Nancy, my DH and I watched the Texas Tech & Texas game and I
don't if I would have gone to that game or not. Our college teams didn't play
Saturday but they will this Saturday. We do see our teams and not to many
Saturdays are they on at the same time. He went to Penn State and I went to Ohio
State. Yes a week and half ago they played each other and the best team won. We
never rehash the game because you can't change the score.
I have a question and it is what newsletter was the "Easy Coconut Pie" in? I
remember seeing it thinking that it had too many eggs in it for us. Could
someone please post it again so I can copy it. Oh well you just live once.

Texas Tech has another game this weekend. I plan to watch it on TV. The traffic
is so crazy when there is a game. Now that Texas Tech moved up in the rankings
there will really be traffic. They are already sold out on tickets. Last weeks
game was really exciting. In the last couple of seconds they scored a touch down
and won.

I received this recipe from some UK cousins and I have a few questions,
please.
Delectably Rich Cake
1/2 cup pitted prunes, halved
1-1/2 cups sultanas (what are they?)
1-1/2 cups currants
1/2 cup sweet sherry
1/2 cup brandy
4 oz softened butter
1/2 cup brown sugar
3 eggs
1 tbsp instant coffee granules
1/4 cup hot water
1/4 cup plum jam
1 cup all-purpose flour
1/4 cup self-rising flour
1 tbsp unsweetened cocoa powder
1 tsp ground cinnamon
1/2 tsp mixed spice (would this be equivalent to pumpkin pie spice or apple
pie spice?)
1/2 tsp ground nutmeg
1-1/2 cups glazed cherries
1-1/2 cups halved dates
1 cup mixed peel (would this be equivalent to citron?)
2 cups walnut pieces
Combine prunes, sultanas and raisins in a bowl. Add sherry and brandy. Cover
and let stand overnight. Cream butter and sugar. Add eggs, coffee granules,
water, jam, and dry ingredients; mix. Drain fruit, reserving liquid. Add
fruit to batter. Spread batter in a lined, greased loaf pan. Bake in a slow
oven (would this be 250 degrees) for 2 hours. Brush reserved liquid over hot
cake. Cover and cool.
Will keep up to 3 months.

I am looking for an easy trifle to make for Thanksgiving. We'll have pumpkin
and pecan pie but I got a new trifle bowl and would like to make something
different. We would prefer one without any liquor. I did get the Pineapple
and Cake one that appeared here a week or so ago....

Nancy, I finally found a recipe using the cream of onion soup on the
Campbell’s web site. Just as I thought, it would be especially good with
pork dishes! I still like the idea of pouring it over a pot roast before
cooking it, too! Yum!
Saucy Pork Chops
From: Campbell's Kitchen
Prep: 5 minutes
Cook: 20 minutes
Serves: 4
1 tbsp. vegetable oil
4 pork chops, 1/2-inch thick
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Onion Soup
1/4 cup water
Heat the oil in a 10-inch skillet over medium-high heat. Add the pork chops
and cook until they're well browned on both sides. Stir the soup and water
into the skillet. Heat to a boil. Reduce the heat to low. Cover and cook for
5 minutes or until the chops are cooked through.

Patricia in KY found Cream of Onion soup. (Nov 3 newsletter) I have
exhausted the stores in a 15 mile radius of home and even have friends
looking for it. Even called my brother in Washington state. Have decided it
is a regional product in the South & Mid West. I had planned to use in place
of Cream of Mushroom for the Classic Green Bean Casserole many make for the
holidays. Thanks for your suggestions.

Patricia in KY, in the 11/3 newsletter wandering what to use the cream of
onion soup in; I would suggest to use it in place of cream of celery or
mushroom with pork, chicken or beef dishes. We also bought 3 cans, and I
didn’t find any recipes on the Campbell’s site using the soup! I would use
it in stroganoff, with pan fried pork chops, etc. The dishes could be
endless! I am going to make hamburger stroganoff this week using a can of
the cream of onion soup in place of the cream of mushroom soup. Sandee in
West TN in the 10/20 newsletter said she used it with a roast. Dineen in MI
in the 10/13 newsletter used it in her green bean casserole since she

In response to Jae Nov. 1 newsletter, wanting brown sugar recipes, here's
one of my favorites:
Butterscotch Pudding Mix
2 cups nonfat dry milk
5 cups brown sugar, packed
1 tsp. salt
3 cups cornstarch
Mix and store in airtight container; divide into gift jars.
ATTACH TAG TO GIFT JAR:
To make Butterscotch Pudding:
Add 1/2 cup mix to 2 cups milk. Heat and stir constantly while boiling.
Cool, then serve. Chris in NM
Butterscotch Brownies
2 cups all-purpose flour
1 1/2 tablespoons baking powder
1/4 teaspoon salt
1/2 cup flaked coconut
3/4 cup chopped pecans
2 cups packed brown sugar
To a one liter jar, add flour, baking powder, and salt; stir together, and
pack down. Then add and pack down remaining ingredients in this order:
coconut, pecans, brown sugar.
ATTACH A LABEL WITH THE FOLLOWING INSTRUCTIONS:
To make Butterscotch Brownies:
Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking
pan. Empty jar of brownie mix into a large mixing bowl; stir to break up
lumps. Add 3/4 cup softened butter, 2 beaten eggs, and 2 teaspoons of
vanilla extract; mix until well blended. Spread batter evenly in the
prepared pan. Bake for 25 minutes. Allow to cool in the pan some before
cutting into squares. Chris in NM

Chris’s Beans
1 can Cannellini beans
1 can Busch’s Homestyle Beans
about 3/4 c. catsup
1/3 c. prepared mustard
¼ c. brown sugar
1 med. green bell pepper, chopped
½ med. onion, chopped
1/3 lb. bacon, fried crisp
Mix all ingredients together well and pour into crock pot. Cook on high for
4 hours, then on low for 2 hours. So yummy! Chris in NM
For Sue in TN, in the 11/3 newsletter wanting a green tomato relish recipe I
found the following in the Aug. 2007 listing of recipes:
“Hi, thanks so much for this wonderful news letter. Betty T wanted a green
tomato relish recipe. This one is tnt.”
Green Tomato Relish
14 pounds green tomatoes
3 red peppers
3 green peppers
1 medium cabbage
4 onions
1 stalk celery
7 cups sugars
½ box pickling spice
1 qt apple cider vinegar
Wash dry and grate the vegetables. Combine all ingredients in a large pot,
cook 30 to 45 minutes until vegetables are done. Put mixture in canning jars
and follow directions for a water bath.

Green Tomato Relish
2 qt. chopped green tomatoes
3 green peppers, sweet
3 red peppers, sweet
5 lg. Onions
3 tbsp. salt
2 tbsp. celery seed
2 tbsp. mustard seed
1 tbsp. allspice
1 tbsp. turmeric
3 c. sugar
3 c. vinegar
Grind coarse tomatoes, peppers, onions. Put together in large pan, put the
salt in and let stand 10 minutes. Drain, then mix all the spices, sugar and
vinegar in it. Boil 10 minutes. Put hot in jars and seal.

Andee In Los Angeles, you can use dumplings as a side dish with meat and a
veggie in place of potatoes or rice. You can also use them in soups or
stews. Chicken and dumplings, beef and dumplings, etc.
Chicken And Dumplings (Old Fashioned)
1 stewer or fryer
1 diced carrot
1 diced potato
Parsley flakes
Salt
Pepper
Garlic salt
1 (8 oz.) pkg. wide noodles
Cook chicken in seasoned water until tender. Remove. Cool. Debone then
return to broth. Add carrot and potato; cook until tender. Then add noodles
and top with the uncooked dumplings spooned on dumplings.
DUMPLINGS
2 c. Bisquick
2/3 c. milk
Cook uncovered 10 minutes. Cover. Cook 10 minutes.

Ditto
doesn't understand the new time change. He seems to
be on the old time. Each morning we go around to each window and open up
the blinds. I hold him and he looks for birds and neighborhood cats in the
back yard. It is his favorite part of the day. This morning he woke up quite
early and wanted to go through the routine of opening the blinds. I told
him it was much to early and even the birds weren't up. He had all his
toys out on my bed and ready to play.
Guess he was excited that it was Election Day.

! Sara Lee pound cake
1 brick of ice cream(1 quart)
2/3 cup sugar
5 egg whites
Trim cake 1 inch larger than ice cream. Place on parchment paper. Gradually add
sugar to egg whites and beat to stiff peaks. Spread over ice cream ; seal
carefully to edges of cake. Bake at 450 degrees until golden brown about 5 min.
To serve, slide from paper to serving dish.

My mother used to make the best liver and onions. It was
smothered in a wonderful brown gravy and had lots of onions. I just can't seem
to get it right. Also, she used to just cook the liver dipped in wheat germ and
sautéed. Healthy, but not nearly as good as her old fashion smothered liver and
onions. I just don't know how to make that wonderful gravy like she did??

Ditto is a quick learner. What it took Siggy 6 months to learn it took
Ditto less than 2 weeks. Siggy was trained to bring me my cell phone if I
fell. I have muscular dystrophy and when I fall I often can't get back up
without help. I trained Siggy to bring me my cell phone so I could call
for help. I guess Ditto watched Siggy bring me the cell phone because he learned
very quickly. Ditto doesn't care for treats much so it took a while to find out
what he would get for a reward. Finally found that he would work for
Scientific Diet Kitten food. For him these are treats. I got a
sample package at the vet when he got his yearly shots.

Nice recipe for left over turkey. It is inexpensive and makes use of the extra
turkey. I usually reserve all the scrap turkey pieces for this and freeze into
packets.
Turkey Tetrazzini
Cook 1 pound spaghetti
In a saute pan place:
1 tbsp oil
Add:
1 medium onion chopped finely
3 cups sliced mushrooms
1/2 tsp thyme, salt, pepper
Cook 5 minutes
Stir in till smooth:
1/4 cup flour
Then mix in:
2 cups cooked turkey (cut into bite size pieces)
Add:
3 cups warm milk (stir in 1/2 cup at a time to incorporate)
Then:
1 cup chicken broth
1/2 cup parmesan cheese
3 tbsp chopped parsley (fresh if u have) OR 1 tbsp dried
Stir and continue to cook for 1-2 minute(s), or until the sauce is slightly
thickened. Remove from the heat and stir in: (if desired)
1/2 cup of dry white wine OR 1/2 cup more broth.
Place the spaghetti in a bowl and pour the sauce over the pasta. Sprinkle with
more parsley and Parmesan cheese and toss well. A salad is enough of an addition
to this meal.
For dessert any left over dessert from the holiday is fine or if you have left
over cranberry sauce make a:
Cranberry Mousse
Mix together:
1 3 oz pkg cream cheese (Room temperature)
1 cup any cranberry sauce (I like whole berry for texture)
Whip 1/2 pint container or 1 cup of whipping cream and fold into cream cheese
mixture. Place mixture in dessert dishes. Sprinkle with chopped nuts.
If making this recipe for a special function I either place in bought mini pie
shells or mini milk or dark chocolate cups that can be purchased at either your
grocery store or liquor store. Makes a great presentation.

Sweet Potato (Yam) Casserole With Marshmallows
1 (40 ounce) can cut yams, drained or boil fresh potatoes cut in wedges in water
until tender
1/2 cup brown sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 egg, beaten
4 tablespoons melted butter
1 (16 ounce) bag miniature marshmallows(can use large ones)
Butter 1 quart baking dish. Heat oven to 350 degrees.
Mash yams in a large bowl and add brown sugar, salt, cinnamon, egg, and melted
butter. Mix well. Place 1/2 mixture in baking dish. Top with a layer of
marshmallows, then add remaining mixture. Bake for 30 minutes. Remove from oven
and top with remaining marshmallows. Bake for another 10 minutes or until
marshmallows are lightly browned.

My Own Cream of Onion Soup Casserole
I made this for 2 so use your judgement for amounts. Created it to use up
leftovers from Sunday's grilling and now wish we had more leftovers!!!
Layer in order in greased 1 1/2 qt. Casserole
Sliced cooked potatoes
Grilled onions - any kind will do - or cook some in the house for this
Thinly sliced steak
Mushrooms, if you have them
Pour can of Cream of Onion Soup over all. Bake covered for 45 minutes until
done.
It was so easy and so very yummy - we will be grilling again on Sunday no matter
what the weather is here just to get leftovers for this!

I have a recipe request, I've got most of my menu planed out and just need
another side dish, veggie, or maybe a casserole dish to go with the rest of the
menu and I'm out of ideas. I am having smoked turkey (I think) and ham. The
usual relish tray with cranberry sauce. This year I have decided to bake some
potatoes instead of mashed and will serve a salad and au gratin spinach, plus
some desserts. I will also have some Ol' #7 yams with the other items. Can
anybody send in some fave recipes in one of the three categories I mentioned?
I'd appreciate it.

Thanks for the recipes for the liver and onions, I made them
for a Aunt that was visiting, she loved them, the milk does take away the
strongness of the liver.

This for Sue in TN. I have made this and it is very good. I like to just spread
some on a cracker and eat it.
East Texas Green Tomato Relish. or Catfish King's Relish
1 gal Chopped Green Tomatoes
3 Cups Sugar
3 lbs Chopped Onions
1/2 Cup Hot Peppers (more or less depending on how hot you want it)
1 1/2 Qt. Vinegar
1/3 Cup Salt
Simmer till Green Tomatoes turn brown in color. DO NOT BOIL. Ladle in jars and
seal. Process in water bath at a simmering temperature for 15 minutes. This is
the relish they serve at Catfish Kings I have been told.
Here is another recipe I was given but have never made.
Catfish Relish
2 gals. Chopped Green Tomatoes
1/2 gal. Chopped Onions
1 qt. Chopped Green Peppers
3 pts. Vinegar
1/2 cup Canning Salt
8 cups Sugar
Chopped all the vegetables. Mixed rest of the ingredients real well and pour
over vegetables and simmer 10 minutes. DO NOT BOIL. Place in hot jars and seal.
Water bath for 15 mins. The only differences in the two recipes is one calls for
hot peppers and the other one calls for green peppers. If you have a lot of
green tomatoes you might try both of them or just add hot pepper and green
peppers to a batch and see how you like it.

Hi to all. I am brand new at sending to you after reading your site for a short
time.
Sounds like this tip would help those who are planning a big thanksgiving
dinner. The last few years before my husband passed away, I made my stuffing in
the crock pot. I mixed it al together the night before and put it in first thing
in the morning. Saves oven room and the mess of digging it out of turkey. I
saved up my bread crusts for several weeks before in the freezer. My family
didn't like oysters, mushrooms, livers, or gizzards, so just added eggs, celery,
onion, apples, and seasonings to suit. Going easy on the sage, and added canned
chicken broth to moisten. Sorry I can't be more specific about the amounts of
each ingredient, but I'll bet your smart readers can figure it out.

Almond Chicken Baked Potatoes
2 baked potatoes, hot, split lengthwise
1 tablespoon margarine
2 tablespoons slivered almonds
1 can chicken, drained (5 oz.)
1/2 cup sour cream
1/4 cup real mayonnaise
1/4 teaspoon seasoned salt
dash of pepper
Melt margarine over medium heat. Add almonds and cook until golden. Stir in
chicken and heat through. In a bowl, mix sour cream, mayonnaise, salt and
pepper. Spoon sour cream sauce over potatoes, then chicken mixture. Serve
immediately. MAKES 2 SERVINGS

Stuffed Green Peppers - T N T
1 pound lean ground beef
1 onion, chopped
1/2 cup uncooked instant rice – I have usually just used already steamed rice,
about 1 c. cooked
1/2 cup water
2/3 (14.5 ounce) can Mexican stewed tomatoes
2/3 (14.5 ounce) can stewed tomatoes, chopped
salt and pepper to taste
4 large green bell peppers
1 (8 oz.) can tomato sauce, optional
4 slices cheddar cheese
sour cream
In a large skillet or medium stock pot, brown the beef and onion over medium
heat. Drain fat. Add rice, water, diced tomatoes, and stewed tomatoes. Season
with salt and pepper. Simmer until rice is tender. Preheat oven to 325 degrees.
Cut the tops off the bell peppers and clean out the seeds and membrane. (Note:
You may have to slightly slice the bottom of the peppers to make them stand up.)
Fill peppers with meat mixture. Add one slice of cheese on top of each pepper.
Place in a casserole dish and bake in a preheated oven for 45 min. covered or
until peppers are as tender as you like. Served topped with tomato sauce and/or
sour cream. Serves 4 NOTE: When I make my rice ahead of time I just mix the
stuffing ingredients with the rice and stuff the peppers. Then you omit the
water.

Chicken Fried Round Steak
1 1/2 lbs. beef round steak, cut 1/2" thick
1 beaten egg
1 T. milk
1 cup finely crushed saltine crackers (about 29 crackers)
1/4 cup oil
Pound steak to 1/4" thickness. Cut into 6 pieces. Stir together egg and milk.
Mix cracker crumbs, 1/2 t. salt, 1/4 t. pepper. Dip meat in egg mixture, then in
crumbs. Brown meat in large skillet in hot oil. Turn once; cover. Cook over low
heat 45 to 60 minutes or until tender.
Serves 6

Tomato Gravy
1 lb. bacon and drippings, (I used 1/2 lb.)
3 tbsp. flour, ( I used a little more)
2 (14 1/2oz.) cans plain diced tomatoes (not Italian or seasoned)
1 16 oz. can chicken broth
salt and pepper to taste
1 tbsp. sugar
Use a heavy frying pan to fry the bacon. Drain, then crumble and set aside.
Leave just enough of the drippings to cover the bottom of the pan. Slowly stir
in the flour and brown, stirring frequently to keep from burning. Slowly add the
broth while stirring. This makes just a brown gravy. Simmer until thickened. Add
the canned tomatoes and simmer. Add water if too thick. Add the crumbled bacon,
salt and pepper and sugar. Serve over hot biscuits.

Snickerdoodles
3 tablespoons granulated sugar
1 teaspoon cinnamon
1 package yellow cake mix without pudding
2 eggs
1/4 cup oil
Heat oven to 375 degrees F. Grease or spray cookie sheets. Mix cinnamon and
sugar in small bowl and set aside. Combine remaining ingredients in large bowl
until well mixed. Roll dough into 1-inch balls; roll in cinnamon sugar mixture.
Place balls 2 inches apart on cookie sheet and flatten with bottom of glass.
Bake at 375 degrees F for 8 minutes or till set. Cool on cookie sheet 1 minute
then cool on a piece of foil on a flat surface.

Crockpot
BBQ Turkey Sandwiches
1/2 onion and 1 clove garlic sauted then put in crockpot
Add:
1C catsup
1/3 C Brown sugar
1/4 t chili powder
1/4 t salt pepper to taste
1T vinegar (optional)
diced (cooked) turkey (or chicken, or pork, or beef, or...??)
Let cook (I'm going to do mine all day) then serve on bread for sandwiches. (I'm
getting HMB buns from the bread store to serve on). I toast the bun halves and
place two halves on a plate toast side up and cover with the mixture - add a
side dish and a salad and you have a full meal. For the kids (and maybe Dad too)
serve this to them as sandwiches (still toast the bun to give body and flavor)
with some chips for lunch.

This is for Ann wanting to know how to fix sweet potatoes. Here's how I always
do it. After the potatoes are done(baked) or use the canned ones; Mash with
butter & a little brown sugar. Put in casserole dish & put marshmallows on top.
Put in oven 5-10 minutes till marshmallows are golden. This is so yummy!

I had a pot that I had burned apples in.. I bet it was an inch
thick! Never have I had something like that to happen! and I hope never again! I
soaked it for about a week with everything I could think of. Nothing worked,
until I poured vinegar in it and boiled it for a while, then I put it in my
dishwasher, with the heat/dry part turned off, so it would just dry
naturally..The first time I did this a great big hunk came off, so I scraped a
while and repeated the process, and finally the burned on mess came off. It's
worth a try...Good luck!

Who asked if anyone had a recipe for KFC Wings. I'm assuming this is the recipe
she was requesting, I think if you were to dip them in hot sauce, it would be

3/4 teaspoon MSG
1/8 teaspoon Paprika
1/8 teaspoon Garlic Powder
If you are using frozen wings allow them to defrost and marinate. If you are
using fresh wings you are going to want to take the wing and remove the flipper
and then break them into two pieces and then marinate them. Combine the beaten
egg with the milk in a small bowl. In another small bowl, combine the flour,
salt, pepper, garlic powder, paprika and MSG. When shortening is hot, dip each
wing first in the flour mixture, then into the milk and egg mixture, and back
into the flour. Bread all the wings then refrigerate them until ready to use.
When they are ready to be used fry them 6 at a time for 12 minutes. Remove from
the shortening and allow them to drain for 3 minutes.
For the barbecue ones dip in the BBQ sauce and serve.

Just wanted to send in my recipe of how I make my turkey that is very moist. I
have a roaster(set on bake) that I put my thawed turkey in, breast side up to
start, put 1 big can of chicken broth in and then enough water to go half way up
the turkey, then I put a can of cream of chicken soup on top and spread with a
spoon then I set the temp to 350 and cook it for 4-5hrs. basting often about
half way thru I turn it over, the the last 1/2 hour turn it back over. If you
want it brown then remove and put in pan and then in the oven till browned. I
have enough broth to make my dressing which I add a can of cream of chicken soup
to my dressing (last year I didn't have anymore cream of chicken soup so I put a
can of chicken noodle soup in my dressing and everyone loved it, there was no
leftovers of it and i make it in a 9x13 pan full to the top)I make my dressing
with wheat bread. The rest of the broth I leave in the roaster after removing
the turkey then I add my homemade noodles and turn the temp all the way up to
cook them in the roaster. We let everyone get their noodles from the roaster.
Every one loves my turkey cause its so moist. I don't add salt as the broth and
soup has enough salt in it for us and those that don't think it does adds salt
at the table. I do put pepper in the broth after removing the turkey for the
noodles.

I just burned some potato soup in one of my pots and couldn't get it out. I
decided to spray it with over cleaner and it did come out with a little
scrubbing. You might try that :) Hope it helps.

Regarding Looking Up What You Want to Know - I just want to agree with Linda OR
regarding searching for ANY topic that you think you would like to know more
about or find. I worked at a University for 17 years and spent SO many lunch
hours at the Library looking up topics I was interested in. Now - it is at my
fingertips in my own house with my computer! If it crosses my mind - I LOOK IT

I wondered if any of you has had this problem. I use the Reynolds slow cooker
liners in my crock-pot. The bag doesn't slip down, it somehow, at the end of
cooking, leaks the juice in the crock-pot bottom---why is that??I don't see a
hole in the bag, either.
Does that come from cooking on high?? Purpose of the liner is to keep the crock-
pot clean--and here it still makes a mess. Any ideas??

How To: Line A Slow Cooker
I am diabetic and recently diagnosed with acute kidney failure. To prevent going
on dialysis, I've had many of my drugs rearranged and discontinued. My MD has
told me as long as I keep my blood sugar under 140 and lose weight I'll be able
to avoid the dialysis and insulin. But the bigger problem is that my diet needs
to be as free of sodium and potassium as possible and yet high in protien. I
have a terrible time finding foods I can eat, or that are tasty. Anyone have any
ideas for me.

Hi Nancy, hope all is well with you and our Ditto! Had to laugh with the story
of the birdfeeder on the window. I had one also and my silly cat drove her self
nuts trying to get at the birds! I finally had to just take it down before she
got hurt! Now miss the birds!
Judy I believe was asking about uses for Basil. I love basil. I tear it up and
put in tossed salad, add to soups, especially great to add to tomato soup. Make
basil oil, basil vinegar, pesto. I add it chopped fine to parmesan cheese with
some garlic and coat chicken and bake. Chop it up really fine and mix with
butter and put on Italian bread. Let your imagination go with it. Very versatile
herb and always very tasty!
