This is for Darlene who asked how to keep ants out of her hummingbird feeders. I don't know if this works or not, but I read on a hummer website that if you use Vaseline on the hanger it will prevent ants from getting into the feeder---apparently they get "stuck" in the Vaseline before they reach the feeder itself. Its worth a try.

This is in response to "Judy" in Sunday's newsletter. She mentioned that her grandchildren were coming to visit in a few weeks and her hubby wanted to build some bird feeders. I don't know about "building" bird feeders, but I DO know how to make "portable" bird feeders, which the grandkids might enjoy helping with. I do this frequently and the birds FLOCK to my yard. Gather up pinecones---the bigger the better, and if you don't have pine trees in your area, you can buy pinecones at any hobby/arts and crafts store such as Hobby Lobby, Michael's, etc. Tie a long string on the pointed end of the pinecone. Spread peanut butter (I buy the cheapest kind in the biggest jar) all over the pinecone, be sure to get it "into" the crevices and spread it thickly over the outside. Pour birdseed into a large container, then carefully (I do this outside so as not to make a mess) roll the peanut butter covered pinecone all around in the birdseed until it is covered well. Tie the string onto tree branches (I also hang mine on "Shepard's hooks" I have standing in my flower beds) and watch the birds flock to their new feeders! They LOVE Vicki in Houston


Sarah in the June 11th newsletter wanted to know how to make fluffy pancakes.
There are a few things that you can do: Separate the eggs,using the yokes in the batter. Beat the whites until they are soft peaks and gently fold the whites into the batter. Don't overwork/beat the batter; there should be some lumps. Don't flip the pancakes over until the edges are dry. Flipping more the once will make the pancakes tough.
I hope these hints will help.

Hi Everyone,
I am sorry about the confusion that I caused with the Rug Shampoo recipe.

It it Clorex II (Color safe Bleach)

LIQUID TIDE ---- 1/2 CUP
CLOREX II (color safe) ---- 1/4 CUP
VINEGAR (WHITE) ---- 1/4 CUP

Add this to 1 - gallon of hot water in machine.

If you need to pre-treat some areas you can mix this in a spray bottle and
spray the area before you start.

I also use CHEAP shaving cream for pre-treating stains. Just spray the foam on the stain and tap it in the carpet with an old toothbrush. Then let the
shaving cream dry. I usually do this the night before since I have to rent a machine. That way I can just shampoo and get the machine back in a timely
manner.

Again sorry for the mix up.
We will be shampooing out our car and truck tonight and it is a really great mix. Hope you like it.

Hi, my girl friend recently had a Pampered Chef party and we had the Barbecue Chicken sandwich ring. While I loved it, my family will never eat it because of the black olives. What can I substitute in place of the one can (3.25 oz) of pitted ripe olives sliced?

Thanks to Wendy in South Jersey and Jocelyne in Quebec for their responses to my query about a User Manual for my BroilKing rotisserie. My model (I can't even find a model # on it) must be ancient because none of the websites I found, including the ones you suggested, mentioned a rotisserie. However, after I looked mine over I realized it only had one of the 'things' that you spear the chicken with to hold it onto the spit. So my BroilKing rotisserie is going to the local Goodwill store where they might possibly have one of those 'things' to complete the set of two so they can sell it. My DH is disappointed that he spent $5 on it at the Church garage sale. Oh Well...that just means he gets no Lottery ticket this week. LOL

I will not be posting for a while since we will be away. Before that time I have a hint that we could not remember when we had bought our last mattress and box springs. We brought new ones and I have put the date, like 6/06, on the label of the mattress. That way we will not have any problem knowing when we bought it. The following recipe is one that was served at our VBS Sunday night. We start our VBS on Sunday and the last night is Thursday.

Taco Soup
1 lb. ground beef, I use 90% fat free
1/2 cup onion, chopped
1, 15 oz., can Mexican style corn, drained, or use 2, 8 oz. cans
1, 15 oz., can Mexican style tomatoes, or use 2, 8 oz. cans
1, 15 oz., can Ranch style beans or 1, 15 oz., can dark kindey beans
1 pkg. taco seasoning
1 pkg. Ranch mix, optional

Toppings:
Tortilla chips, cheese, sour cream, chopped green onions or Taco Sauce

Cook ground beef and onion the last few minutes and drain the fat off. Add all ingredients and let simmer for 20 minutes or until it thickens. If it doesn't get thick enough you can add a couple of tablespoons of refined beans. You can lightly crush up Tortilla chips topped with the Taco Soup then adding cheese, sour cream, green onion chopped and taco sauce.
Enjoy.

This is a tip for keeping ants off my humming bird feeder that Darlene from Lafayette, IN (6/12/06) might try. On my feeder the hanger screws to the base. I unscrewed it and slid a film canister (from 35mm) on the rod and heavily coated it and the hook end with car grease. I have never had any problems with ants once I did that.

This is a wedding suggestion for your grandson's wedding in a week or two. If you want to spend $200 you could give them 2 sterling silver napking rings and then add each year for Christmas/birthday or whatever. and If that is too much then go to Ports 'O Call and buy them 4 or 6 or 8 shell napkin rings which are not too expensive and they will never forget what you gave them.

Hi Nancylanders, I know there were several Sweet Potato recipes posted over the past several days, but while I was sorting some of my recipes, I came across this one and it seems to be a very good one. This was evidently sent to me on my e-mail from top secret recipes, and with all the recipes I have, it got buried.

BOSTON MARKETS SWEET POTATO CASSEROLE
If you are planning to use this for entertaining, you can make everything but the streusel a day ahead so you won’t be stressed at crunch time. Just cover the filled baking dish and pop it in the fridge. Take it out a few hours before you plan to bake it so the casserole can come close to room temperature, then you simply make your streusel and pop the whole thing in the oven.

6 cups mashed sweet potatoes (5-6 potatoes-see step one)
3/4 cup dark brown sugar
1/2 cup heavy cream
1/4 cup melted butter
1/4 tsp. cinnamon
1/4 tsp salt
2 cups mini marshmallows

OATMEAL STREUSEL
1/4 cup rolled oats
2 Tbls. dark brown sugar
1 Tbls. all-purpose flour
1/8 tsp. ground cinnamon
2 Tbls. cold butter

Rub a little vegetable oil on the skin of each sweet potato and bake them in a preheated 400º oven 60-70 minutes or until they are tender.
When the potatoes are cool enough to handle, scrape out the insides and use an electric mixer on high speed to beat the potatoes until they are mashed and
smooth. Measure exactly 6 cups of the mashed sweet potato into a large bowl.

Add 3/4 cup brown sugar, heavy cream, melted butter, 1/4 tsp. cinnamon, and salt into the sweet potatoes and mix well with the beater until all the ingredients are incorporated. Pour this mixture into an 8x8” baking dish.

Preheat oven to 350º

Make the oatmeal streusel by grinding the rolled oats to a fine flour using a food processor. A blender will also work.

Combine the oat flour with 2 Tbls. brown sugar, flour, and 1/8 tsp. cinnamon in a small bowl. Cut the cold butter into the dry mixture using a pastry knife or a fork. You should have a crumbly mixture with pea-size bits. Sprinkle this oatmeal streusel over the sweet potato mixture and pop it into the oven for 70-80 minutes or until the top begins to brown slightly.

When you remove the casserole from the oven immediately spread the marshmallows over the top. Let this sit for about 10 minutes. The heat from the casserole will melt the marshmallows and then it is ready to serve.
Makes 6-8 servings.

For Rosalie, In the June 3rd newsletter there was a rhubarb relish recipe...it is great served with all meats and poultry. Try it and make the adjustments that you would like to the flavor. Some like it sweeter and some like it spicier, even some curry powder would be interesting.

This is for Teahag from the 6-8-06 newsletter...asking about her sweet
potatoes turning black when cooked. My Dad raised sweet potatoes for years and he always said to dig them before the first frost because if the frost came and the vines were still attach The potatoes would turn black. Also if dug too early the will also turn dark. Using lemon juice on them will not help. Some time the black can be trimmed away but Ii would
throw them out myself. I hope I have been some help to you.

Lo-Carb Bellgian Waffles
4 large eggs, separated
4 Tbsp (1/2 stick) unsalted butter (slightly chilled)
1/4 cup oat flour
1 cup sour cream
1/2 tsp pure vanilla extract
1/2 tsp salt
grated nutmeg, optional
Beat the egg whites with an electric mixer until they form soft peaks. Set aside in another
bowl. In the same mixer bowl, cream the butter until fluffly and beat in the egg yolks --
one at a time. Add the flour and sour cream alternately, beating well after each addition.
Stir in the vanilla, salt and nutmeg, if desired. Fold in the egg whites. Bake in a preheated
waffle iron according to manufacturer's directions.

Makes 3 very large belgian waffles. 7.3 carbs per full waffle.

For Darlene in Lafayette, IN re: ants in the hummingbird feeder. After the feeder is filled and ready to hang, rub the length of the hanger (mine is coated wire) with a good coating of Vaseline. Those pesky little ants will get stuck in the Vaseline. Try it ~ it works for me....hope it works for you, too.

In the June 9th newsletter on Page 3 a "JT" was asking how to get rid of pesky ants. I have 2 young children so I opted for a safe route that was more homeopathic route and it worked GREAT!!!! I had the small little nuisance ants....Sprinkle grits around base boards and where the ants are, give it some time, don't vacuum up for a while, give the ants time to take it back to the nest and then the queen eats it and the grits swell up in the ants body since ants chemistry makeup is mostly water. It wipes out the whole colony. I did this before leaving town for a 3-4 day trip and when I returned there was NO movement whatsoever of the little insects and they haven't been back since. GOOD LUCK! The grits have to be the plain grits, I used the instant grits not the kind with the butter in it.

You were looking for a meatball dish with uncooked rice in the meatballs. Well I cooked it last night and here it is.

Porcupine Meatballs
750g (1-1/2 lbs) Minced beef
125g (4 ozs) Bacon, chopped
2/3 cup long-grain rice, uncooked
1/2 cup water
1 small finely chopped onion
1 tsp salt
1/4 tsp garlic powder
1/8 tsp pepper
1 can tomato soup
1 cup water
1 Tbsp Worcestershire sauce

Mix mince with Bacon, rice, ½ cup water, onion, salt, garlic powder, and
pepper. Shape mixture by Tbsp into 1½ inch balls. Place the porcupine meatballs in an ungreased 2 Quart shallow baking dish. Mix Soup, water and Worcestershire Sauce together and pour over meatballs. Cover and bake at 180°C (350ºF) for about 45 minutes. Uncover and bake 30 minutes longer.
Porcupine meatballs serve 4 to 6.
