Recipes Cocoa Bundt
Cake Recipe
1-2/3 c. flour
1-1/2 c. sugar
1/2 c. cocoa
1/2 tsp. baking powder
1-1/2 tsp. baking soda
1-1/2 c. buttermilk or sour milk
2 eggs
1/2 c. shortening
1 tsp. Salt
1 tsp. Vanilla
Chocolate Glaze (recipe follows)
Heat oven to 350 degrees. Grease and flour 12 cup bundt pan. In large mixer
bowl blend flour, sugar, cocoa, baking soda, baking powder and salt; add
remaining ingredients except chocolate glaze. Beat on low speed 1 minute,
scraping bowl constantly. Beat on high speed 3 minutes. Pour into prepared
bundt pan. Bake 50-55 minutes or until toothpick test comes out clean. Cool
10 minutes. Remove from pan. Cool completely. Drizzle with glaze.
GLAZE
In small saucepan bring 1/4 cup powdered sugar and 1/4 cup water to rolling
boil, stirring until sugar is dissolved. Remove from heat and stir in 1 cup
chocolate chips until smooth. Cool slightly and drizzle.
Lemon Buttermilk Bundt Cake
Recipe
2 1/2 c. sifted flour
2 1/2 c. sugar
1 c. buttermilk
3 sticks margarine, softened
1/4 tsp. baking soda
3 tbsp. lemon extract
4 eggs
1 tbsp. warm water
Preheat oven to 325 degrees. Grease and flour a 10" tube or bundt pan. Cream
butter, sugar and eggs together. Gradually add one cup of flour. In a
separate bowl, combine buttermilk, baking soda and warm water. Add one-half
of buttermilk mixture to flour mixture. Mix well. Add the remaining flour,
buttermilk mixture and lemon extract and mix well. Bake for one hour or
until toothpick inserted in center comes out clean.
LEMON ICING
Juice of 2 lemons
1 c. powdered sugar
Mix lemon juice and powdered sugar together until smooth. Pour over the cake
while the cake is still warm.
Banana Bundt Cake
Recipe
1/2 c. shortening
1 c. sugar
1 egg
Cream and add: 1/2 tsp. Vanilla
1/3 c. sour cream
1 c. ripe bananas, mashed
1 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
Bake in muffin tins 30 minutes at 350 degrees or double recipe and bake in
bundt pan. Very good.
Southern Praline
Pecan Cake
1 (18.25 ounce) box butter pecan cake mix
1 (16 ounce) package coconut pecan frosting
4 eggs
3/4 cup vegetable oil
1 cup water
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Spray a 9 or 10 inch
Bundt pan with non-stick cooking spray. Combine the cake mix with the,
frosting, eggs, oil, water and 1/2 of
the pecan pieces. Mix until combined. Sprinkle the remaining 1/2 of pecans
in the prepared Bundt pan then pour in the cake batter. Bake at 350 degrees
F (175 degrees C) for 50 minutes or until a toothpick comes out clean. Makes
1 -9 or 10 inch bundt cake.

Berry Bundt Cake
Here's one my granny gave me.....
Berry Bundt Cake
2 cups flour
1 tbsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup sugar
3/4 cup buttermilk
1/2 cup egg beaters
1/4 cup vegetable oil
2 cups frozen unsweetened raspberries
2 cups frozen unsweetened blueberries
Procedure
Preheat oven to 350 degrees. Spray a 6-cup bundt pan with Pam. set aside.
Combine flour, baking powder, baking soda,& salt in a large bowl. Combine
sugar, buttermilk, egg beaters,& oil in a med bowl. Add sugar mixture to
flour mixture; stir just til moistened.
Fold in raspberries & blueberries. Pour batter into prepared pan. bake 1
hour or until a toothpick inserted near the center comes out clean. Cool in
pan on a rack.. Serve with fresh berries & whipped cream if desired.
Makes 12 servings
