How to print out only part of the newsletter
1. Drag the mouse over text (with the left mouse
button pressed.) It will highlight the part of the
newsletter you wish to print.
2. While the text is highlighted Press the Ctrl Key
and the P Key at the same time.
3. Under the print range change it from ALL to SELECTION.
4. This will only print out the section you have highlighted
and not the entire page.

Bacon Wrapped Smokies
Cut bacon slices in thirds. Wrap around cocktail wieners or
"smokies". Layer in bread pan or cake pan. Top generously
with brown sugar. Let sit at room temperature 4 hours. Bake
at 350 for 45 to 60 minutes.

recipe for me for carnitas I just wanted to say Thank You
very much, I really appreciate it. I want to ask a question
to all you nancy-landers out there: Does any one know where
I could get Omega-3 Fish Oil softgels and Flaxseed oil
softgels in a lower dose than 1000MG? Nancy I love your
newsletter, thanks for all the hard work you do! Hope you

I believe in July 5th
someone wanted to know what to do with
canned corned beef.You can do a couple of different
thing with it, all very good.
Rinse off and then chop up and add onion, sweet relish and
mayo to make a great sandwich. If you want it hot, put in on
a bun with a slice of cheese and then under your broiler.
Slice and add to chopped cabbage with a little onion in a
skillet and after the cabbage is cooked, add a dollop of
sour cream and a little paprika stirred into the cabbage.
1 cup instant mashed potato flakes
3 tablespoons dry onion or fresh
some black pepper
12 oz can corned beef ( rinsed )
a small amount of water to bind it or use an egg
oil or shortening for frying
In a medium bowl combine the potato flakes, onion and black
pepper. Add the water and the corned beef. Using your hands,
mash this mixture all together until it has the consistency
of meatloaf. Divide the mixture into 4 to 6 patties. Fry in
hot fat until browned and crusty on one side, then flip and
brown the other side
Makes a great sandwich, but could go with different side for
a meal. It is also good in a macaroni salad of your choice.

Hi Nancy,
This is Susan from Beavercreek, Ohio
to report the ending to my CD story. I finally did
get hold of someone at Think-All on the phone. Apparently
the shady dealings they are involved in are just barely
legal. She directed me to the “Terms
of Use” way down at the bottom of their pages and it
was all spelled out, even though they are never mentioned
while making the transactions. I am to send two of the
second set of CD’s back and keep the other two and there
will be no charge and they will send no more. As to the
original four, I am afraid I am stuck for the $57.81 since I
unknowingly agreed to their terms when making the deal. It
was an expensive lesson and I hope I never forget it.

Hi Nancy - This is for
Janice in Pennsylvania. This recipe I got out of a Quick
Cooking magazine in 2001.
Smoky Bacon Wraps
1 lb. sliced bacon
1 pkg. (16 oz.) miniature smoked sausage links
1 C. packed brown sugar
Cut each bacon strip in half width wise. Wrap one piece of
bacon around Each sausage. Place in a foil lined 15x10x1
baking pan. Sprinkle with brown sugar. Bake, uncovered at
400 degrees for 30-40 minutes or until bacon is crisp and
sausage is heated through.

Hi Susan with the unnamed recipe. Here is what I have done
with your recipe (keeping in mind that I haven't tried it
yet):
Susan's Piquant Bacon & Cheese Green
Salad/Nancy's Recipes for 8: Mix 1/2 - 2/3 c sugar, a
dash of garlic powder, 2 t Worcestershire sauce, 1/2 c red
wine vinegar well. Add 1 c Mazola oil; mix well again. Set
aside. Mix 8 c torn red & green leaf lettuce leaves. Add 1 c
each shredded mozzarella and provolone cheese, 1 c each
chopped red and green
onions and 1 lb. cooked, drained and crumbled bacon. Serve
with dressing on the side. Optional: add garnishes of sliced
black olives, a few sprinkles of oregano and halved
cherry/grape tomatoes.
Thank you. It sounds really good. I will try it as the
original recipe first without my options. Sounds like a
winner. Can't wait to try it!

are having a good summer. I haven't been here for over a
month as real life got in the way. I have a lot of
newsletters to catch up on.
These duck sauce recipes are for Harriet in AZ who asked for
one in the July 5th newsletter.

Duck Sauce
1 cup plum preserves
1/2 cup apricot preserves
2 tbsp honey
2/3 cup cider vinegar
1 clove garlic, minced
Mix ingredients in a saucepan; bring to a boil over medium
heat. Cook 5 minutes, stirring constantly. Store in a
sterilized jar in the refrigerator.
Sweet & Sour Duck Sauce
1 pint apricot nectar
5 tbsp sugar
1/4 cup vinegar
1/2 cup crushed pineapple
1/2 tsp salt
1/4 cup maraschino cherry juice.
Blend the above ingredients in a saucepan and bring to a
slow rolling boil. Mix 1 tablespoon cornstarch with 1
tablespoon water and stir into the sauce. Cook over low heat
until sauce is clear.

For Knitter in Illinois wanting to know what to do with
corned beef, it can be used for excellent Reuben sandwiches.
Also here is a recipe for:
Corned Beef Salad
1 pkg. lemon jello
1 1/4 cup boiling water
1 cup salad dressing (I use Miracle Whip)
1 cup celery, chopped
1 cup chopped green pepper
1 small onion, chopped
1 Tablespoon vinegar
1 can corned beef, shredded
3 hard boiled eggs, chopped
Dissolve jello in hot water. When cool, add remaining
ingredients. Refrigerate until firm - cut in squares to
serve.

Tortellini Soup
1 48-ounce can fat-free chicken broth
1 package frozen cheese tortellini
1 large can diced tomatoes with Italian seasoning, un
drained (I used 2 14.5-ounce cans)
1 package frozen chopped spinach
1 small onion, chopped
2 cloves garlic. minced
Sauté onion in a Pam-type cooking spray until translucent.
Add garlic, broth ( I used regular, not fat-free) and
tomatoes and bring to boil. Add tortellini and spinach and
cook until warmed through. Serve sprinkled with Parmesan
cheese. Serves 6 to 8.

Pennsylvania
The little smokies or hot dogs wrapped in bacon. If you just
wrap each dog with bacon (about 1/3 of a piece) and secure
with a toothpick lay out in a single layer in a jelly roll
pan and cover liberally with dark brown sugar, bake at 400
until the bacon is crisp around 10 to 15 minutes they turn
out crisp and beautify glazed.
