As Nedra confirms,
putting a slice of bread in the cookie jar will keep the
cookies moist.
You can also put a slice of bread in the canister with your
brown sugar and it will soften. The moisture from the bread
will make brick-hard brown sugar soft again.

Thanks to Bob in
Adelaide for confirming the Aussie hamburger fixings. We had
tried these before your response and who knew? Burgers with
pineapple and beets are terrific. We use both and it
reminded me of the sweet-tangy mix you get when you add
barbecue sauce to a burger. This “summer salute” to the
burger has been a lot of fun. On to veggie burger stacks.
LOL. Again thanks.
For Dorry wanting a hummus recipe (7/13, page 2), we just
ran a hummus recipe in Fizzy Meals this week, part of a
hummus club sandwich. I am picky about hummus, want it
smooth “enough” and rich, but not oily. This version has
become a refrigerator staple around here.
Quick Hummus
Makes 1-1/3 cups
1 (15 oz) can chickpeas (garbanzo beans)
3 Tbsp plain, fat-free yogurt
1 Tbsp fresh lemon juice (about ˝ medium lemon)
1 Tbsp tahini (sesame paste) (See note.)
1/2 tsp cumin
1/4 tsp salt
2 tsp garlic, minced
Drain the chickpeas, reserving 2 Tbsp liquid. Combine the
chickpeas, reserved liquid, and remaining ingredients in a
food processor bowl. Process until smooth, just a little
thinner than peanut butter. (Be careful not to liquefy.)
Refrigerate.
Note: You can substitute 1 Tbsp sesame seeds and 1 tsp olive
oil for the tahini. Pulse the seeds in the food processor
first then add the oil and process before adding the other
ingredients.
Per 1 Tbsp, approximately 23 calories; .7 g. fat; 3.2 g.
carbohydrates; .5 g. sugars; 1.5 g. fiber; 136 mg. sodium;
2.1 g. protein

Help, please. I
understand there is a way to cook pasta ahead of the time
you want to use it, and then quickly re-heat it to serve
later. Bet one or more of y'all will know how to do this,
and about how long it takes. Thanks in advance.

Hi everyone .. I need
recipes for large families. I
have been trying to adapt the great recipes on here. Besides
my own 4 children, I have become the "proud parent" of 2
wonderful foster daughters. All the children are 12-17 ...
SO .. you know what that means. You can't keep enough food
in your house!! LOL Any large family friendly recipes will
be greatly appreciated. I'm running out of ideas.

Many Thanks to Dawn in
MN and to Lisa for the Oatmeal Creme
Cookie recipe. We're in the middle of a three day
stretch of wet weather and my four kids are stir crazy which
in turn makes me crazy. So we made a double batch of the
cookies yesterday afternoon. Spreading the cream on kept the
kids busy a good long while. The results are delicious. A
keeper recipe for rainy days!

Good morning to everyone
in Nancyland..
I have 2 questions. First someone wrote in the best potato
salad. Was it Sam's Club or Costco??
What are the uses for the micro fiber miracle cloth? Thank
you, Candy
To Cindy,
You were looking for a bar cookie that had a cake mix crust
with nuts on top. I got this one off a Pillsbury cake mix
box about five years ago, and it is now one of my favorite
treats. I hope this is the one you want. I know it calls for
peanut butter chips, but I don't see why you can't
substitute the butterscotch ones.

Salted Peanut Chews
CRUST
1 (18.25 oz.) package Pillsbury Moist Supreme cake mix
1/3 cup butter, softened
1 egg
3 cups miniature marshmallows
TOPPING
2/3 cup corn syrup
1/4 cup butter
2 teaspoons vanilla
1 (10 oz.) package peanut butter chips
2 cups crisp rice cereal
2 cups salted Virginia peanuts
Heat oven to 350°F. In large bowl, combine cake mix, 1/3 cup
butter and egg. Beat at low speed until crumbly. Press
mixture into bottom of an ungreased 9x13 baking pan.
Bake at 350°F for 12 to 18 minutes or until light golden
brown. Remove from oven and while still hot, sprinkle with
marshmallows. Return to oven and bake an additional 1 or 2
minutes until the marshmallows just begin to puff. Remove
from oven and cool.
Next, combine corn syrup, butter, vanilla, and peanut butter
chips in a large saucepan. Heat just until the chips are
melted and the mixture is smooth, stirring constantly.
Remove from heat and stir in cereal and peanuts. Pour still
warm topping over crust, and spread to cover. Refrigerate 1
hour.
Cut into bars. Store in covered containers.
Hi, Nancy and the furry
crew. I haven't tried this recipe, but I recalled someone
asking for something that sounded like this. I hope this is
it. (I don't know where I found the recipe: I find recipes
and articles after I've taken my sleep medication...and
discover things the next morning and have no recollection
where/how I found them!)
Crunchy Scotchie Fudge
6 ounces Nestle's butterscotch flavored morsels
1 pkg (6 ounces) semi-sweet real chocolate morsels
1/2 cup sifted confectioner's sugar
2 Tblsp. butter or margarine
1/2 cup peanut butter
4 cups Rice Krispies cereal
1 Tblsp. water
In large pan, melt butterscotch morsels and peanut butter
over low heat; stir constantly till smooth. Press half the
mixture into buttered 8x8x2" pan. Chill. Set remaining
mixture aside. In double boiler, melt semi-sweet chocolate
morsels, sugar, margarine, and water; stir constantly till
smooth. Spread over chilled mixture. Spread remaining cereal
mixture evenly over top. Press in gently. Chill till firm
(about 1 hour). Makes 25 squares (about 1.5x1.5" square).
