Easy Tuna Recipes


Jenn in Ohio was looking for carnival desserts. You could make fruit kabobs..
Purchase bamboo skewers and cut a selection of fruit into bite sized pieces. Thread them on the skewers, and lay on cookie sheets to transport. Use firm fruit that will not discolor, like melon chunks, pineapple, grapes, strawberries, kiwi. If you have room for a display, use the hollowed half shell of a watermelon turned upside down and poke the sharp and of the skewers into the outside of the melon shell. Setting the melon shell in a big bowl filled with crushed ice keeps the fruit cool and looks terrific.

This is for Jen in Ohio. These are delicious and easy! Chocolate Balls...Mix 1 box chocolate cake mix according to directions and bake, in a 9X13 inch pan. Cool cake completely. Then crumble cake up in a large bowl and add 1 can of cream cheese frosting. Mix well, and roll into balls. Using chocolate flavor candy bark, melt in microwave. Dip balls into melted chocolate, (I use a spoon) Place on parchment paper and let set. Note: Different cake mix flavors can be substituted and using either chocolate or vanilla bark.

A belated thanks to everyone who sent in garlic cheese spread recipes. I will work my way through them and I am sure there will be more than one that is great
It has been pretty warm here in western Washington, at least for us, and I pulled out my crockpot instead of turning the oven on

Crockpot Tamale Pie
Brown and drain 1 1/2 lbs lean ground beef, a chopped onion, and two cloves of minced garlic. Stir in a ten oz can of red enchilada sauce, as hot as you like it, and an undrained can of chili beans. Spoon this mixture into the bottom of your crockpot. Mix together a box of jiffy brand corn muffin mix, an egg, 1/3 cup milk, a 4 oz can diced green chilies, undrained, and about a cup of shredded cheddar or Colby cheese. Spread this over the meat mixture. Cover the crockpot and cook on low for 5 to 6 hours.
Serves 4 to 6

Other hot weather meals we like are Spaghetti ala Carbonara (a fifteen minute meal), French dip sandwiches made with roast beef from the deli, grilled ham and cheese or Reuben sandwiches, again with ham or corned beef from the deli, and

Sour Cream Chicken Burritos
Skin, bone and cube three cooked chicken breasts (halves.. or 1 1/2 whole). Stir together with sliced green onions, sour cream, lemon juice and cumin to taste. salt and pepper as necessary. Roll in flour tortillas, adding shredded cheese to taste. Makes about 6.
If you prepare the filling while the chicken is still fairly warm, the flavors blend well. Can serve warm or cool.
Instead of cooking the chicken yourself, you can use the meat from a rotisserie chicken from the grocery

Also, recently caught an episode of the Barefoot Contessa on Food TV, where she did a wonderful vegetable salad called panzanella. That is a whole meal in itself, and no cooking required except toasting some bread cubes in a little olive oil. You can find the recipe on her Volleyball Beach Picnic episode.

FROZEN CREAMSICLE CAKE
Active time: 15 min Start to finish: 3 hr

16 low-fat vanilla wafers, finely ground in a food processor
2 teaspoons finely grated fresh orange zest
2 teaspoons unsalted butter, melted and cooled
1 tablespoon light corn syrup
1 cup orange sorbet, slightly softened
1 cup nonfat vanilla frozen yogurt

Garnish: finely julienned fresh orange zest
Special equipment: a 3 1/2- by 7 1/2-inch (3 1/2-cup) loaf pan

Line loaf pan with a double layer of plastic wrap, allowing a few inches of overhang along sides. Stir together cookie crumbs, zest, butter, and corn syrup in a small bowl, then press into bottom of loaf pan. Spread sorbet evenly over crumb crust and freeze 30 minutes to harden.

While sorbet is freezing, slightly soften frozen yogurt. Spread evenly over sorbet and freeze, covered with plastic wrap, until firm, at least 2 hours.

Using plastic wrap as an aid, lift frozen cake out of pan, then peel off plastic. Let stand 5 minutes to soften, then cut crosswise into 4 slices.


Hi Kate , here is a French baguette that you requested on June 26 , that I do all the time ..on Dough ( I always make breads in the ABM machine on Dough setting :))

Baguette parisienne
1 et 1/4 cup of water (Room temperature )
1 teaspoon salt
1 table spoon of sugar
3 et 1/2 cups of flour
2 teaspoon of bread machine yeast

Program dough.
The end of dough cycle , let it stand under a salad bowl for 15 mns.
Cut the dough in 4 equal parts.
Knead it and make"baguettes" forms.

Let it rise 30 mn in the oven with the light on ( i put a can of hot water while it raises). After cook 20 mn at 420 F ( I sprinkle with water once after ten minutes).




Here is a recipe for Burrocks or Bierochs. My cookbook has it spelled both ways. This is a German/Russian recipe. I think this recipe is close to the one my grandmother and aunt used. But unfortunately we did not get their recipe before they passed. They probably really didn't have an actual recipe and just cooked by feel.

Russian Perog
Makes 17

Dough:
4 cups flour
1 tsp. salt
2 Tbsp sugar
1 Tbsp oil
1 package dry yeast
1/2 cup warm water
1-1/2 cup milk

Filling:
1 1/2 lbs beef, cooked, cooled and ground in food processor. Shred 2 lbs. cabbage and 3 small onions. Put in large kettle with a little oil. Add a little water if you like them moist. Cook until done. Let cool. Do not brown or over cook cabbage. Mix the meat and cabbage mixture together. Season well with salt and pepper.

Roll out dough and cut with a 47 ounce juice can or cut in 5 inch squares. Add 1/2 cup filling. Pinch and put up-side-down on cookie sheet. Let rise. Bake at 375 for 20 minutes.

I am not fond of seafood. I am sure that probably has something to do with it. Never thought about it much until you mentioned it. I did start today by adding a new tuna page. It has the recipes on it but is not quite completed.

A friend is getting married pretty soon, it is to be a Hawaiian Themed wedding. We are throwing her a couples shower Sunday and I would really like to have some Hawaiian recipes to make for the shower. I am looking mainly for appetizers and desserts, but if you have a good main entree, I will try anything.

This is in response to the person who is looking for the broccoli floret recipe from June 25.
I have had this salad at a restaurant with white raisins instead of the sunflower seeds. Both are delicious.

Sunflower Broccoli Salad
2 large fresh broccoli heads, florets only, cut into bite size pieces.
1 lb. bacon, fried, drained and crumbled
1 medium red onion, minced
1/2 cup minus 1 Tablespoon sugar
1 cup mayonnaise
8 ounces shredded cheddar cheese
1 cup sunflower seed nuts
1/4 cup raspberry wine vinegar

In large bow toss broccoli, bacon, cheese, onion and sunflower seeds. For dressing, blend mayo, sugar and vinegar until smooth. Pour over salad mixture and toss to coat. Cover and refrigerate at least 1 hour before serving. Recipe keeps for 203 days refrigerated.

For Lois who is looking for wood floor care. I bought a cheap flat sponge mop at a dollar store and then covered it with a miracle cloth, and just use safety pins to pin it on so it is easily removed to wash after I am done waxing the floor. Before using the mop and miracle cloth I wet it. then rather than pour wax on the floor, I put it in a spray bottle and spray it and spread it with my mop.
It really works great.

Orange Dreamsicle Cake
1 18 1/4 oz.. Orange Cake Mix.. I use Duncan Hines
2 tsp Orange Extract

Frosting:
1 (16 oz) Carton Cool Whip
1/4 tsp orange extract
1 (16 oz Carton Sour Cream
2 Cups powered Sugar

Preheat oven to temp on cake box. Prepare cake mix according to directions on box and add 2 tsp orange extract. Bake in 2..9 inch cake pans. Bake according to box directions.
Cool completely and slice each layer in half horizontally, making 4 layers.
For Frosting, combine all ingredients and mix well. Spread between layers and on sides and top of cake.
If you can't find orange cake mix, buy white cake mix and add an envelope of regular Kool-Aid.

I want to give a great big thanks to Zelda for posting the Cream Puff Cake recipe. I haven't made this in years and had completely forgotten about it until I read your post in the newsletter. Thanks for reminding me that I MUST make this again and again. For those who have never made it, it is absolutely divine and so easy to make. Thanks for the trip down memory lane, Zelda!

In the June 26 newsletter Illinois Gal asked for brownie or cookie recipes for the microwave. Here's one for brownies.

15 MINUTE BROWNIES
3/4 C. flour
1/4 tsp. baking soda
1/4 tsp. salt
1/3 C. butter
1/2 C. sugar
2 Tbls. water
1 (12 oz.) pkg. (2 C.) semi-sweet chocolate chips
1 tsp. vanilla
2 eggs

Combine flour, soda and salt; set aside. In microwave-safe mixing bowl, combine butter, sugar and water. Cook for 2 minutes at 100% power, stirring after 1 minute. Remove from oven. Add 1 cup chocolate chips and vanilla and stir until smooth and chips are melted. Add eggs, one at a time, beating after each addition. Blend in flour mixture and stir in remaining chocolate chips. Pour into an 8 or 9 inch microwave-safe baking pan. Place a saucer, upside down, in the microwave and put baking pan on top of saucer. Cook at 70% power for 10 minutes turning after 5 minutes. Enjoy!


This is for Mary in Ohio regarding the Egg Drop Soup. This is the recipe for mine (taken from Cooks.com):

EGG DROP SOUP
2 eggs
1 tbsp. cornstarch
6 c. chicken stock
1 tsp. salt

Mix 1 tablespoon of cornstarch with 3 tablespoons of water. Bring stock to a boil. Reduce heat to medium and add the cornstarch with 1 teaspoon of salt, stirring until soup thickens and is smooth. Reduce heat to low. *Beat the eggs and then pour eggs slowly, stirring constantly until they separate into droplets. At this point turn off the heat completely

Mary, I am thinking the cornstarch is what give the soup the silky feeling you are talking about. I am really not sure about the yellow color, unless, it is like you say that they add food coloring. The texture of the egg is probably just the technique in dropping the eggs in. *Although this recipe says to drop eggs in slowly, stirring constantly, that is not how I actually do it. I give the broth mixture a really good stir, then pour my eggs into the broth mixture that is moving on it's own. I think maybe that is why I don't have "ribbons" of egg, but more like sheets.

Good luck. I'll be watching for other good Egg Drop Soup recipes from your request, that I will probably want to try!

This is for Harriet in AZ. I'm not sure if this is the Fudge Cake recipe she's looking for but this one is certainly yummy!!!
When it's finished baking, it has an almost brownie cake on top and ooey gooey fudge on bottom.

Hot Fudge Cake
1 c. flour
3/4 c. sugar
6 tbls. baking cocoa, divided
2 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
2 tbls. oil
1 tsp. vanilla
1 c. packed brown sugar
1 3/4 c Hot water

Mix flour, sugar, 2 Tbls. cocoa, baking powder and salt. Stir in milk, oil & vanilla, until smooth. Spread in ungreased 9" square pan. Combine remaining cocoa and brown sugar; sprinkle over batter. Gently pour hot water over all, DO NOT STIR.
Bake at 350 for 35-40 minutes. Serve warm. Top with whipped cream or ice cream is desired. Yield: 9 servings
This recipe multiplies for large crowds quite well.
