Ina, here is
Meatloaf Recipe
1-1/2 pounds ground beef
1 cup fresh bread crumbs
1 onion, diced
1 egg, lightly beaten
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 (8-ounce) cans tomato sauce
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
1/2 cup water, to thin sauce if necessary
Preheat oven to 350 degrees F.
Mix together the beef, bread crumbs, onion, egg, salt, pepper, and 1/2 cup
of the tomato sauce. Form this mixture into a loaf and place it in a
shallow pan. Stir together the remaining tomato sauce, vinegar, sugar,
mustard, Worcestershire and the water (if too thick). Pour this sauce over
the meatloaf. Bake for 1 hour, basting every 15 minutes with the pan
juices.
Cook's Note: Try serving as a sandwich with mayonnaise

Nancy I hope that your hand is feeling much better by now. I do know
hard it is to use because years ago I lost the use of my left hand for
about 10 days. Yes, I am left hand for eating and writing but can use both
hands for everything else. We have been on the road and are back home for
some weeks. Didn't have my laptop with us this time or we had to pay large
amount of money per day to use the room Internet hook up. California cost
are so high and we needed to kept the cost down because with the cost for
a few trips.
I don't have the name of the person or date wanting to know if with a 6
quart crock pot if she could make Tona in Bama Crock pot Spaghetti Sauce
you could use as is or the recipe and quart to half.
in the 1/30 newsletter from Nancy in Upstate NY asking about the Four Tins
and a Tub. You drain the 4 tins.
From the 2/10 newsletter from Doris, S. Indiana you could take beef
vegetable soup with crackers, cheese or a sandwich and fruit. Or another
meal could be pot roast, with fruit. Another one meat loaf, baked
potatoes, and salad with dressing. Then this person would have meat for
sandwiches. Swiss steak, with some potatoes, fruit.
I have a question for Gina in Indiana about her Mexican Chicken that was
in the 2/15 newsletter letter. Do you top the chicken or rice with the
salsa and sour cream? Do you put the rice and then put the chicken on top
then add the salsa and sour cream?
To Bette Indiana you are welcome. That is a chocolatic greatest fix. So
glad that it worked out great for you.

I enjoy receiving your newsletter each day. I wanted to reply to Jenny in
Kentucky about slicing bananas, spreading with miracle whip and
placing crushed nuts on top, which I call banana salad. I have enjoyed
this recipe since I was a little girl and has been many, many years ago.
Each May we have what we call "Decoration Day" at my church, which has a
cemetery, where we decorate the graves. We always have dinner at an
outside pavilion. It has been tradition that I bring the banana salad.
Everyone comes to my table wanting the banana salad and it is always the
first bowl empty. I am glad to know that other people also enjoy this
dish. I guess it is a southern dish. Thanks for the many recipes I receive
each day. Everytime I have too many emails and have to delete, I always
save your newsletter and delete the other emails.

Dear Nancy, Here is a wonderful "Garlic Salad
Dressing" for Barb, from the Catch-Up
Newsletter #9. I promise, it is the BEST I have ever had, very easy to
make, and tried and true. Cooking the onion and garlic in this recipe
takes away the very strong flavor, and the sugar is NOT overly sweet in
this at all !! This salad dressing is FABULOUS , great on some crisp
iceberg with, sliced red onion, cucumber, cherry tomatoes, and garlic
croutons !!!

CREAMY GARLIC DRESSING
1/4 cup red wine vinegar
1/4 cup water
2 TBS. minced fresh onion (I grate mine on a box grater)
3 to 4 cloves minced, fresh garlic
1/4 to 1/3 cup sugar (to your own taste)
1/2 cup REAL mayonnaise
1-1/2 cups sour cream
2 Tbs. Ketchup (for pretty pink color)
In a small saucepan, simmer the vinegar, water, onion, and garlic for 5
minutes. Add sugar and simmer until sugar is dissolved. Cool to room
temperature. Stir in the mayonnaise, sour cream, and ketchup. Refridgerate
for at least 2 hours before serving.

Dyersburg some. Not too long ago we went to a Chinese restaurant to eat. I
had never eaten Chinese before. I liked the teriyaki chicken and the
shrimp and onions minus the onions. It wasn't a stand along restaurant. It
was in a shopping center. Not too far from Walmart.
I do remember the pear half on a bed of lettuce with mayo and cheese. My
Mom didn't make it, but my sister would sometimes when she was visiting
me.
For the people that have bean cooking questions: All I ever do is soak
them in water all the way to the top of the bowl I put them in. Sll night.
The next day, I pick thru them, put them in my crock pot and put on high
until they start cooking then I turn the pot to low. I put a big ham hock
in with them too. It don't take long for them to cook if you soak them
over night.

For Sue in Eastland, TX: I don't remember exactly when I submitted the
recipe for Mountain Dew Dumplings (apple dumplings made with crescent
rolls), but here it is again.
MOUNTAIN DEW DUMPLINGS
2 cans crescent rolls
2-3 firm apples, peeled & cored, cut into 6 or 8 slices each
1 ½ c sugar
1 tsp cinnamon
2 sticks butter
1 12-oz can Mountain Dew
Preheat oven to 350. Place one apple slice in each triangle of dough. Roll
up large end to small. Place all rolled apple slices in 9 x !3” pan.
Melt butter in small pan, add cinnamon & sugar. Pour mixture over
dumplings, and pour Mountain Dew around dumplings. Bake 45 min.

company should pay me for being their spokesman - LOL. Seriously, I have
one and I love it. It's one of the few things I own that, if it broke
today, I'd go out tomorrow and buy a new one. One piece of advice, though,
when you buy one, order an extra battery. It's nice to have one charging
if the one you are using runs out of juice. They last a long time, but
sometimes I don't put it on the charger as often as I should.

My mom's famous meat loaf. Only way I
like it.Hope you enjoy it as much as I do.
Meat Loaf
2 lbs. ground round or ground chuck
I package Lipton dried onion soup mix
2 slices of bread cut up in small pieces
2 eggs
ketchup
Combine all ingredients and mix well. Add enough ketchup to mix all
ingredients well. Place in shallow casserole dish in desired shape approx.
2" high. Add some ketchup to top evenly. Cook in 350 degree oven for 1
hour.

I am looking for a recipe for the Apple Dessert
Pizza that you can get at the Pizza Ranch. It has such a delicious taste
and has become by all time favorite desserts. It has sweet crumbles on top
and has white icing drizzled over the crumbles, which covers the apple and
crust on the bottom. It has a unique taste, and may have some almond
flavoring in it. If anyone has a copy cat recipe for this, I would be
eternally grateful if you would share it. I would like to make it for our
Easter get together this year. Thank you so very much.

I put meat tenderizer on gizzards before I fry them. My son and husband
eat them. I do leave the tenderizer on the gizzards about two or three
hours before frying. Hope this will help.

My son bought one for me and I gave it back to him for his daughter to use
in her apt. We have a long haired dog and everytime I would use it I would
have to take the thing apart to clean the dog hair that was wound around
everything.

Nancy, This is for Angela from N Ala. in the
Feb. 14th catch up newsletter.
First of all I am a 64 yr. old female not a male. The recipe was for apple
pies not fritters there are a difference. Byron Tindle Bessemer, Ala
Diane in Pottstown, Pa asked for miniature cheese
cakes for a wedding. This is an easy recipe and the flavor can be changed
using the various extracts like vanilla, or almond or lemon. Margo/Boston
Miniature cheese cakes.
Drop a vanilla wafer flat side down into cup cake papers in cupcake pan.
Or, you can make your own crust using 2 cups graham cracker crust and a
stick of melted butter.
Filling: Blend 2 large cream cheese (16 oz total) with 2 eggs, 1 cup sugar
and 1/2 tsp vanilla (or almond or lemon) extract.
Fill cup cake papers 3/4 full and bake for 15 minutes at 350 degrees. Top
while still warm with cherry pie filling, or blueberry pie filling or
preserves with different colors or flavors
Here is a great crockpot meatloaf for the lady
asking for an easy meatloaf. It is very yummy and very easy.

Crockpot Meatloaf
2 lbs. ground beef
1 pkg. Lipton Onion Soup Mix
15 oz. can Tomato Sauce (½ can in the loaf and other ½ can on top of loaf)
2 eggs
2/3 cup oats
1 tsp. Salt
1/2 tsp Pepper
Spray crock pot lightly with Pam Spray (I use a crock pot liner for easy
cleanup). Mix above ingredients (only ½ of the tomato sauce) and form into
loaf. Place loaf in crock pot and pour remaining half can of tomato sauce
on top of loaf. Cook on low for 7 hours (you can adjust time depending on
how moist you like it).

high shipping and handling, also check with Walgreens and Bed ,Bath and
Beyond. My husband loves it too, he grabs it to vacuum things up instead
of getting out the Oreck.

Rich Cocoa Fudge

3 cups sugar
2/3 cup HERSHEY'S Cocoa or HERSHEY'S SPECIAL DARK Cocoa
1/8 teaspoon salt
1-1/2 cups milk
1/4 cup (1/2 stick) butter
1 teaspoon vanilla extract \
1. Line 8-or 9-inch square pan with foil, extending foil over edges of
pan.
Butter foil.
2. Mix sugar, cocoa and salt in heavy 4-quart saucepan; stir in milk. Cook
over medium heat, stirring constantly, until mixture comes to full rolling
boil. Boil, without stirring, until mixture reaches 234°F on candy
thermometer or until small amount of mixture dropped into very cold water,
forms a soft ball which flattens when removed from water. (Bulb of candy
thermometer should not rest on bottom of saucepan.)
3. Remove from heat. Add butter and vanilla. DO NOT STIR. Cool at room
temperature to 110°F (lukewarm). Beat with wooden spoon until fudge
thickens and just begins to lose some of its gloss. Quickly spread into
prepared pan; cool completely. Cut into squares. Store in tightly covered
container at
room temperature. About 36 pieces or 1-3/4 pounds.
NOTE: For best results, do not double this recipe.
VARIATIONS:
NUTTY RICH COCOA FUDGE: Beat cooked fudge as directed. Immediately stir in
1 cup chopped almonds, pecans or walnuts and spread quickly into prepared
pan.
MARSHMALLOW-NUT COCOA FUDGE: I
ncrease cocoa to 3/4 cup. Cook fudge as directed. Add 1 cup marshmallow
creme with butter and vanilla. DO NOT STIR. Cool to 110°F (lukewarm). Beat
8 minutes; stir in 1 cup chopped nuts. Pour into prepared pan. (Fudge does
not set until poured into pan.)
HIGH ALTITUDE DIRECTIONS:
-- Increase milk to 1-2/3 cups
-- Use soft ball cold water test for doneness OR Test and read thermometer
in boiling water, subtract difference from 212°F. Then subtract that
number from 234°F. This is the soft ball temperature for your altitude and
thermometer.

Makes: 24 servings, 2 squares each
1 pkg. (8 squares) BAKER'S Semi-Sweet Baking Chocolate, divided
1/2 cup (1 stick) butter or margarine, divided
1/3 cup water
1 pkg. (4-serving size) JELL-O Chocolate Flavor Instant Pudding & Pie
Filling
3 cups powdered sugar
MICROWAVE 4 of the chocolate squares, 6 Tbsp. of the butter and water in
large microwavable bowl on HIGH 2 minutes or until butter is melted; stir.
Add dry pudding mix; stir until well blended. ADD powdered sugar, 1 cup at
a time, stirring until well blended after each addition. Press into
foil-lined 8-inch square pan.
MICROWAVE remaining 4 chocolate squares and 2 Tbsp. butter in large
microwavable bowl on HIGH 1-1/2 minutes or until butter is melted. Stir
until chocolate is completely melted. Spread over pudding mixture.
Refrigerate 2 hours or until firm. Cut into 48 (1-inch) squares.

Hershey's Cocoa Fudge
2/3 c. Hershey's cocoa
3 c. sugar
1/8 tsp. salt
1 1/2 c. milk
1/4 c. butter
1 tsp. vanilla
Thoroughly combine dry ingredients in a heavy 4 quart saucepan; stir in
milk. Bring to a bubbly boil on medium heat, stirring constantly. Boil
without stirring to 234 degrees (soft ball stage). Bulb of candy
thermometer should not rest on bottom of saucepan. Remove from heat add
butter and vanilla. Do not stir. Cool at room temperature to 110 degrees.
Beat until fudge thickens and loses some of its gloss. Quickly spread in a
lightly buttered 8 or 9 inch square pan. Cool. 3 dozen squares.

meatloaf. This is very easy and very good.

Easy meatloaf
1-1/2 pounds hamburger
1 can of Campbells French onion soup, don't add water
1 cup saltine cracker crumbs
1 egg
salt, pepper, parsley
Mix together hamburger, egg, salt, pepper and
parsley. Using a fork, remove most of the onions from the can of French
onion soup and add to mix. Pour half the remaining liquid from the soup
can into the mix. Form and place into loaf pan. Pour remaining soup liquid
mixed with half cup water over meat in pan. bake at 350 degrees for 1-/2
hours
Jena in WV asked for suggestions for removing
ink from clothing. Recently my husband had a pen leak into the pocket
of his favorite jacket. The dry cleaners refused to touch it. I tried
Clorox Oxy Magic and like magic,it all came out without a ring or change
of color to the jacket. Although it is a Clorox product, it does not
contain bleach. I tried the Clorox Oxy magic because it said it took out
ink. Oxy Clean did not list ink as something it could tackle. Hope it
works for you.

in the February 17th newsletter I live in Obion,Tn, which is about 45 to
50 miles from Milan. I hope you enjoy the banana salad recipe. I buy
bananas that are not too ripe, but that is just me choice.

Hello Nancy and all you Nancylanders
I need some input. I'm planning a baby shower for my daughter. My first
grandbaby and I'm so excited. I need some ideas for food. It will be in
mid April. Maybe a buffet idea. It will be mostly young women. I love to
cook so I wont have it catered if i can help it, well at least most of it.
Guys I guess come at the end of shower to eat these days and load the car
. I have rented a small hall. I also would like input on cake or cupcakes
or an easy cute cake to do. We will be expecting around 30-40 people.
Any ideas would be very much appreciated

Barrels Broccoli Chicken, but this is another similar, favorite recipe I
double for my large family! I usually serve this with whatever
canned/fresh fruit we have on hand and bread and butter. Yum. I love
recipes that are easy but so good, this fits the bill!

Broccoli & Chicken Bake
4 large chicken breasts
1 bag of frozen broccoli
2 cans cream of chicken soup
1/2 cup mayo
1/2 cup sour cream
8 oz. cheddar cheese
2 packages of Ritz or Townhouse Crackers
Boil Chicken until completely cooked. Cook Broccoli according to package
directions. Drain. In a large bowl, combine mayo, cream of chicken and
sour cream. Grease large baking dish with butter. Layer ingredients. Put
Broccoli in bottom of dish. Sprinkle cheese on top of broccoli. Dice or
shred chicken and layer on top of cheese. Pour mixture from bowl on top of
chicken. Crumble crackers and sprinkle over mixture. Melt 1/2 stick of
butter and drizzle over crackers. Bake at 350 for 20-30 min. until
crackers have browned and casserole is warm throughout. Enjoy!

Cake in a Coffee Cup
1 cake mix any flavor (you can use S/F)
1 (4 serving size) instant pudding mix (can use sugar free), any flavor
Place dry cake mix and dry pudding mix into a large bowl and blend well
with a whisk. This will be about 4 * 4 ½ cups dry mix and will make 8-9
coffee cup cake mixes. Place ½ cup dry mix into a sandwich bag. Place mix
into a corner of the bag and tie it there with a twist tie. Continue
making packets until all your dry mix is used.
Flavors
Lemon cake mix- lemon pudding
Yellow cake mix- chocolate pudding
Devils food cake mix- chocolate pudding
Pineapple cake mix- coconut pudding
Butterscotch cake mix- butterscotch pudding
Select a large coffee cup. Check it to be sure it holds 1 ½ cups of water.
That way you will be sure you have bought the size the recipe calls for.
It can't have any metallic paint on it because it will be used in the
microwave. Places like Wal-Mart and craft stores sell plain cups.
Decorating the cups
Paint on the cup if you like. DecoArt Ultra Gloss Acrylic Enamel is one
brand of craft paint that can be made dishwasher safe by baking the
painted cup in the oven. (instructions are on the bottle of paint
usually).
Glaze mix
1/3 cup powdered sugar
1 ½ tsp dry flavoring (such as powdered lemonade mix, powdered orange
breakfast drink mix, cocoa powder)
Vanilla powder sold by coffee flavorings
Select the flavoring appropriate to the cake you are making. For the
pineapple coconut cake include flaked coconut in a separate bag with
instructions to sprinkle it over the frosted cake. Place the glaze mix
ingredients into a sandwich bag and tie into corner of bag. Label this bag
"glaze mix" and attach it to the other bag with a twist tie.
Place one baggie cake mix and one baggie glaze mix in each coffee cup. Now
attach the following baking instructions to each coffee cup.
Bake a cake in a coffee cup
Generously spray inside of coffee cup with cooking spray. Empty contents
of large packet into cup. Add 1 egg white, 1 tbsp oil, 1 tbsp water to dry
mix. Mix 15 seconds, carefully mixing in all the dry mix. Microwave on
full power 2 minutes. (you may not get satisfactory results in a low
wattage small microwave). While cake is cooking, place ingredients from
"Glaze Mix" into a very small container and add 1½ tsp water. Mix well.
When cake is done, pour glaze over cake in cup. Enjoy while warm.
