Nancy here is another recipe suggestion for your Schwan's salmon. It is from e-cookbook libary.

Grilled Salmon Fillets with Creamy Horseradish Sauce

Sauce:
3/4 cup sour cream
1/4 cup mayonnaise
2 tablespoons prepared white horseradish
2 tablespoons chopped fresh basil
1 tablespoon fresh lemon juice
1 teaspoon soy sauce

Salmon:
Nonstick vegetable oil spray
3 tablespoons vegetable oil
1 tablespoon prepared white horseradish
1 tablespoon soy sauce
1 small garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon coarsely ground black pepper
6 (1-inch-thick) salmon fillets (each about 6 ounces)

For sauce: Mix all ingredients in small bowl. Season with salt and pepper. (Can be made 1 day ahead. Cover and chill.)

For salmon: Spray grill rack generously with nonstick spray. Prepare barbecue (medium-high heat). Whisk oil, horseradish, soy sauce, garlic, salt, and pepper in another small bowl. Brush oil mixture over both sides of salmon fillets. Grill salmon just until opaque in center, about 4 minutes per side. Transfer salmon to plates. Serve with sauce.

In my opinion ECookbook library is one of the most affordable ways to get cookbooks on the net. Most of their book are in pdf format. The books don't take up space on your self and don't have to be dusted. It is just what many of your cookbook addicts need. It is $12.97 to join for a lifetime membership. New books are added almost monthly. The most recent additions are Time for Pie, Fantastic Fudge!, The Ultimate Cake Book, Insider's Recipes for Brand Name Foods and the Joy of Canning. It is rare to find one cookbook for $12.97. There are over 100 cookbooks in the library that can be downloaded. Am impressed with all the recipes and am eager to check monthly for new recipe books. and like the idea the membership is a lifetime membership. I would recommend this highly.


Hi Nancy, Siggy, Ditto and everyone in Nancyland. I just love Salmon and with so much talk about Salmon and the good salmon dishes that have been sent in, I just wanted to join in with sending four of my favorite Salmon recipes I use often. Three of the recipes are from Chef Raymo's Cookbook "Cooking with Love and Memories." I miss seeing Chef Raymo's recipes in the newsletter and often wonder how he is.

Salmon Patties (Chef Raymo)
2 Tablespoon butter
1/2 cup oil
2 (10 oz.) cans pink salmon, drained
1 small onion, minced
2 eggs
2 teaspoon whole grain mustard
1 cup mayonnaise
1 teaspoon lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon dill
1 teaspoon celery salt
1/2 teaspoon black pepper and salt
1/2 teaspoon Tabasco sauce
1-1/2 cup cracker crumbs
1/2 cup flour

Remove the bones and skin from salmon. Using a fork, flake salmon and set aside.

In a small sauté pan or skillet, melt the butter over medium-high heat. Add the onion and saute for 2 to 3 minutes until tender. Transfer to a bowl and let cool slightly. Add the eggs and beat with a wire whisk until incorporated. Whisk in the mustard, mayonnaise, lemon juice, Worcestershire sauce, dill, celery salt, black pepper, salt, Tabasco sauce and cracker crumbs. Mix well.

Using a 1/3-cup measure, form into patties. Dust patties with flour. Heat 1/2 cup of oil. Fry the patties in batches for 3 to 4 minutes until brown. Serve hot. Yields 8 patties.

Salmon Loaf (Chef Raymo)
1 large can salmon, picked off bones
1 egg
1 cup fine breadcrumbs
1/2 teaspoon salt
1/3 cup finely chopped celery
1/3 cup finely chopped onions
1 Tablespoon dried parsley flakes
1/2 cup mayonnaise (not salad dressing)

Mix together all of the ingredients and shape into a loaf like you would a meat loaf. Place into a lightly greased baking dish and bake in a preheated 350° oven for 1 hour. Serve with macaroni and cheese, a green salad and broccoli. Serves 4

Salmon Casserole (Chef Raymo)
1 cup salmon, drained and flaked
1 cup uncooked macaroni
1 cup cottage cheese
1 cup sour cream
1 small onion, chopped
2 teaspoons chopped parsley
salt and pepper

Cook macaroni and drain. Add remaining ingredients and pour into a 2-quart greased baking dish. Top with bread crumbs. Bake at 350° for 35 to 40 minutes.
Serves 4 to 6.

Louisiana Salmon Croquettes
1 can red salmon
1 yellow onion, chopped fine
1 bell pepper
2 slices bread
2 medium white potatoes, boiled and mashed
1 egg
1 teaspoon black pepper
yellow cornmeal

In a large bowl, combine first seven ingredients until well blended. Shape into patties. Coat in cornmeal and fry in hot canola oil, turning once. Lay on paper towels to drain. Serve hot.

Nancy - I know that your cats, like mine, are very active and curious. I wanted to share with you an inexpensive cat toy that I got that keeps my cat amused and happy. It's a cat cottage that is actually a tall, giant oversized cardboard box with 3 levels of floors. It's a bit more sturdier than a cardboard box. It's easier to put together and my cat loves to play/sleep/sit, etc.. in it. It wasn't hard to put together either. Here is the link:

Peanut butter Velveeta fudge for Laurie in Fruitport MI
From Jocelyne in Québec Canada

Velveeta Peanut Butter Fudge
1/2 lb Velveeta cheese
2 lbs powdered sugar
3/4 cup butter
1 tablespoon vanilla
1 cup peanut butter

Melt first 3 ingredients together in microwave. Add remaining ingredients. Knead like bread dough until you can no longer see the sugar. Roll candy with a glass. Spread into greased pan. Refrigerate until set. Cut and enjoy!


Here are a few more recipes for Cabbage Soup for Catherine in Mobile AL. I hope you have a crock pot.

Vegetable Rice
1 head of cabbage (shredded)
1/2 cup rice
4 carrots (sliced)
2 cans chicken broth
1 cup water
1 can tomato sauce
1 tablespoon dill
1/2 teaspoon salt
1/4 teaspoon pepper
1 can tomatoes (diced)

Put everything in slow cooker and stir.
Cook: Low 7 to 8 hours, High 4 to 6 hours.

Here is another one for you.
1 head cabbage (shredded)
2 cans chicken broth
3 cups water
1/2 teaspoon salt
1/2 teaspoon pepper

Put everything in slow cooker and stir. Cook: Low 6 to 7 hours, High 3 to 5 hours. Hope this is what you are asking for.

Nancy and her 4 legged associates thank you for such a tremendous newsletter. I would like to thank Dorry in VA in the 6/4 newsletter because we have planted tomatoes. Last year when my DH was unemployed he pulled up our backyard fence and of course we had one of our soon-in-laws haul it away for us. So we have nothing protecting our tomato plants now. We are going to do that and thanks again Dorry in VA.

So glad to hear Doris in S. Indiana, 6/4 newsletter, is doing better. Thank you for your Grinder Sandwich recipe also in the same newsletter.

In the 6/4 newsletter Norma in PA was wanting a salad dressing that was called Zippy Zero Dressing. I went to www.cooks.com and they had some recipes that said Zero Salad Dressing. The next two recipes are from this web site.

Zero Salad Dressing
1/2 cup tomato juice
2 tablespoons lemon juice
1 tablespoon onion, minced
salt & pepper to taste
1/2 cup vinegar
2 tablespoons water
1 clove garlic, sliced
paprika
1/4 teaspoon sweetener

For Variety you can add:

Tarragon
Thyme
Dill
Parsley, chopped
Green Peppers, chopped
Mustard
Horseradish

Place in a jar with a lid. Shake well before using.

Zero Calorie Salad Dressing
1/2 cup tomato juice
2 tablespoons lemon juice
salt & pepper, to taste
1 tablespoon minced onion, chopped parsley or chopped green pepper
mustard

Combine ingredients in a jar or bottle. Shake well before using. I am sorry this is long. Nancy take care and have a great day. Everyone have a great day and enjoy life.

Good morning Nancy , furbabies and Nancylanders everywhere

This is for Norma in PA ,
the hospital I used to work at made this dressing for many years.

Zero Dressing
Makes: 2 servings of 1/2 cup each
This recipe is equal to 2 tablespoons of free food (two servings per day) It contains no added sugar and is vinegar less.

1/2 c Tomato Juice
2 tb Lemon Juice
1 tb minced Onion
1/8 ts Salt
1/8 ts Oregano
1 ds Garlic Powder (optional)
Combine all ingredients in jar with tightly fitted top. Refrigerate several hours. Shake well before using.

Note: This dressing may be kept for several weeks refrigerated in a closed container.

Hope all is well with you and the "kids."
I found a Tomato based salad dressing for Norma in PA. Hope this is similar! I got it from http://newdiets.com

Tangy Tomato Dressing
1/4 cup catsup
2 tbsp. grated red onion
2 tbsp. olive oil
2 tbsp. of lemon juice or vinegar
1 tsp. grated horseradish
1/2 tsp. sugar (florida crystals) I have no clue what this is...
1/2 tsp. worcestershire sauce (optional)
1/8 tsp. black pepper

In a jar with a tight fitting lid, combine all the ingredients for the dressing.
Cover and shake well.
Refrigerate - will keep for 1 week.
Makes about 3/4 cup - 6 2-tablespoon servings

I also have a request. Does anyone have a spiced walnut recipe that has sweetened condensed milk in it as well as cinnamon, sugar and...can't remember what else?
