Hi Jackie in Montreal ,
we're almost neighbors :)) Living in Estrie...( June 27th's
letter ) I, also , love to work with phyllo dough and freeze
it all the time except for the shells I make for mousses
etc...( The would look a little bit "soggy": Not sure of the
spelling ! )
No problem with the cooking directly from the
freezer..Jocelyne in Estrie LOL
Help!! Someone!
I tried to find the Cream Puff Cake recipe and I must not be
looking in the right spot for it. I typed it in the box at
the top, and clicked Nancy's but it didn't show. I also
tried the index. I think I found everything else but that.
Could someone point me in the right direction? Thanks so
much.

In the June 27th
newsletter, Lee in Ontario Canada asked where to buy
Greased Lightening. We looked
it up tonight also, because we want some too! The internet
says it is sold at Lowe's, Wal-Mart, and Home Depot. We are
in Oregon, so I don't know if you could get it in Canada
unless you have these stores there. We also found out that
there are a few different kinds of Greased Lightening. Could
the lady that used it, and raves about it working on her
shower, please let us know which one she uses?
Nancy, I so appreciate your work on this newsletter! I look
forward to it everyday, and LOVE to hear your stories about
Siggy and Ditto. We have Alice Susy, Lily, Buffy and Luna
here. Buffy and Luna are the new Manx cats that are almost a
year old now. Sounds like a lot of cats, but they never seem
to be in the house at the same time, and they seem to be
like potato chips.. you can never have too many (yes, you
can, I think! hah!). They are our kids" and we love them
dearly!

My guess is that they thicken the the
egg drop soup with cornstarch and also put in yellow
food coloring. Have no idea about the texture of the eggs
though.

For Sue about the pan
for the Blender Cheesecake
(6/26), I used my 10” spring form pan, the one I usually use
for cheesecakes, and it was just the right size. BTW, I
substituted “less fat” cream cheese, fat-free cottage
cheese, light sour cream, EggBeaters (for 2 of the eggs) and
Splenda (granular) for the sugar (but added an additional
1/4 cup of sugar). It worked perfectly, but needed to chill
overnight in the fridge for the texture to be smooth enough.
(Perhaps that’s related to how little fat this version has?)
For a topping I used 2 cups peeled and sliced peaches tossed
with 2 Tbsp low-sugar apricot preserves and ½ tsp almond
extract. A treat!
I’m not clear on who posted the original recipe, but to you
a big thanks. I’m going to use the low-fat, lower cal
version in Fizzy Meals in July, but I would love to give you
credit for the original. Perhaps you could email me? I can
be reached at www.fizzymeals.com on the Contact Us page.
Thanks, Nancy, for such a fun newsletter. I just tested a
new recipe for gazpacho that was ready in no time. Since
someone asked for no-cook recipes, I’ll send it in a
separate post.

Pat in Alabama
Hi, Nancy and all
the good cooks out there. In the June 26 newsletter Nancy
from Houston asked
about a recipe for Ham Delights. The recipe I have used for
years is as follows:
HAM DELIGHTS
2 pkgs. party rolls (20-24 rolls per package)
1/2 lb. soft margarine (NOT melted)
3 Tbs. poppy seed
1 tsp. Worcestershire sauce
3 Tbs. mustard
1 med. onion, finely chopped
2 small cans chopped ham (or 3/4 to 1 lb. boiled ham)
1/2 lb. grated Swiss cheese
Split rolls lengthwise using a bread knife, split whole
package at once.
Blend margarine, poppy seed, Worcestershire sauce, mustard,
and onion by mashing with fork.
Spread mixture on top and bottom of split rolls. Spread ham
and cheese on bottom of rolls. Put
top back on rolls and wrap rolls in foil and bake at 350
deg. for 15 to 20 minutes, or until good and hot.
NOTE:::
Rolls may be frozen before baking. Bake one and freeze one.
Wrap well before freezing.
I wrap in foil then put back in plastic bag the rolls came
out of. Defrost before baking.
Yield: 40 to 48 rolls.
ENJOY !! Nell in VA
Nancy and thank you for
all the work the newsletter takes to put out each time. We
are back for awhile since I hurt my knee. In the Monday,
6/26, newsletter Nancy in Houston was looking for Ham Rolls.
I went to www.cooks.com
web site and put in Ham Roll and it came up with at least 10
pages with 10 recipes per page. The following are a couple
of recipes for her. Hopefully one is it.
Pepperidge Ham Rolls
2 pkgs. party rolls
6 slices ham, thin
1 stick butter
1 small grated onion, optional
3 tablespoons poppy seeds
3 tablespoons mustard
1 tablespoons Worcestershire sauce
1 cup grated Swiss or American cheese or both
Mix butter and onion. Add mustard and pappy seed and
Worcestershire sauce. Cut party rolls lengthwise so there is
a top and bottom. Spread both sides with the mixture. Layer
ham bottom roll and sprinkle on cheese. Replace top roll.
Wrap in foil. Bake at 400ºF for 10-15 minutes.
Ham and Cheese Rolls
chopped ham and Mozzarella cheese
1½ stick butter
2 tablespoons Worcestershire sauce
4 tablespoons minced onion
2 tablespoons poppy seeds
Country style rolls
Open rolls, put bottom in bottom of 9"x13" baking dish or
pan. Put layer of chipped ham and cheese on bottom of rolls.
Put the top on. Melt together butter, Worcestershire sauce,
onion and poppy seed and pour over top rolls. Cover with
aluminum foil. Bake 20 minutes at 350ºF. Makes 24.
Ham and Cheese Party Rolls
1 lb. ground ham
½ lb. grated mozzarella cheese
2 pkgs. Pepperidge Farm party rolls
2 Sticks butter
3 tablespoons poppy seed
2 tablespoons mustard
1 small onion, chopped
1 teaspoon Worcestershire sauce
Melt butter and add all ingredients but ham and cheese. Mix
well and set aside. Cut top halves from rolls and lift off.
Mix ham and cheese and sprinkle over bottom half of rolls.
Place top on and pour butter mixture over rolls. Wrap in
foil and bake 325ºF for 15 to 25 minutes or until cheese
melts. This freezes well before cooking!
To Doris in Oklahoma in the 6/26 newsletter thank you for
listing the variations of the 1 step angel cake mix.
Nancy sorry this end up long but I thought that it was worth
it. Nancy and associates take care. Everyone have a great
day.
