Baking Essentials Lessons (Easy lessons on Baking)
Thank you for the best
recipe newsletter on the web. Everyone is the greatest with
all their help. Now I have a question- I'm planning to make
some "mix in a jar" recipes
where the ingredients are layered and have successfully done
it with quart size mason jars; however, the newest recipe I
have calls for quart and a half size food storage jars- Does
anyone know what I could use since canning jars don't come
in that size.

Hello Nancy and all. I
remember a while back there was a recipe for I think a
bread pudding using day old
doughnuts. Does anyone remember this? Please let me know
what newsletter it was in or if anyone has this recipe
please post it. Thanks in advance. Angel in CA

I just did a search on the Krispy Kreme Doughnut bread
pudding. There were several in the
March 23rd Newsletter.
There was good news and bad news when I moved back to
Amarillo. The bad news was there is no Krispy Kreme Donut
place any more. The good news is that I now don't have to
stop and eat them and gain weight.

Nancy, here is another
recipe for easy cookies for the lady wanting them for her
patients.
Also, I have taken a can of corned Beef, rinsed it off and
made sandwich spread just like the ham salad. After it is
rinsed, I break it up with a fork or to make either, use
your processor. Much quicker than a grinder. Now to the
cookies------
Pumpkin Spice Cookies
1 box spice cake mix
1 (15oz) can can pure pumpkin
Mix together and drop onto cookie sheets sprayed with
nonstick spray. Bake at 350 for
around 10-12 minutes. Makes 48 cookies
I like to add a little more pumpkin spice mix to this

Hi Nancy, been reading
about the ground up bologna sandwich
spread. I was also a child of the 40-50's and
remember eating these sandwiches. My Mom would add salted
peanuts to the grinder also. The kind with no redskins on
them. Sounds strange, but if you like peanuts you'll
probably like this too, gives it a little crunch. I think
the peanuts were my Dad's idea.
Marsha along the Mississippi river in Iowa
Linda from Bayou Land in
Louisiana asked about products to
clean her tub/shower. I am having the same trouble
with my walk-in shower with a glass door. Haven't tried this
hint yet, but I read online somewhere that one of those Mr.
Clean "Magic Eraser" sponges will remove soap scum. I need
to try that! In desperation this weekend, I tried "soft
scrub" and read later that that's not recommended. But it
helped a tiny bit. The door was hazy when we moved into this
house, so I don't have high hopes for it!
Also Shannon in Ohio needed a pea
salad recipe. This recipe came from my husband's
family, where this is THE salad you must have! It's a very
forgiving recipe - ALL ingredients may be adjusted to your
individual taste. If making it the night before, I always
wait to add the tomatoes till right before serving, or it
will be too mushy. The addition of lettuce is "different"
but we love it!
-2 cans LeSeuer small green peas, drained well - the cousin
that gave me the recipe was adamant that it MUST be this
brand, but I've used others with success
-chopped onion (however much or little you like - #1015
onions, chopped or sliced in slivers, are our favorite!)
-diced or matchstick cheese (cut like little matchsticks)(as
much as you like)
-1/2 head lettuce, torn in bite size pieces
-Miracle Whip as needed to moisten
-Chopped tomatoes or cherry tomatoes (halved) on top, for
color
Mix all, and chill well. Overnight is best, to allow flavors
to mingle. Try not to eat it all!
To Pam in Roanoke and Gail in LA, I cannot thank you enough,
re: cautions about the blue punch!!! Bless you for saving
our reception from bombing!! I will certainly pass that on
to my future daughter-in-law, along with the Sprite punch
from Suzy in Indy! I liked the idea about the ice ring with
the silver cake decorations. Also, I've had some "ice cream"
punches that were white or light cream-colored. Anyone have
one of those TNT recipes?
:)

I have hard water
as well, I just bought the Scrubbing bubbles automatic
bathroom cleaner, which is great. I also love the Mr. Clean
Magic Erasers which are great for taking the marks off of
your walls, but my girlfriend uses them for her bathtub as
well. I think there is another product called scrub free?
it's in a yellow bottle. You will probably have to go
through a few trial and errors before you find one that will
work for you. Also try some comet, or any scrub like that
should work well. Good Luck, Lynette in NY
Good Afternoon,
I live in El Paso Texas, and cannot find
Mary B’s Open Kettle dumplings.
do you know where I may get some?.

In reference to the
newsletter of May 30: Candy you are so right about
Grease Lightning being
wonderful. I also have a tip about ball point ink on
clothing or permanent marker writing or printing on items
such as tin or plastic. Spray the item with hair spray and
then wash the item of clothing or wipe the tin or plastic
item. It is really great and has saved me on many occasions.

In the May 30, 06
newsletter Linda from Bayou mentions the use of
Greased Lightening for
Bathrooms etc. I agree that it is a very good cleaner but
let me caution that it must be used in a well
ventilated area.

Could you please tell me
which Newsletter has the Blender
Cheesecake recipe in it? Thanks. Rose Marie, MO
This question was asked
by another Nancy as well.
Hi, Nancy!
I hope you and your furry babies are having a great day.
This is for JN in CA, who was asking about the amount of
butter in the the
Cherry Cobbler Mix recipe I
posted. The recipe was originally for an 8" square pan and
called for 1 c. butter, but I doubled all the ingredients
(including making the butter 2 c.) to make it a 9" x 13"
size. I've always just used 2 c. butter, but I would think
you could use a lot less. Too bad it's not fat-free! Hope
this helps!

I hope someone in the
group can help me know how to freeze
zucchini squash. I tried last year, but they were
mushy and icy. I have an abundance of a crop this year and
do not have enough recipes to cook all at one time. I would
love to be able to have them later on in the winter for
muffins or bread. Any suggestions would be greatly
appreciated.

Nancy - WE just got an
ice cream machine so I was
looking at all the recipes on your Ice Cream link. They all
seem to be for the gallon size and I've only got a 1 1/2 qt
size. How do I "change" the recipes? I 'm pretty good at
doubling things but have trouble making them smaller!
Appreciate your help and Love your newsletter.
Sue in Fl
Sharon in Australia - I
live in Florida and my brother lives in California. He
doesn't get much homemade "goodies"
so last Christmas I sent him various tins of
"goodies". Rum balls, an individual Friendship cake and some
fudge. So this year I wanted to send something for his
birthday in Aug - Hot weather. Are there cookie recipes
without any dairy? That is no milk products and/or eggs. Can
I use egg beaters instead? Also, I live in an area where we
don't have any "natural" type food stores - just Wal Mart
and Winn Dixie and Sav-A-Lot.
Any help would be appreciated. I'd rather have recipes from
this group who have already tried them than go "cold turkey"
with an unknown recipe.
Thanks a bunch.
Sue in Fl
Thank you to PW for
sending in the “Better than Sox Cake”,
it sounds very yummy, and different from the ones that I
have already received from fellow Nancylanders, I do plan on
trying it. I like the new name that you gave it, and would
certainly leave little to explain to kids.
Nancy~ Glad to hear that things are settling down for you
and that your 4 legged friends are doing well, I do enjoy
hearing about their mischievous behavior! Thanks again for
getting all of us together here; it feels like a family
reunion when I read the newsletters! Keep up the great work!
Gracie, NY
I agree with Candy in
5/31 newsletter regarding the Greased
Lightning for cleaning. I haul tires and auto parts
and it's great for pre-wash on my jeans and uniform shirts,
so I'm sure it will clean bath/shower combos.

Hi to all of you! I am
looking for recipes for carnitas, jello salad recipes
without mandarin oranges in it.Also recipes for carne asada.
Thanks so much in advance!

Over time the floor of our white fiberglass stall shower
turned an ugly tan color. I tried every cleaning product I
could find. Mr Clean Magic Eraser did the trick. Took a bit
of elbow grease but now it looks like new.

Hi Nancylaners, I
recently came home from an auction with a 'lot' of old
linens. Buried under them were about 30 scarves from the
60's and 70's. I'd love to wear some of them.... but... I
can't get the musty odor out. I've tried soaking them in
water with Fabreeze added. Hanging them in the sun for a
couple of days also. The odor is still there. I don't want
to do anything harsh. Does anyone have any ideas? I know
there must be something I'm just not thinking of using.
Thanks for the help. Beth D. in Pa
I could not sleep
Tuesday night and I was going through my recipes and came
across this recipe for Salmon Loaf with Cucumber Sauce. I
believe someone was looking for a recipe for patties. You
could use this for the patties but you would want to sauté
the onion, celery and green pepper before you add them to
the mix. I know that I don't use mayonnaise but in this
recipe I do.
Salmon Loaf
1, 16 oz., can salmon, drained, flaked
1/2 cup dry bread crumbs
1/2 cup Mayonnaise only
1/2 cup onion, chopped
1/4 cup celery, chopped
1/4 cup green pepper, chopped
1 egg, beaten
salt to taste
Cucumber Sauce to follow
Combine ingredients except Cucumber Sauce; mix lightly. Sake
into loaf in shallow baking dish. Bake at 350ºF for 40
minutes.
Cucumber Sauce
1/2 cup Mayonnaise only
1/2 cup sour cream
1/2 cup cucumber, finely chopped
2 tablespoons onion, finely chopped
1/2 teaspoon dill weed, finely chopped
Combine ingredients; mix well. Refrigerate couple of hours.
Makes about 6 to 8 servings.
Nancy have a great day. Hopefully soon we can have pictures
of the cats. Everyone have a great day.

Dear Nancy,
Here's ONE MORE recipe/use for corn relish that's a bit
different & great for summer grilling season:
Franks with Roasted Corn Relish
1-1/2 cups frozen whole kernel corn
3 green onions, thinly sliced
1 tbsp. finely chopped red bell pepper
2 tbsps. Italian salad dressing
1/4 tsp. garlic salt
1 pkg. (12 oz.) beef hotdogs (I prefer beef, but can
substitute turkey or pork/beef blends)
Heat large nonstick skillet over medium-high heat. Place
corn in skillet. Cook & stir until corn is lightly browned,
about 3-4 minutes. Remove corn from skillet & place in bowl;
stir in onions, bell pepper, Italian salad dressing, &
garlic salt.
Grill hotdogs & toast buns. Place franks in buns & top each
with about 2 tbsps. relish.
(Prep time: 20 mins.; Cooking time: up to 10 mins.).
Susan from Superior, WI.
For something different
& really tasty:
Canyon-Style Potato Salad
5 cups diced potatoes, cooked in chicken or vegetable broth
1/2 cup sliced celery
1 cup prepared Hidden Valley Original Ranch Salad Dressing
1 Tbsp. prepared mustard
2 Tbsp. sweet pickle relish, drained
2 Tbsp. sliced scallion
1 tsp. salt
1/4 tsp. pepper
1/4 cup sliced radishes
In a bowl, combine potatoes and celery.
Mix together Salad Dressing, mustard, pickle relish,
scallion, salt and pepper. Pour over potatoes and celery;
toss gently.
Cover and refrigerate. Garnish with radishes or toss in just
before serving. Makes 8 to 10 servings.

This is for Lost in the
Family and her planning for the family
reunion. We have our family reunion every other year
and we have a Chinese Auction which is always great fun and
everyone - including the children - can participate.
Everyone brings "several" items for the auction. Something
nice - not junk. We always make sure there are items for the
kids too. Everything is put out on tables with a cup at each
item. We then sell tickets - $1 a piece. Half the ticket is
put in the cup(s) that you wish to "bid"on. When all the
items have been bid on, we then shake up the cup and choose
a ticket for each item. The winning ticket wins the item.
Some of the bidding can get fierce. We then use the money
from the sale of the tickets for the next reunion -
park/pavilion rental, cold drinks, etc. Our reunions are pot
luck with hamburgers/hotdogs bought for everyone.

jams, preserves.

2 cups sugar
1 tbsp lemon juice
Method: Place fruit in 2 qt glass bowl. Microwave on high 2
min. Stir in pectin; microwave on high 2 min. Stir in sugar
& lemon juice; microwave on high 6 min, stirring every 2

immediate use or store in freezer. i have used,

Nancy - a few days ago I
sent in a recipe for a really easy
cobbler. I think I forgot to mention that you need to
use Self-rising Flour! I'm sooo sorry cause that's really
important. I forgot once and wondered why it didn't turn
out!
