of chicken soup
1 c. milk
1/4 c. diced green chilies
2 c. crushed tortilla chips
1/4 c. sliced green onion
1 c. shredded Monterey Jack cheese
1 c. shredded Cheddar cheese
Paprika for garnish
In a 1 quart bowl, combine turkey, soup, milk and chilies. Microwave on
full power for 4 minutes, or until hot throughout. Sprinkle 1/3 of
tortilla chips on bottom of 2 quart casserole. Pour in half of turkey
mixture; sprinkle on half of onion and half of each cheese. Layer another
1/3 of the chips, remaining turkey mixture, onion and cheese. Top with
remaining chips. If desired, sprinkle with paprika over chips for added
color. Cover and microwave at full power 5 minutes. Turn 1/4 round and
microwave 5 minutes longer. Let stand 5 minutes before serving.
NOTE: It can also be baked in regular oven at 350 degrees for 45 minutes.
Good with rice and green beans.
NOTE: If you prefer a relatively mild flavor, be sure to use mild green
chilies. This casserole has an excellent flavor and is not "hot".
Turkey and Broccoli Casserole
2 (10 oz.) pkg. broccoli spears
2 c. coarsely diced and cooked turkey
1/2 c. skim milk
1/2 c. grated Cheddar cheese (2 oz.)
1 (10 1/2 oz.) can cream of mushroom soup
Preheat oven to 375 degrees. Cook broccoli according to package
directions. Layer in 12 x 18 inch baking dish. Spread turkey evenly on
top. Combine soup with milk; mix until smooth and pour over turkey.
Sprinkle with grated cheese. Bake for 30 minutes (375 degrees). Let stand
for 5 minutes before cutting into 6 portions.

Potato Soup
2 lbs. ham, cut up into bite-size pieces or ham bone
1 c. diced celery
2 c. milk
Salt & pepper
4 to 6 potatoes, diced
Simmer ham or soup bone with celery in 4 cups water. Add potatoes and cook
until tender. When done, add milk and season to taste. Serves: 6

Cake Mix Cookies
1 yellow cake mix with pudding
1 egg
3/4 c. oil
1/4 c. brown sugar
Combine all ingredients. Either drop or roll out and use cookie cutters.
Bake at 350 degrees until lightly brown.

stomach?? I can't even imagin what it would look like, (well yes I can,
)LOL.. What does the pig stomach do actually? Is it for flavor? Your

Help! I'am fixing a dry cure ham for the weekend and would like to fix
gravy. However you can not use the drippings from the ham as it is way too
salty . How can I make a good gravy? What do you suggest? I don't know if
there is a ham base, as I have never used one or even seen it available.
Open for all suggestions.
