This is a cranberry relish I have been making for over 50 years and my mother-in-law made it for many years before I started making it. I keep it on hand most of the winter months not just at the holiday season.

Cranberry Relish
1 package fresh cranberries
4 apples (unpeeled)
2 oranges (peeled)

Ground all this and mix in a large bowl. Add 1 & ½ cups to 2 cups sugar, several drop of red food coloring and mix real well. Chill for several days before serving so flavors mix well. Keeps covered in refrigerator for a long time.

Also you can add nuts when ready to serve but they get soft so it does not keep good if you add nuts. I take part of it and add nuts and leave part plain as so many of my family have nut allergies.

Ice Cream Bread
Ice cream gets a whole new use in this tender bread recipe from = Katherine Kuehlman of Greenville, South Carolina. I found this recipe and pared = it down for two, she writes. Be sure to use full-fat ice cream for best results.

1 cup butter pecan ice cream, softened
3/4 cup self-rising flour
1 tablespoon sugar
1 tsp. vanilla

In a small bowl, combine the ice cream, flour and sugar. Transfer to a 5-3/4-in. x 3-in. x 2-in. loaf pan coated with cooking spray. Bake at 350ºF for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

Yield: 1 loaf (6 slices). Cooking for 2 Magazine

By the way folks, the coconut macaroons from Prepared Pantry were great! We each had one dipped in ganache after dinner last night and the two flavors really complimented each other!

Also, did you know that if you have extra Tom & Jerry mix or egg nog left over from a party, you can turn them into cookie batter? I have done this and the cookies turn out great!

Eggnog Cookies 2000
Makes 6 dozen.

1-1/4 cups white sugar
3/4 cup butter, softened
1/2 cup eggnog
1 teaspoon vanilla extract
2 egg yolks
1 teaspoon ground nutmeg
2-1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon

Preheat oven to 300 degrees F (150 degrees C). Combine flour, baking powder, cinnamon and nutmeg. Cream sugar and butter until light. Add eggnog, vanilla, and egg yolks; beat at medium speed with mixer until smooth. Add flour mixture and beat at low speed until just combined. Do not over mix. Drop by teaspoonfuls onto ungreased cookie sheet 1 inch apart. Sprinkle lightly with nutmeg. Bake 20 to 23 minutes until bottoms turn light brown.

Free Pasta Cookbook! 8 Easy Recipes for Everyone.


In Wednesdays newsletter, Terry in Lansing requested a cake or bread this is a very easy and inexpensive. This is a Banana Bread that I make and think you will like. When I serve it, I always hear people say this is the best banana bread I have eaten. It's called Fiddle' Banana Bread. Can't remember where I got it but off the internet about a year ago.

Fiddle's Banana Bread
3 large ripe bananas (I have used 4 small ones before and was fine)
2 cups self-rising flour
1 cup sugar
1/2 cup oil
2 eggs, lightly beaten
1/2 cup walnuts or pecans (I use pecans as I usually have them on hand) .

I have started adding 1 teaspoon of vanilla and I like it but this optional for you to do Mash bananas with a fork. Stir the flour and sugar together and mix with bananas, oil and eggs. Fold in the nuts, if desired. Pour into a greased and floured loaf pan. Bake for 1 hour at 325F, until golden brown and tested done with a straw.

Notes: If you use a glass loaf pan, reduce heat to about 315F and cook about 10 minutes longer.

Also, I add the nuts on top and take my hand and press them down a little instead of putting them in the bread. This way, if people don't like nuts in the cake they can scrap them off. This also make the bread a pretty presentation. My kids don't like nuts in food and this is why I don't add the nuts in the bread. It also makes a pretty loaf with the nuts on top.

Hi,
I have a fruitcake recipe , from my MIL, that has a cake mix, 4 eggs, a pound of candied fruit, and nuts in it. I bake it in small pans about 4x6 size, with a triple lining of tin foil. My question is can I alter the cooking time?

It calls for baking at 275' for 2 hrs and 45 mins with a pan of water on the bottom shelf of the oven. Is there anyway I can increase the time and cook it for less time.?

Hi Nancy, I am so sorry to see that you lost Siggy. It is so hard to lose one of your family, a space you cannot fill. We have all lost, the stories you gave us about his antics.. Ditto is fulfilling that task. This is for Jan in Muskegan,Mi in the Nov. 10 newsletter concerning meringue problems.

I got this from COOKS . COM Recipe Search. I don't know if you can post it. I have used it and it really works.

No Fail Pie Meringe (No Weep)
1 tbsp cornstarch
2 tbsp cold water
1/2 cup boiling water
3 egg whites
6 tbsp sugar 1tsp. vanilla
pinch salt

Blend cornstarch and cold water in saucepan. Add boiling water and cook, stirring until clearand thickened. Let stand until completely cold. With electric mixer at high speed, beat egg whites until foamy.

Gradually add sugar, beat untill stiff (not dry). Turn mixer to low speed and add salt and vanilla. Gradually beat in the cornstarch mixture. Beat all at high speed and beat well.

Spread meringue over cool pie filling and bake at 350 degrees for approximately 10 minutes.

I hope this not too long to post. If so, one could do a search on COOKS.COM. I always dreaded making a meringue until I found this recipe. My brother brought me a bag of lemons from California So I zested and juiced them and froze them. Then searched for a good lemon pie recipe and meringue, and found this recipe.

Pecan Squares
2 cups all-purpose flour
2/3 cup powdered sugar
3/4 cup butter, softened
1/2 cup firmly packed brown sugar
1/2 cup honey
2/3 cup butter
3 tablespoons whipping cream
3 1/2 cups coarsely chopped pecans

Sift together 2 cups flour and 2/3 cup powdered sugar. Cut in 3/4 cup softened butter using a pastry blender or fork just until mixture resembles coarse meal. Pat mixture on bottom and 1 1/2 inches up sides of a lightly greased 13- x 9-inch baking dish.

Bake at 350° for 20 minutes or until edges are lightly browned. Cool. Bring brown sugar, honey, 2/3 cup butter, and whipping cream to a boil in a saucepan over medium-high heat. Stir in pecans, and pour hot filling into prepared crust. Bake at 350° for 25 to 30 minutes or until golden and bubbly. Cool completely before cutting into 2-inch squares.

I was at a potluck yesterday and someone made a dessert that was brownie like on the bottom then a layer of marshmallows and graham crackers on top. Does anyone out there in Nancyland have a recipe close to this? Also I need a recipe for a dessert for a friends b-day that doesn't not have chocolate, white chocolate, strawberries, or coconut in it as she is allergic to all of these. Thanks in advance! In Newsletter for November 12 2008, Terry wanted some Christmas bread/cakes to give as gifts. This recipe I got off a radio show back in the 1980's in the Detroit area. Originally it called to bake in 1-pound cans but since they are lined with plastic now (or at least the ones I buy are), I switched to glass canning jars. It been a few years since I made this one, but I think it was 6 or 7 jars/cans. Hope this will help you Terry.

Holiday Spice Bread
1 cup sugar
1 cup packed brown sugar
2 eggs
2 cups buttermilk or sour milk (2 cups milk with 2 Tablespoons white vinegar mix together. Let stand for 5 minutes before using)
1 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon Apricot brandy (optional)
1 cup chopped walnuts
1 cup raisins
4 cups flour
2 teaspoons Baking Soda
1 teaspoon Baking Powder
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon allspice
1 teaspoon cloves

Cream sugar, brown sugar and eggs together. Add oil, vanilla, and brandy. Mix together. Sift flour, Baking Soda, Baking Powder, cinnamon, nutmeg, allspice and cloves. Add to egg mixture alternately with buttermilk. Stir in raisins and walnuts.

Fill greased, 1 pint wide mouth canning jars with perfectly straight sides, a little more than half filled. Place filled jars on cookie sheet. Bake in a preheated oven, 359 degrees, for 40 to 45 minutes or until tested done like a cake.

Cool 10 minutes in jars.
Remove from jars and cool 15 minutes on racks. Wrap each loaf in plastic wrap while still warm. Finish cooling on racks. Freezes great if wanted to make ahead of time.

Hot Chocolate Mix
Makes 1 gallon dry mix.

1 8 qt, box powdered milk
6 oz. non-dairy creamer
1 lb. powdered sugar
2 lb. container Nestle Quik

Mix the powders uniformly in a 2 gallon container mixing with a large slotted spoon. This makes one gallon of powder. Store in an airtight container.

To Make Hot Chocolate
1/2 C. powder to a heated mug and top it off with boiling water:

For extra creamy microwave 2/3 C. of milk for 1 minute and stir in 1/2 C powder.

For Mocha put 1/2 C powder in hot mug and top with strong coffee.

Mocha Singles: combine 2 1/4 Cups powdered sugar, 2 cups nonfat dry milk powder; 2 cups powdered fat-free nondairy coffee creamer, 2 cups chocolate milk mix, 3/4 cup instant coffee granules and 3 Tablespoons ground cinnamon, mix well.Use 1/4 to 1/3 cup mix to a mug, and fill with boiling water. Makes 32 servings.

RUSSIAN TEA
Combine 1/2 instant tea powder, 2 cups Tang, 1 1/2 cups sugar, (I use Splenda) 1 teaspoon ground cinnamon, 1/2 teaspoon ground cloves. Spoon 3 1/2 teaspoons into a cup and fill with boiling water. Makes 32 servings.

Spiced Tea
Evenly mix 2 cups Tang powder, 2 cups sugar, (or Splenda) 1/2 cup instant tea powder. 1 (0.31 oz.) pkg. unsweetened lemon flavored drink mix powder. 1 teaspoon ground cinnamon and 1 teaspoon ground cloves. Spoon 1 1/ 2 to 2 tablespoons of mix into a cup and fill with boiing water. Makes 32 servings.

Hot Spiced Cocoa
2 1/4 C non-fat dry milk
1/2 C. unsweetened cocoa
1/4 C sugar replacement
1/2 t. cinnamon
1/4 t. nutmeg

Mix and store in covered jar.
Stir 2 t. in 1 cup hot water.
Makes 13 cups 30 calories per cup

Tang Cream Cheese Roll

2 Tubs Philadelphia Cream cheese (softened)
1/2 C. Tang

Mix well and roll in chopped pecans.

Fruit Dip
1 Large jar marshmallow creme
1 8 oz. cream cheese softened
4 T. honey
2 t. vanilla
1 t. cinnamon

Mix well, serve with apple slices, bananas, etc.

P.S. for the lady with the "Spencer" cat, We took in a big male here recently. We were trying to come up with a name, finally I started just naming off names, he responded right away to "Frisky" so we now have an 11 pound "Frisky" Give the kitty time and you can judge what his personality is like, and a name will come. Evidently he doesn't like Spencer. Has his hearing been checked?

In Newsletter for November 12 2008, Gwen from southern New Jersey wanted to know how to teach a cat his name. Like Gwen, I had a dog for 18 yrs and never been around cats before. Then I had about 10 cats (not all at once) during the past 16 yrs. We lost our last one two years ago. How I taught all of them their names was having a special treat I would only give them when they responded to their name when called. After they started coming right away after being called, I started to wean them off of the treats by giving attention to them. After a while, they would come anytime I called them. Do hope this helps you with your problem.

I haven't commented in a while about your Ditto, but I wanted to say I still love reading about his daily antics. I'm glad you have him to keep you company. I would be so lost without my Tiki. My Tiki, like your Ditto, knows how to open and close doors. Our door handles are L shaped and very easy for little furry paws to simply pull down. So when my little Tiki wants to get my husband up from an afternoon nap in the study he knows how to open the door, slam it wide open, hop on the bed onto my husbands chest to sit and stare at him till he opens his eyes. Sure that's cute and all, but it's not cute when Tiki wants to slam the door wide open in the bathroom during a shower or bath. ha ha

Anyway, here is a recipe for my famous meatballs. I finally got around to taking some good pictures of it and was able to finally post it to my food blog. You really have to see the pictures and the rest of the story for how I make my sauce that goes with the spaghetti.

Dawn’s Meatballs
1 lb of organic beef 85% lean (don’t use any leaner as we need the fat content for baking)
1/2 cup +/- French bread breadcrumbs (just use stale French bread or sourdough bread)
1/4 cup +/- half & half
1 large egg
2 tb of Worcestershire sauce
¼ cup good quality parmesan cheese
1 tb of dried Oregano or 2 tb of fresh Oregano
Couple dashes of onion powder
Couple handfuls of minced onion
1 tb minced garlic
Couple dashes of hot sauce (optional)
Salt & pepper
Extra virgin olive oil

In a separate bowl take the bread crumbs and the half and half, mix together and let it sit and absorb a bit.

Preheat oven to 400 degrees. In a bigger bowl take the ground beef, the egg, add the Worcestershire sauce, the parmesan, onion powder, minced onion, onion powder, oregano, the garlic, hot sauce and salt & pepper. Then add in the bread crumb mixture. Mix all together by hand. Do not overmix.
Form into balls, whatever size you want, I do about 4 inch meatballs.

Get a non-stick pan for frying ready by heating over medium-high heat. Pour about 4 – 6 tb of extra virgin olive oil into pan. When nice and hot fry the meatballs, on each side. Do not cook through we just want a nice char-crust on the outside of the meatballs. Cook about 3-4 minutes each side.

Transfer meatballs to a baking dish and bake in preheated oven for about 15-20 minutes, depending on your oven. Meatballs should be cooked through.
When they are done you can immerse them in the hot spaghetti sauce or serve with on the side of the spaghetti.

My garlic bread is 1 large French or Italian loaf, one stick of salted butter, room temp, 2 tb of chopped garlic, 1 tb extra virgin olive oil, salt & pepper, 1 -2 pinches of sugar, 1 ts onion powder, 2 tb fresh chopped chives, 3 tb fresh Parmesan20cheese. Mix all, except chives and Parmesan cheese (as much as you like), in a bowl into a fine paste. Cut bread loaf in half, spread butter mixture on the bread with a nice thick coating. Sprinkle with chives and the parmesan cheese and bake in 400 degree oven till crispy about 10 minutes. Or until your desired likeness.

When I sent to Weight Watchrers, someone gave
these 2 ingredient recipes:

1 box angel food cake mis
1 can crushed pineapple

1 box angel food cake mix
1 can cherry pie filling

1 box angel food cake mix
1 can pumpkin

Just mix the 2 ingredients and bake until knife inserted in the middle is dry.
I have tried the one with pineapple and it was very good - and low in ww points.

Nancy, I, too, am a cat lover and love your stories about your furry friends. Ditto is quite the character! For Gwen in NJ, I read once that cats don't know or recognize their names but respond to your voice when you call them. Our cat, Bogey (he was named that since we found him as a little abandoned kitten barely 4 weeks old at the golf course) will lay in his window perch while the golf matches are on the TV and never respond or react to the announcers mentioning when someone makes a bogey. He much prefers to watch National Geographic on the TV when they have shows about tigers or lions. Then he takes a real interest. We've had him for almost 10 years now and he has made many trips back and forth across the country with us in our Motorhome but I must say he's not really a "happy camper" but tolerates it better than staying at the Catnap Inn.

This is for Dorothy in Texas.I have made this friendship bread and it's so good.

Starter recipe
1 (.25 ounce) package active dry yeast
1/4 cup warm water (110 degrees F/45 degrees C)
3 cups all-purpose flour, divided
3 cups white sugar, divided
3 cups milk

In a small bowl, dissolve yeast in water. Let stand 10 minutes. In a 2 quart container glass, plastic or ceramic container, combine 1 cup flour and 1 cup sugar. Mix thoroughly or flour will lump when milk is added. Slowly stir in 1 cup milk and dissolved yeast mixture. Cover loosely and let stand until bubbly. Consider this day 1 of the 10 day cycle. Leave loosely covered at room temperature.
Once you have made the starter, you will consider it Day One, and thus ignore step 1 in this recipe and proceed with step 2. You can also freeze this starter in 1 cup measures for later use. Frozen starter will take at least 3 hours at room temperature to thaw before using.

The Recipe
Important Note: Don't use metal spoons or equipment. Do not refrigerate. Use only glazed ceramic or plastic bowls or containers.

Required Main Ingredient
1 cup live yeast starter (see above)

day 1:
Do nothing with the starter.
days 2-5:
Stir with a wooden spoon.
day 6:
Add 1 cup flour, 1 cup sugar, and 1 cup milk. Stir with a wooden spoon.
days 7-9:
Stir with a wooden spoon.
Day 10:
Add 1 cup flour, 1 cup sugar and 1 cup milk. Stir. Take out 3 cups and place 1 cup each into three separate plastic containers. Give one cup and a copy of this recipe to three friends. To the balance (a little over one cup) of the batter, add the following ingredients and mix well.
1 cup oil
1/2 cup milk
3 eggs
1 tsp vanilla

In a separate bowl combine the following dry ingredients and mix well:
2 cups flour
1 cup sugar
1-1/2 tsp baking powder
2 tsp cinnamon
1/2 tsp baking soda
1 - (5.1 oz) box instant vanilla pudding
1/2 tsp salt
1 cup nuts

Add dry ingredients to wet ingredients. Mix and pour into two well greased and sugared bread pans. Bake at 325 degrees for 1 hour.

Turkey Dressing I make every holiday. I use turkey wings for the broth.
2 or 3 turkey wings (I pressure these in my presto pressure cooker for about 45 minutes)
Take meat off bones and use it for turkey salad.
I make my cornbread in an iron skillet and crumble it up good.
Saute 2 bundles of green onions and 1 cup chopped up celery in 2 Tbsps cooking oil untill tender.Add to crumbled up cornbread and add 8 eggs and turkey broth to mix well, And not be real thick. Pour into greased pan and bake on 425° until thicken and starts to brown. About 45 minutes or less.We don't like it real dry.

Italian Rice Balls
½ cup mozzarella (chopped into small bits)
½ cup cheddar cheese, optional (chopped)
2 eggs
½ cup grated parmesan cheese
¼ cup chopped fresh parsley
1 teaspoon black pepper
1 teaspoon salt
2 ¼ cups chicken broth
1 cup uncooked white rice (only use uncle bens)
1 ½ cups dried flavored Italian bread crumbs
olive oil or vegetable oil for frying
½ cup mozzarella cut into small cubes to insert in middle of rice ball


In a bowl whisk together the bits of mozzarella, cheddar, eggs, parmesan, parsley, salt and pepper. Pour the chicken broth into a large saucepan and bring to a boil; stir in rice and reduce the heat to low. Cook rice til liquid is almost absorbed, about 15 to 17 minutes.

Remove from heat and let cool before adding the egg mixture, continue stirring rapidly to coat the surface of the rice. Cool for 1 hour. Taste to see if more salt pepper or parsley is needed. Pour bread crumbs into a shallow dish.

Dampen your hands with water and create a ball with the rice mixture about size of golf ball. Add a chunk of mozzarella in center of rice ball and form again. Coat each rice ball with the flavored bread crumbs. Deep fry 3 or 4 at a time until golden brown
Drain on paper towels, then serve warm or with a bit of marinara sauce.

Ooey Gooey Cake

Cake
1 (18.25-ounce) box yellow cake mix
1 egg
1/2 cup (1 stick) butter, melted

Filling :
1 (8-ounce) package cream cheese, softened
2 eggs
1 teaspoon pure vanilla extract
1 (16-ounce) box confectioners' sugar
1/2 cup (1 stick) butter, melted

Preheat oven to 350 degrees. Lightly grease a 13x9x2-inch baking pan. In the bowl of an electric mixer, combine cake mix, egg, and butter and mix well. Pat into the bottom of prepared pan and set aside. Still using an electric mixer, beat cream cheese until smooth; add eggs and vanilla. Dump in confectioners' sugar and beat well. Reduce speed of mixer and slowly pour in butter. Mix well.

Pour filling onto cake mixture and spread evenly. Bake for 40 to 50 minutes. Don't be afraid to make a judgment call on the cooking time, because oven temperatures can vary. You want the center to be a little gooey, so don't bake it past that point

Pumpkin Gooey:
Add one 15 oz can of pumpkin pie filling and an egg to the cream cheese mixture. Proceed as directed above.

Pineapple Gooey:
Add a 20-ounce can of drained crushed pineapple and an extra egg to the
cream cheese filling. Proceed as directed above.

Lemon Gooey:
Use a lemon cake mix in place of the yellow cake. Add the juice (approximately 1/4 cup) and zest of 2 lemons to the cream cheese filling. Proceed: as directed above.

Carrot Cake Gooey:
Use a spice cake mix, and add 1 cup chopped nuts and 1 1/2 cup finely grated carrots to the cream cheese filling. Proceed as directed above.

Peanut Butter Gooey:
Use a chocolate cake mix. Add 1 cup creamy peanut butter and an extra egg to cream cheese filling. You can sprinkle the top of batter with 1 cup chopped peanuts if you like. Proceed as directed above.

Chocolate Chip Gooey:
Use either yellow or chocolate cake mix. Sprinkle 1 cup chocolate chips and 1 cup chopped nuts on top of filling. Proceed as directed above.

Banana Gooey:
Use a yellow cake mix. Prepare cream cheese filling as directed, beating in 2 ripe bananas and an extra egg. Proceed as directed above.

Nutty Gooey:
Use a yellow cake mix, and add 1 cup chopped nuts to the cake mixture. Proceed as directed above.

Chippy Gooey:
Stir 1 cup white chocolate chips, peanut butter chocolate chips, butterscotch morsels, Heath Almond Toffee Bits or Heath Milk Chocolate Toffee Bits into filling. Proceed as directed above.

And to Big Jim in Jacksonville about Dukes. It is all I use any more. It is incredible stuff !!


I work in a dental office and a patient gave me a recipe for a sweet bread that is baked in a mason jar. It makes a cute and unique gift. Just wrap a Christmas ribbon around the jar and give away.

Sweet Bread In A Jar
(applesauce/pineapple bread)
Cream together:
2/3 c shortening
2 2/3 c sugar
4 eggs
1 3/4 c applesauce
1/4 c pineapple
2/3 c water
Add to above and mix:
3&1/3 c flour
1/2 tsp baking powder
2 tsp baking soda
1 tsp cinnamon
1 tsp ground cloves
1 tsp salt
2/3 c chopped walnuts, optional

Bake in clean, dry, wide mouth pint canning jars. Grease nine wide mouth pint canning jars with Crisco. Fill jars 1/2 full of mixture. Bake at 325° for 45 minutes (without lids or caps) Remove from oven one at a time, clean sealing edge with paper towel or cloth and screw lids on snugly. Once sealed jars have cooled, tighten lids further if you can. As jars cool the heat will form a vacuum seal. You'll hear little "pinging" sounds as the lids seal themselves. When sealed this bread will keep on the shelf for up to 1 year.

VARIATIONS;
apples - 2 cups diced
applesauce 1&3/4 c plus 1/4 c raisin
bananas - 2 cup mashed
carrots - 2 cups shredded
cranberries - 1 bag fresh, chopped
pumpkin - 2 cups
Zucchini - 2 cups, shredded

This is for Jackie in Pensacola who wanted the tea recipe that has Tang in it. This is the recipe I use and have a friend that I give it to every year that really loves it because of the red hots.

Spiced Tea
2 cups Tang
3/4 cup instant tea
1 large pkg. lemonade
1/2 cup sugar substitute (I use Splenda)
2 teaspoons cinnamon
1 teaspoon ground cloves
1 pkg. red hots (optional)
Mix thoroughly. Store in jar. Add 2 heaping teaspoons in a cup of boiling water.

Seems it was fairly low in carbs ( based on the nutritionals I found online ) so I am assuming just spinach, Parmesan, some milk or cream, spices??

Cream together 1/2 cup Each butter, peanut bUtter, granulated sugar and brown sugar (packed in cup to measure). Beat in one egg and 1 tsp vanilla. Add 1

cup flour and rounded half cup of oats. Stir in 1/2 cup chocolate chips or Reese's peanut butter pieces, and 1/2 cup chopped peanuts (optional)

Drop by teaspoonfuls onto cookie sheets and bake at 375 12 to 15 minutes. About 36 cookies.

This is a great recipe from Tona that I will be serving for our Christmas Eve dinner. Other suggestions for your dinner would be various lasagnas, such as traditional lasagna, chicken lasagna, crab lasagna and vegetable lasagna. I also have a great recipe for Angel Hair Toss that I will send later in the week, if others do not submit a similar recipe. You could have a variety of salads, such as the 7 layer salad, broccoli salad, Pea Salad, the always popular grape salad and a fresh spinach salad. For dessert you could serve mini cheesecakes; recipes for all of these dishes have appeared in the past year, but if you need the readers to resubmit them, just let us know. This recipe and my suggestions may also work for Trish in Fl 11/5/08 newsletter who is helping plan a20 year anniversary party. Other ideas for Trish are to have a taco bar.

Baked ZitiTonalasagna
1 lb. dry ziti pasta
1 onion, chopped
1 lb. lean ground bee for sausage
2 (26 oz.) jars spaghetti sauce
6 oz. provolone cheese, sliced
1-1/2 cups sour cream
6 oz. mozzarella cheese, shredded
2 Tbs. grated Parmesan cheese

Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes. Heat the oven to 350. Butter a 9x13 baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.

Bake for 30 minutes in the preheated oven, or until cheeses are melted. Serves 6. I have used both low fat sour cream and low fat cheeses in this recipe.


These will not last long as they are addictive. Enjoy !!!!!

Carnival Fritters
2 1/4 cups flour
2 tablespoons sweet butter
1/3 cup confectioners sugar
2 eggs
1 tablespoon brandy
A pinch of salt
More confectioner's sugar for dusting

Combine all ingredients to make a fairly stiff dough, kneading it thoroughly, and adding more flour if it comes out too soft. It should be fairly stiff.
Flour it and let it rest, covered, for about an hour.
Then roll it out into an eighth-of-an-inch-thick sheet, and use a serrated pastry wheel to cut it into strips (or a sharp knife) as long as your palm and about two fingers wide.

Deep fry them. Cool and dust them with confectioners sugar.
Should the dough have formed a crust while it sat, knead it again before you roll it out.

These flavorful raisin cookies are always on hand at my house for when guests stop by. Although they are great for a quick mid-day snack, they are also delicious for breakfast with a cup of coffee/tea/hot cocoa for dipping.

Raisin Breakfast Cookie
In a bowl place and set aside for 20 minutes:
1 cup boiling water
1 cup raisins (OR dried dates, figs or apricots)

Add to raisin mixture the following and combine:
1 cup shortening
3 eggs beaten
1 cup sugar
1 1/2 tsp cinnamon
3 1/2 cups flour
1 tbsp baking powder

Drop by tablespoon (or small ice cream scoop) onto greased cookie sheet. Leave a little space for them to settle.
Bake 350 until golden on the bottom.
Serve plain or dusted with powdered sugar.

When making the Pistachio Cookie recipe from this weeks newsletter (forgot date) I would suggest that when mixing the ingredients for this cookie you do it in a bowl with the help of a hand mixer.

I made the mistake of using my trusty food processor and the results were a product that would not firm up. After refrigerating it for 24 hours I decided to add more flour to help it along and did manage to salvage it. However, I am sure it did not give the original recipe any competition. I am going to give it another try using Coconut Cream instant pudding and a bowl and beater next time.

Russian Friendship Tea Mix
A nice way to present this tea is to fill a zip-plastic baggie with some of the tea mix and place in a gift mug.

1 1/2 cups sugar (or less, to taste)
2 cups instant Tang orange drink
1/2 cup sweetened iced tea mix powder
1 envelope unsweetened lemonade mix
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon ground cloves

Combine all ingredients well and store in an airtight container. To use, fill a mug with boiling water and stir in 2-3 teaspoons of mix, to taste. If all you can find is presweetened lemonade, then use the amount of dry mix needed for a 2 quart pitcher according to the package instructions and leave out the sugar.

Trish---Grooms Cake---I went to a wedding where they had a grooms cake of boat and a fisherman. If the groom is into some kind of sport or hobbie you can use that as a theme for the cake. Or you can just make the cake the size of a box and decorate it as the front of a tux.

Italian Dishes---For an easy Lasagna I use ravioli instead of my pasta and cheese. This is a fast way to make your lasagna. You just use the ravioli, meat sauce, mozzarella cheese and keep layering it. When your making sooooo much this will save you lots of time. Another Italian dish you can make is Italian Sausage with green peppers with Italian bread. Have beef too then your guest can make either, sausage, beef or combo sandwiches. You can also, make chicken parmesan another easy dish. All these can be made a day or two before and you'll just have to heat. For dessert you could serve cannoli or make a cannoli cake. Hope this helps.

I tried to find a copycat recipe for the Bugaboo soup Diana was hoping for, but only found the Bugaboo menu. But, because it called the soup a Canadian soup, I kept looking and found this site from the Canadian government with an Onion & Ale soup recipe. It calls for Cheddar cheese instead of Swiss, but that's easily resolved by using Swiss. It may not be exactly the same, but it's probably close. The hard part, I think, would be knowing which ale was used since they each have distinct flavors.

Pineapple Pie
20 oz can crushed Pineapple
1 1/2 cup sugar
1/3 cup flour
1/2 teas. Cinnamon

Mix dry ingredients well & add to the pineapple. Let stand while making the crust. Pour into unbaked crust & top with another crust. Bake 375 oven for 1 hour.

A groom's cake was meant to symbol "go forth and be fruitful" . One of the best I have seen was a chocolate cake baked in a basket design with fresh strawberries piled on top to look like a full basket of berries. Also, it could be anything pertaining to his work or hobbies.

Pistachio Cream Cheese Fingers
1 cup butter - softened
1 cup white sugar
1 (8 oz) pkg cream cheese, softened
1 egg
1 teasp. vanilla extract
2 1/4 cups all purpose flour
1 (3 oz) pkg. instant pistachio pudding mix
1 teasp. baking powder
1/2 teasp. salt

In a large bowl, cream together the butter, sugar and cream cheese until light and fluffy. Beat in the egg and vanilla. Combine the flour, dry pudding mix, baking powder and salt; stir into the creamed mixture. Cover dough, and refrigerate for at least one hour for easier handling.

Preheat oven to 350 degrees F. Grease cookie sheets. Shape teaspoonfuls of dough into finger shapes, about 1 1/2 inches long.

Bake for 9 to 12 minutes in the preheated oven, or until set and very lightly browned on bottoms. Cool completely on a wire rack.

I usually melt some chocolate disks in the microwave - dip tines of fork into melted chocolate and drizzle over the cookies.

For Betty in ME. She needed recipes for a large group for breakfast. I typed in Breakfast Casserole and it brought up lots of sites. I clicked on About.com and it brought up lots of recipes. She might check that out. Also, I use to do breakfast for a large group and what I found most helpful was. I cooked different kinds of sausages and when they were done put them in my crock pot. I then added heated apple juice and just a touch of cinnamon and poured over them and turned on low. The apple juice added a wonderful flavor, keep them nice and warm and I could cook them a few hours before breakfast.

For spaghetti and meatballs, I learned how to fix the meatballs in the most unusual way, when you make your meatballs, add Raisins and Pine Nuts to the mixture. They turn out wonderfully! I never would have tried it if it hadn't been for my husbands Italian grandmother! Hope you try it, it really is great!

I love hearing about Ditto's antics, everyone loves your feline stories. Do you have any plans to rescue another cat. It is becoming very expensive to adopt a cat in Scotland, even if you do manage to pass all the tests and get on the waiting list.

Our Charly is on the sleeping in the suitcase kick again. She made such a fuss last night when the spare bedroom door was closed. She let us know in no uncertain terms that she wanted to sleep in the suitcase. We weren't going to get a wink of sleep if we didn't let her have her own way. We leave all the doors just pushed to so she can come and go as she wishes. It's quite amusing when the space isn't enough to let her in, the paw comes round the edge of the door and she pulls it open. I keep on telling her that it's a good job she has a lovely face, because she wasn't first in the queue when the brains were being handed out. Our last cat Gnasher was sometimes too clever for her own good. She lived for 16 years and as ex-breeders and trainers of Dobermanns she had to hold her own. All our dogs were terrified of her and wouldn't pass her, she ruled the roost. Whereas Charly disappears whenever any dogs visit. Chris and his family are coming for Christmas dinner on the condition that their two unruly dogs stay at home. I love all animals, but these two young dogs would not only ruin Charly's Christmas, but ours as well. We still have 4 centrally heated dog kennels, but as the dogs aren't used to kennels, it wouldn't be fair and we would feel guilty at the commotion they would make.

Changing the subject - Regarding making Cranberry jellies, jams and conserves, do be very careful, they have a habit of trying to jump out of the pan on bursting, use an extra deep pan and splash guard just to be safe.

Dear Nancy and Friends,
Just a quick note on the Shingles topic. A small article in one of my magazines stated if you are over 60 and have had Chicken Pox, it is important for you to receive the Shingles Vaccination. I was just at doctor's office and she said, Yes, for sure. She is treating a woman with Shingles in her eyes and I told her I knew a woman who had the same type and that was why I definitely wanted that shot. It is not 100% effective, but even at 50%, worth a try. Insurance doesn't pay for it, around $230. If you are near a county health office, the nurse told me it was $10.00. These are Michigan prices and I don't know about other states. As we age our auto-immune systems weaken and that is when Shingles usually strikes. It is very common in nursing homes, my poor Mother had them on her neck. I ask you to print this Nancy, as a public service to our "family" and let them be the judge after speaking to their physicians.

Strawberry Pretzel Salad

2 cups pretzel, crushed
3/4 cup margarine, melted
3 teaspoons sugar
1 (8 oz) cream cheese
1 cup sugar
1 medium container cool whip
2 (3 oz) boxes strawberry Jell-O
2 cups boiling water
2 (10 oz) boxes frozen strawberries

Mix together pretzel, 3 teaspoons sugar and 3/4 cup margarine; pat in bottom of 9X13 inch pan to make a crust. Bake at 400º for 8 minutes. Mix cream cheese, sugar and cool whip together. Spread on pretzel mixture. Dissolve Jell-O in boiling water and add strawberries; let stand 10 minutes. Spoon on top of cream cheese mixture and refrigerate until firm. Cut in squares to serve. If using as a salad, I place on a lettuce leaf, as dessert just on a dessert plate. I normally make mine the night before serving.

This Italian favorite was shared with me by a longtime friend. It's one of our favorites, enjoy!

Caesar Salad
Good Season's Italian Salad dressing mix. Prepare according to directions. (I get Gourmet Caesar if I can find it).

Add 3/4 cup mayonnaise and 1/2 of a tub of Grated Parmesan Cheese.

Mix well, store in refrig. while preparing salad greens:

1 head torn up Romaine
1/2 head iceberg lettuce
1 small purple onion sliced thin

Add 2 chopped, boiled eggs to the dressing

Pour dressing over greens, add one box Caesar Croutons. Mix well.

When I'm serving a small crowd or the two of us, I mix only what we will eat w/ the dressing and croutons. It will not last long once everything is mixed, but keeps for a day with everything stored separately.

I wish I could remember who it was that sent me the names of the stores here in Canada that were carrying the GT Xpress 101. But a huge that you. Yes I have found one at the St. Laurent Center in Ottawa and the women whom I have been talking to is sending me one out on Wednesday. I have one more question about this machine how is it the only machine some of you use? There is only myself and hubby at home now and I jujst can't understand how this machine is good for everything. I hope someone can answer this for me.
