Here are other favorites at our house.
Charles the Cook

Golden Zucchini
8 Medium Zucchini
1/4 Cup Spanish olive oil
Salt; to taste
Freshly-ground black pepper; to taste
3 Tablespoon Fresh bread crumbs
2 Tablespoon Minced fresh parsley
3 Garlic cloves; minced

Cut zucchini in horizontal halves. Arrange zucchini halves in a roasting pan with 2 tablespoons olive oil, salt and pepper. Place the pan in a 375 degree oven and baste frequently with the oil until slightly golden. In a bowl mash together the bread crumbs, parsley and garlic. Sprinkle mixture over golden zucchini. Add additional oil to roasting pan and continue to roast, basting frequently, until golden brown. Transfer to warm serving platter and serve very hot. This recipe yields 4 to 6 servings.

JACK DANIELS BEEF JERKY
2 pound flank steak
1/2 cup soy sauce
1/2 cup Jack Daniels bourbon
1/4 cup brown sugar
1 tablespoon Liquid Smoke
1/2 cup water
4 cloves garlic
2 tablespoons fresh ground black pepper
1 teaspoon red pepper
1 teaspoon white pepper
1 teaspoon onion powder

Combine the marinade ingredients in a bowl. Place the meat in a plastic bag or shallow dish and pour the marinade over it. Marinate for about 2 days.
Stir up the mixture once in a while. Dry meat in the lowest temperature of your oven or in a food dehydrator, until flexible but stiff.

Pork Chops with Applesauce Gravy
2 cups applesauce
3 pounds pork chops
1 tablespoon minced garlic
1/2 cup all-purpose flour
1 tablespoon salt
1/8 teaspoon pepper
3 cups boiling water
1 tablespoon lemon juice

Brown chops in frying pan. Remove to 3-quart casserole. Brown the garlic in remaining fat. Add flour,
salt and pepper. Blend. Add water. Cook until mixture thickens, stirring constantly. Add applesauce
and lemon juice. Stir. Pour over chops. Bake at 425 degrees F until tender (about 1-1/2 hours).
Serves 8.

Nancy, you mentioned you had a Food Saver. I want to get one too. How do you use yours?

I use the Food Saver a lot. I cook up recipes that are from Weight Watcher magazine and Weight Watcher recipes that are in their books. I also use other recipes that have calorie, fat and fiber content to calculate the points. There are always leftovers so I cut the recipe into how many servings and food save each of the extra servings. If I can freeze it that is the first choice. If not the Food Saver helps keep everything fresh. The Food Saver has helped me keep the serving sizes down and keep my weight down.

Charles, I love the e-cookbook library too. Thank you for letting us know which recipes you have tried and liked.  Purchasing a lifetime membership e-cookbooks is the best bargain I found on the internet.  I look monthly for new recipes.  There are 1000s of recipes and over 100 cookbooks. It is hard to decide just what recipes to try. Thanks Charles, Keep your favorite recipes coming.

Nancy - with regard to WW and points. I was told you HAVE to eat all your points for the program to work. I found if I didn't eat all my points I didn't lose as much as I thought I should. Less is not better. Keep up the good work and I wish I was as good at doing the exercise. We have a pool here in our community and sorry to say I don't use it. Maybe because of you and your determination I will think differently about it.

I eat all my points each day but have found that not all points are the same. The only way I loose is to also watch the carbs in what I eat. Something that has 6 points and 48 carbs is not as good (for me) as something that has 6 points and 4 carbs. I can't eat a lot of carbs (over 40) a day and loose but if I follow the plan and keep down the carbs I loose every week. If I don't exercise the weight loss is much slower. Having muscular dystrophy I can't do a lot of exercise but find that swimming and Curves works for me.

This is for Rhonda M. in the June 10, 2006 newsletter regarding Amish Friendship Bread. I have used this recipe for years and it is really good!!

Herman Starter with Yeast
1 .25oz pkg. active dry yeast
2 1/2 cups warm water
2 tsps. sugar, brown sugar or honey
2 1/2 cups all-purpose flour

Mix yeast with 1/2 cup warm water; add sugar or honey and stir til yeast is foamy. Stir in flour and remaining water. Place in a large crock or glass jar. Cover with a damp cloth; secure cloth with a rubber band. Keep at room temperature for 5 days, stirring daily with a large wooden spoon. After 5 days, feed Herman with 1 cup flour, 1 cup milk, 3/4 cup sugar. Stir well and keep covered at room temperature under a damp cloth. Stir daily; do not add any more food til the 10th day. On the 10th day feed Herman with 1 cup flour, 1 cup milk, 3/4 sugar.

Herman is now ready to be divided and baked. Use 2 cups for the recipe included; reserve 1 cup and continue feeding on the 5th and 10th days when Herman will be ready to bake again, and give 2 cups to friends to grow.

Amish Friendship Bread
2 cups flour
1 cup sugar or 1/2 cup each white sugar and brown sugar
1 tsp. cinnamon
1 -1/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2/3 cup oil
3 eggs
2 cups Herman starter
1 tsp. vanilla extract

Preheat oven to 350. Grease two 9x5x2 loaf pans; set aside. In a large bowl, mix flour, sugar, cinnamon, baking powder, baking soda and salt. Add oil, eggs, starter and vanilla. Mix until smooth. Ladle batter into prepared pans. Bake 45-55 minutes or until bread tests done. If desired, 1 cup raisins, chopped nuts or finely chopped apple may be stirred into the batter. Makes 2 loaves.

This is off topic but my daughter wants to get a home equity loan. I always pay cash for things and do not borrow money. A while back you posted a link to information on a home equity loan. Could you please repost it. I would like to learn more about it. I think she needs to set up a budget and stick to it rather than get a loan.

SOUR DOUGH STARTER FOR AMISH
FRIENDSHIP CAKE

1 c. flour
1 c. sugar
1 c. milk

Day 1: Stir (do not refrigerate mix).
Day 2: Stir.
Day 3: Stir.
Day 4: Stir.
Day 5: Add 1 cup flour, 1 cup sugar, 1 cup milk and stir.
Day 6: Stir.
Day 7: Stir.
Day 8: Stir.
Day 9: Stir.
Day 10: Stir and again add 1 cup flour, 1 cup sugar and 1 cup milk.

AMISH FRIENDSHIP BREAD
SOURDOUGH STARTER (
Do Not Refrigerate) :
1/2 tsp. active dry yeast
1 oz. warm water
1 tbsp. sugar
1 tbsp. vinegar
1/2 tsp. salt
1 c. flour
1 c. milk (room temperature)

Dissolve yeast in warm water. Place all ingredients into a bowl and stir until mixture is creamy. Cover bowl with plastic wrap and let stand in a warm place to ferment for 2 days. It will bubble and have a sour odor. After the second day, you start your Friendship Bread. Should have 1 cup of starter.
Take your 1 cup of starter: Day 1-2-3-4 stir each day. Day 5 add 1 cup flour, 1 cup sugar and 1 cup milk. Stir well and put in a larger container. Day 6-7-8-9 stir each day. Day 10 add 1 cup flour, 1 cup sugar and 1 cup milk. Stir and put 1 cup of mixture in a container. (This is your starter for next time you want bread.) Put a lid on the container. If you have 2 friends to give a starter, take 1 cup each and put in 2 other containers with lids and pass on to friends. If you only take out 1 cup of starter, you have enough to make 4 loaves of quick bread; if the 3 cups are taken out, you have only 2 cups of starter left and that only makes 2 loaves of bread.

QUICK BREADS:
To this 2 cups of starter, add the following ingredients: 1 c. sugar 1/2 tsp. baking soda 1/4 tsp. salt 3 eggs 2 c. flour 1 1/2 tsp. baking powder 2 tsp. cinnamon
Mix together well. Pour into 2 greased loaf pans. (I spray with Pam, etc.) Bake at 350 degrees for 30 to 40 minutes. Can add nuts or sprinkle top with cinnamon-sugar mixture.

I also add chopped apples, bananas, zucchini, rhubarb, pumpkin (I add about 1/2 teaspoon cloves and 1/2 teaspoon allspice), fruit cocktail (drained), pineapple (drained) or raisins. I add 1 cup per loaf. The last time on my chopped apple, I added 1/2 teaspoon nutmeg with the cinnamon. I add the cinnamon as in the recipe above before I put the fruit in.

If you have 4 cups of starter, double this recipe. (If you take out 1 starter, you will have enough to double and have 4 loaves.)

WHITE BREAD:
Go through the procedure for 10 days. After taking out your starter to keep, you have approximately 4 cups of batter left. DO NOT ADD THE INGREDIENTS FOR QUICK BREADS.
This recipe is for 2 cups. If you have 4 cups, double this recipe.

Approximately 2 c. starter
2 c. potatoes, mashed (we use instant potatoes & mix according to instructions), add HOT
1 tsp. salt (if you put salt in the instant potatoes, do not add this)
1/3 c. oil
Flour (enough to make a soft dough)

Knead until smooth, place in bowl, cover with waxed paper and let rise. I set mine in my oven, which has a pilot light, and let rise overnight. However, this is not necessary, just let rise until double in bulk. Punch down and let rise again. Shape into 2 loaves and place in bread pan. Bake about 45 minutes at 350 degrees, or until golden brown.

I love orange sherbet ice cream. I am searching for my recipe that uses orange pop and pineapple. It was an easy recipe but I have lost it. I know it uses some sort of milk but don't remember what kind.

Here is a recipe that is tops in our family; it came from Taste of Home:

Picnic Baked Beans
3 cups dry navy beans (about 1-1/2 pounds)
4 quarts cold water, divided
1 medium onion, chopped
1 cup ketchup
1 cup packed brown sugar
2 tablespoons molasses
1 tablespoon salt
2 teaspoons dry mustard
1/4 pound bacon, cooked and crumbled

Rinse beans; place in a Dutch oven with 2 quarts water. Bring to a boil; reduce heat and simmer for 3 minutes. Remove from the heat and let stand for 1 hour. Drain and rinse. Return beans to Dutch oven with remaining water; bring to a boil. Reduce heat; simmer for 1 hour or until beans are tender. Drain, reserving cooking liquid. In the Dutch oven or a 3-qt. baking dish, combine beans, 1 cup cooking liquid, onion, ketchup, brown sugar, molasses, salt, mustard and bacon; mix well. Cover and bake at 300° for 2 to 2-1/2 hours or until beans are as thick as desired. Stir occasionally and add more of the reserved cooking liquid if needed.

Yield: 16 servings.
