June 14th : For Nikki who is taking a decorating class . Here is a Bakery shop Icings that you might like. Jocelyne in Québec

Bakery Shop Icing
1/2 cup Butter or margarine (brick)
6 tbsp shortening
1 cup powdered sugar
2 tsp clear vanilla
1 tbsp cornstarch
1/2 cup warm milk Food Color (optional) -

Cream butter, shortening, sugar and vanilla. Stir cornstarch into milk and add gradually to sugar mixture, beating all the while. Beat at low speed until blended. Beat at medium speed 5-7 mins until icing is creamy smooth. (personal note;; it may look funny when you stop blending, wait 20 mins and beat again! The cornstarch may need time to thicken!) This is a nice icing for simpler work. It is very smooth and spread able. It remains soft and is easily piped for shells, drop strings, cornelli lace and many work for simple flowers and drop flowers.

BUTTER CREAM DECORATOR ICING
1/2 c. vegetable shortening
1/2 c. margarine
1 tsp. vanilla or flavoring
4 c. icing sugar
2 Tbsp. milk* (or water)

Cream margarine and shortening. Add vanilla. Gradually add sugar, one cup at a time, beating well. Scrape sides of bowl often. Add milk and beat at med. speed until light and fluffy. Keep icing covered with a damp cloth until cake is iced, or keep in fridge in an airtight bowl for up to 2 weeks. Bring to room temp. and re-whip before using. Yield 3 cups. For Chocolate icing: add 3/4 c. cocoa or 3 squares of unsweetened choc., melted; add an additional 1 -2 Tbsp. milk.
Hint: Milk makes the icing "crusty", water will keep the icing soft. You can also add 3-4 Tbsp. light corn syrup to make it spreading consistency. Pineapple flavoring is also excellent.

Waldorf Astoria Cake Frosting
1 (16 ounce) package confectioners' sugar
1 cup shortening
2/3 cup milk
1/8 teaspoon salt
1 teaspoon butter flavored extract
1 teaspoon clear imitation vanilla extract

In a large bowl, combine confectioners sugar, shortening, milk, salt, butter flavored extract and vanilla. Beat until smooth and fluffy.

And a delicious filling that you can use ( You can change the white chocolate by dark ones depending on your cake )

White Chocolate Buttercream
12 ounces white chocolate chips
12 ounces unsalted butter, room temp
6 egg whites
6 tablespoons sugar

Melt chocolate in microwave, and let cool to room temp. Beat the butter in large mixing bowl on medium for 2 minutes, then on high for another 5 minutes. Mix the cooled chocolate into the butter.

Place egg whites and sugar in top of double boiler. Whisk together and heat until they reach 120¼F on stovetop (about 2 1/2-3 minutes). Transfer heated egg whites to electric mixer fitted with balloon whip. Whisk on high until stiff peaks form, about 4 minutes. Fold egg whites into the chocolate butter mixture. Use to frost cake - excellent on chocolate cake.

Hello Nancy,
Hope you and the kitties are doing well today. I got on a baking kick today and first made the Gomer's Banana Bread Pyle and it is awesome! Then I made the "One cup of Everything But the Kitchen Sink" cookies.

I wanted to ask Susie in Indie if she made these, because I am having trouble with baking them. They flatten out and don't seem to want to "plump" up. I checked other similar recipes online and they seem to have the same ingredients, but all in different quantities. Any help or suggestions from Susie (or anybody) would be appreciated.

Hi Nancy this is in response to Rosemarie in TX. in the June 14th newsletter. She was looking for recipes for flaky pie crust. This is my grandmother's recipe for pie crust and it has never failed to produce a really tender and flaky pie crust. Here is the recipe:

Gran's Magnificent Pie Crust
4 cups all purpose flour, 1tbsp granulated sugar, 1 3/4 cups crisco, 4tbsps white vinegar, 1 large egg and 1/2 cup of water.
Mix first 3 ingredients together. Then add in egg, water and vinegar. Mix with fork until dough comes away from sides of bowl. Then roll out dough on floured board or counter and place pie crust in pie pan. this recipe makes 2 double pie shells and 1 single. These pie shells freeze very well. You can also chill this dough and it will roll out really well, just give it a few minutes out of the refrigerator and it will roll out very nicely. Rosemaria hope this recipe is what you are looking for.

I tried the cake mix with the frosting mixed into it. I chose German Chocolate Cake mix and a Cream Cheese Frosting mix. I put into a large bundt pan to bake. It spilled over the edge and made a beautiful mess of my oven. I baked it for 1-1/2 hours and it still wasn't done so it got tossed. Did I do something wrong or is the recipe not accurate.

I have a problem, I see where everyone else is bringing their problems I.E. ants and birds etc, well here's mine. I have a birdbath and have enjoyed watching all the little guys lining up for a bath, All of a sudden the crows have taken over. they bring stuff like dried bread and soak it before they eat it, But now they bring all sorts of garbage and really muck up the bird bath. I can't get rid of them. Can anyone offer any help?

Re: the Orange Sherbert recipe.

Homemade Orange Sherbet.
10 minutes to prepare, twelve hours to set

2 cans Condensed Milk Eagle Brand - (12 oz) each
6 bottles (12 oz) Orange Soft Drink
1 can (#2) Pineapple crushed - 18 to 20 oz

Mix ingredients and freeze.
Makes 16 servings

I freeze my sherbet in a covered plastic container. After it has been in the freezer of my refrigerator (or
my chest freezer) for an hour or so, I open it and stir it up to make sure that it is going to set up right.
Then it's back to the freezer to finish setting. It usually takes about 12 hours to set completely.
Sometimes I can't wait quite that long.


Does anyone have a monster cookie recipe that uses Karo corn syrup? Thanks in advance. Thanks to you Nancy for putting out such a wonderful newsletter, I really look forward to reading it each day. Thanks agian!

Dear Nancy,
I'm writing in response to MaggieB's inquiry from the June 12th. newsletter wondering what would be a good present to get a police academy graduate. I don't know if she'll go for this idea or not, but I know that police officers have to spend a fortune in dry cleaning bills, especially when they are first starting out (I think eventually, depending on the municipality, most police officers & sheriffs' deputies get a clothing allowance of some kind?). Purchasing a gift certificate for $50, $100.00, or more would be greatly appreciated, I'm sure. If Maggie's local dry cleaners does not give out gift certificates, put cash in the card & enclose a nice note explaining what it's for (I know I spend big bucks to get my son's dress suits cleaned & pressed, & I'm sure they charge more for law enforcement uniforms due to all the patches, pins, etc.).

This is for the woman, who recently requested ideas for a Navy theme party for her son, who will soon be home on leave. You could go with a red, white and blue theme with balloons, streamers, paper plates, cups, and napkins. You could purchase a Navy flag and fly it with the American flag. If you are purchasing a commercially decorated cake, they should be able to include the Navy seal and similar decorations on the cake. My husband retired after 20 years in the Navy and our youngest son is a Sergeant in the Army and will be returning in August after a year in Iraq. We will be having a similar party for him upon his return. Good Luck with your gathering. I am confident that your efforts will be greatly appreciated.

To the person who was needing some good ideas for wedding gifts: I used my knife set on a daily basis and could never have enough towels!

If you want to give them something they will think of you when they use it, try a pretty set of glass/Pyrex serving/mixing bowls. I had a set from a friend of my moms & I loved using them and thinking of her.

If you want something USEFUL and practical, try a gift card from Walmart, Lowes, etc. for those other items they may need like home improvement or groceries. I know that sometimes a young couple may not have extra $ for these things.

If you might know the address where they are or will be living, ask if they might want you to prepay for electric, gas or water utilities. This would be something unusual for sure!

Thank you so much Jocelyne in Quebec, My mother was born in Canada, Bancroft, Ont. to be exact. Whittier is in California. Nice weather lately. I think summer is really here. Again thank you for the "Garlic Bread" recipe. My DH will be so thrilled that I thought enough about him to ask and that someone cared enough to answer. I will get everything this Friday, (our shopping day) make it this weekend and let you know how it goes. Again thank you for sending in the recipe.

For Betty T. the way to put the folders on a CD is if you have a co burner on your computer is to put a blank CD in the cdrom and the find the folder you want to copy and right click on it and then click send to and highlight your cdrom drive letter whether its D or E and it will burn it to that blank CD. OR if you want to put it on a floppy just click send to A drive.Then to check it close everything off and put the CD back in and double click my computer on your desktop then double click on your cdrom and it will show what's on the CD then you can click the folder and open it to see everything in that folder. Hope this helps.

HI Nancy here are some cake mix cookies recipes. I have many more of these can't seem to find the sugar cookie one right now. I will be happy to send any or all of the rest of the recipes if wanted.

Cake Mix Peanut Butter Cookies
1 package Betty Crocker® yellow or butter recipe yellow cake mix
1/3 cup water
1 cup creamy peanut butter
2 eggs
Sugar

Heat oven to 375 F. Beat half of the cake mix, the water, peanut butter and eggs in large bowl with electric mixer on medium speed until smooth, or mix with spoon. Stir in remaining cake mix
Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Flatten in crisscross pattern with fork dipped in sugar.

Bake 10 to 12 minutes or until golden brown. Cool 1 minute; remove from cookie sheet to wire rack.

Chocolate Fudge Cookies
l/4 c. butter or margarine; softened
l box (l8.24 oz) choc. fudge cake mix
l egg, slightly beaten
2 tablespoons water
l c. finely chopped walnuts
48 chocolate star candies

Preheat oven to 350. Cut butter into cake mix in large bowl until mixture resembles coarse crumbs. Stir in egg and water until well blended. Shape dough into l/2" balls; roll in walnuts, pressing nuts gently into dough. Place about 2" apart on ungreased baking sheets. Bake cookies for l2 minutes or until puffed and nearly set. Place chocolate star candies in center of each cookie. Bake additional minute. Cool about 2 minutes on baking sheets. Remove cookies from baking sheets to wire racks to cool completely.
4 dozen cookies

Chocolate Chip Cream Cheese Cookies
1/4 c. margarine; softened
1 (8 oz) pkg. cream cheese
1 egg
1/4 tsp. vanilla
1 pkg. (2 layer) white cake mix
1 (8 oz) pkg. choc. chips
1/4 c. ground nuts

Cream margarine and cheese until light and fluffy. Beat in egg and vanilla and half of cake mix until smooth. Stir in remaining cake mix. Add chips and nuts. Bake at 375 for 10 to 12 minutes.

Cake Mix Cookies
1 c. raisins
1 c. nuts
2 c. oatmeal
1 c. sugar
1 Duncan Hines yellow cake mix (just plain, no pudding in it)
1 c. oil
2 eggs
1 tsp. vanilla

Mix liquid ingredients and add other ingredients. Stir well. Bake at 350 degrees for 12-15 minutes. Makes about 6 dozen cookies.

This is in response to Teahag/Upstate NY regarding the spots that appear on the peeled sweet potatoes as they are waiting to be baked/cooked. I'm assuming that this is the same thing that happens to regular (russet, etc.) potatoes after they are peeled and before cooking. Unless they are covered with water, the potatoes will start to discolor and become completely black it allowed to sit for a prolonged time. My suggestion to Teahag is to wash the sweet potatoes and pat dry with paper towels then bake them with the skins on to prevent the discoloration. After the sweet potatoes have been baked and cooled enough to work with, the skins will peel very easily and the pulp can be used per the recipe being used.

I was recently on vacation in the NE Kansas and Central Missouri areas and have been catching up the past few days on reading all the newsletters and copying selected recipes. I've seen many recipes for
preparing salmon, but have yet to read any for Poached Salmon. I often will poach salmon (fillets or steaks) in a large skillet or frying pan of boiling water or white wine or a combination of both, usually with 3 or 4 slices of lemon and a sprig of fresh dill weed. This is a very simple and quick method for preparing a delicate entree of salmon. If you haven't tried this method, you might just like it!

Friendship Cake And Starter

Starter:
Combine juice from one jar maraschino cherries (4 oz.) and 4 oz. Of pineapple juice. Add 1 2/3 c. Sugar and stir every day for 10 days Then use with cake recipe. The starter has to sour.

Fruits:
In glass container of at least a one gallon size, put one cup starter juice and 1 2/3 c. Sugar. Don't put lid on tight or refrigerate. Stir every day for 10 days, then add one can crushed pineapple; with juice and 1 2/3 c. Sugar. Stir every day for 10 days. Then add 6 oz. Maraschino cherries and 1 2/3 c. Sugar. Stir each day for 10 days. When you are ready to make the cake, drain off the juice and reserve. If juice is saved, sugar and fruits must be added every 10 days.

Cake:
Mix fruits with 2 boxes yellow cake mix and 2 boxes vanilla instant pudding mix. Add eight eggs and 1 1/3 c. Chopped nuts and mix well. Divide batter between two tube or bundt pans and bake for one hour at 350 degrees. Frost with cream cheese frosting or leave plain.


Hi Everyone,
This is in respond to Nikki in F'burg VA question about the carpet shampoo. Yes it works very well for upholstery. I do my couch and chairs in the house as well as shampooing out the car/truck every time they need it. It works wonderful. Like I said if there is a stain I use cheap shaving cream before
I shampoo. Since the odor is so old it may take a couple of cleanings. I just know that it works. We have bought a older Rug Doctor shampooer and it has the upholstery attachments for it. My son has a van and one of his little children opened and spilled a cup of chocolate milk and did not tell his Dad. Well in a couple of days it was a smelly mess. They came over and cleaned the carpets and left the van doors open to dry and the nasty milk smell is gone.

In response to Ruth, MS regarding software to make her own cookbook. I use the word processing program on my computer, buy a ring binder, mine uses 5-1/2x8-1/2" paper, size your word processing page to the size required for your binder, copy the recipe including graphic if included (must copy graphic separate from text, at least with my program), paste to the re-sized page, punch and put in binder. You can also make your own index pages for the cookbook with the tabs "bread, cake, meat" etc. For the index pages I use card stock.

If you like your recipes on 5x3" recipe cards, you can re-size your word processing file to that size and copy/paste to that file, then print on cards. This works very easy for me, easier than a software program I have and no longer use.

I've also made a prayer book using this same procedure. It was so popular several who saw it asked for one for themselves and it makes a nice gift. For this book I use card stock paper for all pages since the prayer book is used every day.


I note several requests for Chocolate Cream Pie. I have a recipe that is not chocolate cream but if you like a fudge-like chocolate pie, try this one I've been making for years. It's from an old Betty Crocker Cookbook, probably back in the '60s. This is like eating a piece of fudge.

CHOCOLATE MARVEL PIE
Make Pastry Shell of desired size.
Filling for 9" pie

Melt and blend together over hot water,
1 6-oz. pkg. semi-sweet chocolate pieces
since we like very dark chocolate, I also add one square of bitter chocolate
2 tbsp. sugar
3 tbsp. milk

Cool. Beat in, one at a time.
4 egg yolks
1 tsp. Vanilla

Beat until stiff.
4 egg whites

Carefully fold in chocolate mixture.

Pour into cooled baked pie shell. Chill. Top with whipped cream. Garnish with chocolate curls.
