Thank You Merry and Joyce for reposting the Fresh Blueberry Cake recipe. The blueberries are getting ripe here in south Mississippi and I am so hungry for this cake. Last year I lost the berries I had in my deep freeze, thanks to Hurricane Katrina. I can't wait to make this tomorrow.

For Donna (6-6): Hope this recipe is one you like. I have had it for years. It is a favorite at Thanksgiving for family and friends. The lady who gave it to me is pushing 95 and still a wonderful cook. CC

NaNe’s Candied Yams
1-1/2 cups water
2-1/2 cups sugar
10 small sweet potatoes (preferably 2 ½” in diameter -- left whole)
1/2 tsp. nutmeg
1 stick margarine
Dash of salt

Combine water, sugar, salt, nutmeg, and margarine in a heavy roasting or large sauce pan. Bring this to a boil. As it boils, peel potatoes and drop in syrup. Cover and let boil until syrup thickens. Then, reduce flame to low and keep covered. Continue to cook until potatoes are tender. Don’t stir but be sure to keep an eye on your potatoes, so they don’t burn or stick. Serves 10 or 12.

***Save leftover syrup to add to your next potatoes. It’ll keep a couple of months in the frig or it can be frozen.


I too am a recipe addict. I signed up for the e-cookbook library some time ago and found so many wonderful recipes in the library. Popcorn 'N More Cookbook and The Grill Master Cookbooks are two that I used most often. I do all the cooking in the family and love to grill outside and eat popcorn while watching TV in the evenings. Although cooking has been on of my hobbies for years, the day I retired my wife announced she was done with cooking and it was now my job. I gladly took over the job and have been it for more than 5 years.

For Joyce in Texas: Buy some really nice stainless steel kitchen utensils (whisks, ladles, etc) and have the bride & groom's names and the wedding date engraved on them. I sell a line of utensils and we recommend this for wedding presents, and the idea goes over well. The items should last a lifetime and will always be a reminder of the special day.

Donna G. requested a Sweet Potato recipe for her son in law.  Here's my Sweet Potato as follows:

The Sweet Potatoes are a go by taste type of thing. I start with about 3-4 lbs. of sweet potatoes and peel them. The second thing I do is cut and boil the potatoes in a pot large enough for them. Next thing I do is drain the potatoes and put them back into the pot. Next I add the following items in a stick of butter or margarine, add about 1/3 to 1/2 a cup of dark brown sugar and add a little nutmeg in. Sprinkle the nutmeg across the top of the potatoes lightly.

The next thing is to beat this mixture real good and taste it. You want it to be creamy but not overly creamy.

If you think it needs some more of something start with a little more nutmeg (added in), then the brown sugar if needed.

After they are mashed you put them in a casserole dish and put it in the oven to heat up (in a 400 degree oven) if they need it. If they are still hot then put your large size marshmallows on top on potatoes and toast the them lightly (just watch the marshmallows closely and don't walk away from them)
Just don't put the marshmallows too close to the edge of casserole dish or they will over flow. That's it! Enjoy!

For Lynn in KY. I can't say for sure how well this will work, but since the basis of sauerkraut is vinegar and vinegar is an acid, using something that is a base should neutralize it quite a bit. Baking soda, salt, even Milk of Magnesia, might work well to neutralize it. I don't know what method you would use to apply them, but my guess would be a water base solution. Then, when it's dry, apply dry baking soda and cover with newspapers to absorb what's left. Again, I haven't tested this, but I know a base will neutralize an acid, so this should help. Leaving the trunk open, if you're able, to air out should help some, as well.

Last year, I'm sorry I can't remember who or what month, someone posted a recipe for Easy Blueberry Cake and I would love to have it reposted. I believe
it had lemon pudding, fresh blueberries, flour, sugar, oil. I made it several times, but have lost my copy of the recipe. I also searched through the archives, but had no luck. Thanks, Lisa. Here are two I found that I had copied from this newsletter,
don't no the date of newsletter, but maybe one of them will help.

Blueberry Coffeecake
1 cup sugar
1/3 cup butter
2 large eggs
1/2 cup milk
2 cups flour
2 teaspoons baking powder
1 1/2 cup fresh blueberries
2 to 3 tablespoons melted butter
1/4 teaspoon cinnamon
1 tablespoon sugar

Cream together the eggs, butter, and sugar. Sift the flour with the baking powder and add alternatively with the milk. Fold the blueberries in last. Pour into a greased 9"x13" pan and bake at 350 degrees for about 45 minutes. Mix the sugar and cinnamon together. Remove coffeecake from oven and spread with melted butter and sprinkle with a cinnamon sugar mixture.Yields: 12 servings

Blueberry Pudding Cake
2 cups blueberries
3/4 cup sugar
1 tsp. cinnamon
1 Tbsp. cornstarch
1 tsp. lemon juice
1 cup boiling water
1 cup flour
3/4 cup sugar
1 tsp. baking powder
1/2 cup milk
3 Tbsp. butter, melted

Grease an 8-inch square baking dish. Combine blueberries, cinnamon, and lemon juice and place in the bottom of the baking dish. Combine flour, 3/4 cup sugar (or less) and baking powder in a bowl. Combine milk and melted butter and add to the flour mixture. Spoon this mixture on top of the blueberries in the baking dish. Combine 3/4 cup sugar (or less) with the cornstarch and sprinkle over mixture in the dish.
Slowly pour boiling water over all the ingredients. Bake at 350° for 45-50 minutes.

This is the only book and website I use and trust for the real facts about the original Rice Diet. It really gets confusing if you get info form other sources.

I would also recommend you go to the support forum: http://www.ricedietprogram.com/ This forum has a good message board and this is where I located a buddy that has been on the Rice Diet for a while and knows a lot about how to follow the Rice Diet. She has really been great to email me and give support, encouragement and answer all my questions!

So far I am doing well and the best part is not feeling hungry! :) Today is Day 6 for me, and I still have a lot to learn about this diet. Hope this information is helpful to those who are interested in the Rice Diet.
And, I would really love a good TNT recipe for a No Salt, No Fat, No Sugar pasta sauce! :)

Here is a frozen hot chocolate recipe a copycat of the one created by the Serendipity 3 Restaurant in New York City. My daughter just made it and it is good.

6 half ounce pieces of a variety of your favorite chocolates
(Buy a variety pack)
2 tsp. store bought hot chocolate mix
1-1/2 tbsp. sugar
1 1/2 cups milk
3 cups of ice
whipped cream
chocolate shavings

It appears that different flavors of the chocolate is important to this recipe. Chop the chocolate into small pieces. Place in top of a double boiler over simmering water. Stir until melted. Add the hot chocolate mix and sugar. Stir til completely melted. Remove from heat and slowly add 1/2 cup of milk until smooth. Cool to room temp. In a blender, place the remaining cup of milk, the room temp chocolate mixture and the ice. Blend on high until smooth and the consistency of a frozen daiquiri. Pour into a giant goblet and topped with whipped cream and chocolate shavings.

About the sauerkraut odor in your car, this has nothing to do with food, but, when we were housebreaking our Doberman pups, we were told to use club soda on the "accident" areas. The club soda neutralizes the odor, their smell is wiped away. Don't know if this will work but may be worth a try. Hope it works. Connie in beech grove.


I sure do want to thank Penny, Teresa in Michigan and Doris in Oklahoma City for the recipes for the baked white fish from Luby's. Now all I have to do is find the fish. I shop Wal-mart and haven't been able to find the frozen cod or some kind of mild white fish. Guess I'm going to have to try another store.

This may be the Low cal Tomato salad dressing that you are looking for:

Low Cal Tomato Salad Dressing
1/2 cup tomato juice
2 scallions, minced
1 Tab lemon juice
1 tsp parsley
1/2 tsp Worcestershire Sauce
dash Tabasco
1/4 tsp salt
pepper to tatse.

Combine and chill.


This is for Susie in Arkansas. The fish might have been done in a Francaise sauce. You dip fish into flour and then into an egg mixture. Then you cook them until slightly brown. Butter and lemon juice and some clam juice or chicken broth complete the sauce. I will be happy to send a recipe if you like.

Hello all in Nancy land. I'm responding to the bologna recipes. I don't have a recipe, but a hint. Money was so tight when the kids (4) were young that I use to make the "ham salad" sandwiches for school lunches. (Not every day!!!) I would go to the butcher shop and buy the ends of the bologna. The part that the butcher couldn't use as it tapered down and wasn't pretty enough to put in the meat case. That stuff ground up great and tasted better.
Nancy, I enjoy your newsletter more and more each day. So sorry you had to move, but am sure you are happier and more relaxed. Good luck to you and pats for the cats.

To Joyce in TX regarding a gift for her recently web grandson. I have had great luck in giving a pair of crystal candle holders. I buy the ones which hold the taper candles such as you would put on a dining room table or on a mantel. Through the years I get comments such as "I thought of you on Thanksgiving when I set the table for dinner" or I thought of you when I made a special dinner for our anniversary and used the candle holders to set a pretty table". These candle holders come in a variety of sizes and prices and I am sure you could find something to suit your budget. Another item that I have given that receives comments from time to time is a good set of kitchen knives in a butcher-block holder. I gave these to a co-worker years ago for a wedding gift and even though I am retired now whenever I see the couple they invariably talk about how much they enjoy the knives and they have now been married 16 years!

Long time ago, probably over 10 years, a friend gave us a shrimp salad that was scrumptious. It was like a macaroni salad with pasta and little shrimp in it. I think it had a mayonnaise dressing if I remember right. I've never tasted anything since, and haven't seen a recipe for anything like it, either. Would anyone in Nancyland have a similar recipe? I love to taste it again!
