Cyndi in Texas: First, Oleo is a synonym for margarine. Second, thanks for reminding me; I've been intending to send in this recipe for the best and healthiest muffins I've ever found. No one will ever know they're good for you if you don't tell them. I let my food processor do all of the shredding - it's not as difficult as it might look. Since I'm baking anyway, I make a double batch of these and fill foil baking muffin cup liners (in the muffin pan). When they are frozen solid I put them in a freezer-strength ziplock bag. That way, I can remove and bake just a few at a time and always have fresh muffins. (Note: If your grocery store doesn't carry flax seed meal, try a health food store.)

BRAN FLAX MUFFINS
1 ½ c flour
¾ c Flax Seed Meal
¾ c oat bran
1 c brown sugar
2 tsp baking soda
1 tsp baking powder
½ tsp salt
2 tsp cinnamon
1 ½ c. finely shredded carrots
2 unpeeled & shredded apples
½ c. raisins
1 c chopped nuts
¾ c milk
1 tsp vanilla
2 beaten eggs

Mix together flour, flax seed meal, oat bran, brown sugar, baking soda, baking powder, salt & cinnamon in a large bowl. Stir in carrots, apples, raisins and nuts.

Combine milk, beaten eggs and vanilla in separate bowl.

Pour liquid ingredients into dry ingredients & stir until ingredients are moistened. Do not overmix. Fill greased muffin cups 3/4+ full & bake at 350 degrees 20-25 minutes or until done.

Here is one.

Kidney Bean Soup
Ingredients
1 can kidney beans, drained
1 medium onion, chopped
1 clove garlic, minced
½ tsp ground cumin
3 fresh tomatoes, chopped
2 tbsp chopped fresh parsley
salt and pepper to taste

Combine together the beans, onion, garlic, cumin, and tomatoes in large saucepan. Cook for about 15 to 20 minutes over medium heat until the onion is tender. Stir occasionally, and add water as needed to prevent sticking. Remove from heat. Let it cool down. Puree half of soup in blender or food processor until smooth, and return it to the saucepan. If soup is too thick, add a little water to desired consistency. Reheat the soup and sprinkle with parsley, salt & pepper before serving.


Feb. 16th Remppmom Greeley, co. requested a cream of soup base. Heloise had one in the paper and she's always good.

1/4 tsp black pepper. 1/2 tsp dried thyme, 1/2 tsp dried basil, 1 Tbsp dried onion flakes, 2 Tbsp cornstarch,2 Tbsp bouillion, 1C nonfat dried milk powder.

To make a soup, put the mixture in a large saucepan and add 2 cups cold water. Cook on medium heat and stir constantly until mixture thickens. To the thickened mixture add the main ingredient and let the soup cook a few minutes longer.

Note: add your own main ingredients (chicken, broccoli, mushrooms or celery) you'll have a delicious cream soup for less than store bought.

Hey fellow cooks! I am looking for a tnt crockpot recipe for scalloped potatoes. I love them from the oven but am trying to find one that duplicates that wonderful taste in the crockpot. I have tried several that call for evaporated milk, creamed soups, and grated cheese but none taste like the original oven baked. Does anyone have a recipe that their family loves?

I hope you are doing well, We are expecting a snowstorm on Fri. - Mon. They haven't mentioned how much snow, but we have not had much at all in my area. I love your newsletter but I am a little behind right now.

Serving Size : 12

3/4 cup flour -- sifted
1/4 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons cocoa
3/4 cup sugar
1/2 cup shortening
2 eggs
1 teaspoon vanilla
1/2 cup walnuts
1 package miniature marshmallows

FROSTING:
1/2 cup brown sugar
1/4 cup water
2 squares baking chocolate
3 tablespoons butter
2 tablespoons vanilla
1-1/2 cups powdered sugar

Combine flour, baking powder, salt, cocoa, and sugar. Blend in shortening, eggs, and teaspoon vanilla. Add walnuts. Spread in greased baking pan and bake at 350^ for 20 minutes. Take from oven; sprinkle miniature marshmallows over the top, keeping away from sides of pan. Put back into oven for 3 minutes.

For the frosting, combine brown sugar, water, chocolate. Boil for 3 minutes; take from burner and add butter, vanilla, and powdered sugar (enough to make smooth icing). Spread over marshmallows and let cool. Cut in squares.

Chili Challenge Competition, Athens, Alabama

Hey all....just sharing with you that Jerry and I are entering a Chili Challenge Competition this weekend. This is a fundraiser to help Hospice of Limestone County Alabama. We are cooking Grilled Chicken Chili. We won in the group category last year. Jerry entered the individual category this year. This is a white bean type chili that also has a few tomatoes in it. We dip the chili and add chopped chicken breast, fine shredded cheddar cheese, green onions and a squirt of our homemade white sauce on top. I will share the recipe after we get it put together...I think he is going to change it a little bit this year. If anyone is close enough and would like to come, please do. Tickets are $7.00. They get you in the door to taste all the different chilis, lunch, silent auction and they have bands there throughout the day.  This is from 11 am to 2 pm at Athens High School gym in Athens, Alabama, this Saturday, February 24th....if you come, please look me up. We will
be at table #5.

Hi Nancy, Thanks for the wonderful newsletter! I have some additional suggestions for Ms.Jackie's Amish Friendship Bread recipe in the 2/14/07 newsletter. Use your imagination and vary the flavor of the pudding and corresponding ingredients. For example: instead of the large box of instant vanilla pudding, I sometimes use chocolate pudding and add one cup of chocolate chips or vanilla chips. Or instant butterscotch pudding and add butterscotch chips. Or instant lemon pudding and add poppy seeds (with a little lemon extract.) My personal favorite is using the vanilla pudding with one cup dried cranberries, with orange zest and nuts. These sweet breads freeze beautifully and are always a hit at bake sales!

Andee in Los Angeles, in the 2-19 newsletter, asked if anyone had tried the no-knead bread featured a few weeks ago on Martha Stewart’s TV show. I have made it several times and we love it. I’ve made it at least 3 times in a heavy aluminum Dutch oven. It is very crusty outside and chewy inside the first day. When it is completely cooled, I put it in a gallon zipper bag. The next day the crust is chewy instead of crispy which is still tasty. We enjoy the crackly crust so I put a meal sized wedge in the toaster oven on low for several minutes to restore the crispiness. I have usually started it about 6:00 p.m. one day and its ready to bake about 2:00 p.m. the next day. It takes the whole 18 hours to double in size the first time—our house is kept cool. The first time I used cornmeal for the final step because I didn’t have wheat bran. I found large jars of toasted wheat bran at Big Lots made by Kretchmer. By the way, the bran muffin on the side of the jar is wonderful. I added some raisins and nuts. I baked them in the Pampered Chef stoneware muffin pan which does a great job. My sister-in-law put paper muffin cups on a cookie sheet and filled them and the bottoms got rock hard. Darlene in WV


In regards to the original margarine in the plastic bag with the yellow dye capsule. Well, I'm really going to show my age. Anybody remember that before we were lucky enough to have the nice clean plastic bag to knead, there was the block of margarine (looked like Lard) with a packet of yellow dye powder that had to be sprinkled over the margarine & mixed in. I vividly remember this as it was my job to do the mixing. UGH! It was soooo messy.

I read some comments about the George Forman Grill. I am having problems with the finish chipping off on the grill. Has anyone else had this problem. We emailed the company but they did not respond. We bought it about a year ago and use it a lot. I used vinegar to clean it. We love it but can't use it.

Apple Dumpling Recipe
4- granny smith apples, peeled and cut into quarters
2- cans crescent rolls
1-cup or 1-1/2 cups orange juice( I used canned) but if frozen is used, be sure and mix it up as directed on can.
1-1/2 cups of sugar
1-1/2 or 1 3/4 sticks of butter

Put orange juice, sugar and butter in a pot and cook till butter is melted. Put a quarter of the apple in each triangle of crescent roll. Wrap the apple up and pinch together if any of the apple is showing. Place in an ungreased pan or baking dish. Pour the juice mixture over the dumplings and bake at 350 degrees for 30 -35 minutes or till golden brown. So yummmmy and I know you will love them. God Bless all of you..

Tomorrow is Ash Wednesday (a meatless day for many Christians). Here are a couple meatless recipes to help you with meal planning.

Lentils Monastery Style
1/4 cup olive oil
2 large onions, chopped
1 carrot, chopped
1/4 tsp dried thyme
1/4 tsp marjoram leaves
3 cups vegetable broth or seasoned water
1 cup dry lentils, sorted and washed
Salt to taste
1/4 cup chopped fresh parsley
1 can (16 oz) tomatoes
1/4 cup sherry
2/3 cup grated Swiss cheese

In a large stock pot with cover, pour olive oil. Saute onion and carrot for 3 minutes. Add thyme and marjoram and saute an additional 1 minute. Add broth, lentils, salt, parsley and tomatoes. Cover pot and cook until lentils are tender, about 45 minutes. Add sherry.
To serve, place 2 tbsp Swiss cheese in each of 4-6 soup bowls. Ladle hot soup over cheese. Serve with corn muffins and fruit.

Polish Omelet
1 medium onion, chopped
1 medium potato, peeled and coarsely grated
1 medium zucchini, coarsely grated
1 tbsp butter or margarine
4 eggs, beaten
Salt and pepper to taste

Saute onion, potato and zucchini in butter or margarine until tender in a nonstick skillet over medium heat with lid on pan. Remove lid and add beaten eggs, salt and pepper. Cook until eggs are set. Serve with a green salad or fruit and toast.


Andee in LA I read your post for the No Knead Bread and would love to try it, but I do not have a Dutch Oven, so I was thinking of using your idea of baking the bread in a cake pan, what size pan did you use, and for the covering did you use plain ole aluminum foil? I was thinking that a 9 inch spring form pan might work as well. I watched the video and it comes out just the way that my family loves bread. A good ciabatta bread around here is between

$2-$3 a loaf it seems like I can make it cheaper myself. Most of the time we drive 4 hours to Toronto, CA to an Italian bakery out there and buy a lot of the bread and freeze it. This seems a lot easier!

This is for Maggie B. in the Feb. 17th newsletter.

Cabbage Soup
4 cups (10 oz) cabbage chopped or shredded
1 cup chopped onions
1 can tomato soup (10-3/4 oz)
1 T lemon juice
3 tsp. beef granules
salt to taste
3 cups water
pepper to taste

Combine all ingredients in a 4 quart pot. Bring to a boil. Cover, simmer 30 to 60 minutes (the longer the better) to combine flavors. Enjoy!

TACO SALAD RECIPE
In a skillet brown 1 lb ground beef, drain then mix in 1 pkg. taco seasoning do not add the water. Chill

Dressing:
1 c mayo
1/4 c taco sauce
1 T sweet relish
1 prepared horseradish

Combine well set aside.

Salad:
1 Head Iceberg lettuce, shredded
1 can sliced black olives
1 pint grape tomatoes
1 green pepper diced
1 medium size sweet onion diced

1 bag Doritos crushed- I only use about ½ of the Doritos in the regular size bag of Doritos and then crush them and add more to suit my taste. Toss salad ingredients together except for Doritos just before serving add dressing and the crushed Doritos. This is my family’s favorite salad recipe we make this a lot for birthday parties and especially for Super Bowl.

Also good with ice cream.

For Emma in Newsletter on 19th: Thanks for the impossible pie recipe. I have a recipe that is very similar that was my mom's made with Bisquick. The recipe I am searching for had very little flour. It was almost a gooey candy texture when baked. I will keep looking and experimenting.
