My favorite easy crock pot
recipes
CROCKPOT CHEESE DIP
1 lb. ground beef
1 pkg. taco seasoning mix
1 lb. Velveeta cheese
1 jar med. or hot picante sauce
1 can Mexican refried beans
Tortilla chips
Cube Velveeta cheese and place in crockpot. Heat on medium to start. Brown
ground beef and drain off fat. Add taco seasoning and 1/2 cup water. Simmer for
10 to 15 minutes, until water is cooked down. Add refried beans. Add meat
mixture to cheese in crock pot. Add picante sauce last. Cook on high until
cheese is melted. Mix well. Reduce heat and cook about 30 minutes. Serve hot or
cold (best hot) with tortilla chips.
CROCKPOT BEEF STEW
1 lb. stew beef cubes
4-6 carrots, cut up
10-12 pearl onions
4-6 potatoes, cut in cubes
2 cloves garlic
1/2 c. red wine
1 tsp. Worcestershire
2 tsp. soy sauce
Brown stew beef cubes (you can coat in flour); after browned, put in crock pot.
Deglaze pan with 1/2 cup red wine and pour into crock pot with beef cubes. Add
cut up carrots, onions and garlic and potatoes along with Worcestershire sauce
and soy sauce. Cook on high for 3-4 hours in crockpot. Add water as necessary
(salt and pepper to taste). Serves 6-8.
CROCKPOT CHILI
2 (15 oz.) cans tomato sauce
2 tbsp. dry minced onion
1 pkg. taco seasoning mix
1 c. pre-cooked ground beef
1 (15 oz.) can pinto beans, drained
or 1 1/2 c. home-cooked pinto beans
Mix all of the ingredients in crock pot. Cook on low for 6-8 hours.
CROCKPOT STUFFING
2 c. chopped onion
2 c. chopped celery
1/4 c. dried parsley
1 c. margarine
1 (14 oz.) pkg. seasoned stuffing
2 (4 oz.) cans mushrooms
1 can cream of mushroom soup
1 can cream of celery soup
2 beaten eggs
3-3 1/2 c. chicken broth
Sauté onion, celery, parsley and butter. In a large bowl put stuffing, mushrooms
and sautéed onion, celery and parsley. Combine mushroom and celery soups, eggs
and chicken broth. Mix everything together. Put in a 3 1/2 quart crock pot. Cook
on high for 45 minutes. Then on low for 4-8 hours. Serves 10-12.
CROCKPOT SPANISH CHICKEN
3 to 4 lb. chicken, cut up
1/2 can beer
6 oz. can tomato paste
1 sm. jar stuffed olives with liquid
Salt, pepper, paprika, garlic salt to taste
Season cut up chicken with salt, pepper, paprika, and garlic salt. Place in
crockpot. Mix tomato paste and beer together (the cook may have the remainder)
and pour over the chicken. Add olives. Cover and cook on low for 7 to 9 hours.
Serve over rice or noodles.
CROCKPOT BEEF STEW
2 lbs. beef stew meat, cut into 1 inch pieces
1/4 c. flour
1/2 tsp. pepper
1 tsp. Worcestershire sauce
1 bay leaf
3 potatoes, diced
1 stalk celery, sliced
1 1/2 tsp. salt
1 1/2 c. beef broth
1 clove garlic
1 tsp. paprika
2 onions, chopped
Place meat in crock pot. Mix flour, salt, pepper and pour over meat. Stir to
coat meat with flour. Add remaining ingredients and stir to mix well. Cover and
cook on low for 10 to 12 hours or high for 4 to 6 hours. Stir stew thoroughly
before serving.
CROCKPOT ROAST
3 lbs. chuck roast
1 can French onion soup
1 can cream of mushroom soup
3 carrots, sliced
4 potatoes, cut in thick slices
Salt and pepper
Put potatoes on bottom and roast on top. Cook 4 hours on high or low all day.
CROCKPOT COLA BARBECUE CHICKEN
1 lg. whole chicken, uncooked
1 lg. bottle BBQ sauce (or your
own if you prefer)
1 med. onion
1 lemon
1 (10 oz.) coke
Place chicken in crockpot. Pour the sauce over the chicken. Slice the onion and
lemon; pour the coke in the crockpot. Set on low and cook overnight. Try this
with spareribs instead of chicken also.
