Baking Essentials Lessons (Easy lessons on Baking)
As many of you before me
have said, "If anyone can help, it's the great readers of
Nancyland"
I have been looking for the rolls of
spreadable garlic cheese. I haven't seen it in years,
but all this talk of Bologna sandwich spread has made me
nostalgic. One of those memories..
Anyway, I live in
western Washington. I have kept my eyes open, and cannot
find this item. I have done an internet search, and not been
successful
Any sources?
thanks in advance Lois, Kingston, WA
For great fish including Alaskan salmon and sable fish
(black cod),
try Vital Choice
Seafood. The website also has great recipes.

For Anna in Mo : I hope
this is the macaroni and shrimp salad you are looking for .
I do think the relish makes the little extra taste...Jocelyne
in Québec
Macaroni and Shrimp Salad
6 oz uncooked macaroni - cooked according to package - you
want about 1-1/2 cups cooked
1 cup shredded cheese, cheddar
1/2 cup sliced green onions
1 cup mayonnaise
Add enough to make it moist
1/3 cup sweet relish
1 stalk celery, chopped finely
1 (4-1/2 ounce) can shrimp, tiny or medium, drained and
rinsed
Mix it all in a large bowl. Cool and serve.
This is for CC, who in
the 6/3 newsletter was looking for a buttermilk chess pie
recipe. This was my best friend’s favorite pie and I used to
bake it several times a month. Unfortunately, my brined
passed away several years ago. Every time I bake a chess
pie, it brings back many wonderful memories of our time
together.
Robbie in Bowling Green, IN
Chess pie
1-3/4 c Sugar
2 tb All-purpose Flour
1/4 c Cornmeal
1/4 ts Salt
2/3 c Buttermilk
5 Egg, Lightly Beaten
1 t Vanilla
1/2 c Margarine, Melted Butter or
1 Pastry Crust, Unbaked; 9-inch
Combine sugar, flour, cornmeal and salt in a large bowl; add
buttermilk and eggs, stirring until Blended. Stir in vanilla
and margarine, and pour into unbaked pastry shell. Bake at
350 F for 40-45 minutes or until set. Check for doneness
after the minimum baking time by gently shaking the pie. The
center should be set with a slight jiggle. Cool on a wire
rack approximately 1 hour.
Yield: 1 9-inch pie.
Suzy in IN: I made the
reduced fat blender cheesecake
and it is delicious. I sprinkled the top with a mixture of
cinnamon and Splenda. Heavy on the cinnamon. Next time I am
going to try swirling raspberry sauce in it. Will have to
use just a little, so it won’t change the texture too much.
Bet this is good with strawberries also.
Hope you like it when you make it.

Pizza stone request from
Leslie in Texas :
Place stone in middle of oven and heat to 400 degrees for 15
minutes. Sprinkle stone with corn meal. Sprinkle paddle
generously with corn meal and place pizza dough on paddle
before adding toppings. Add pizza toppings. Use quick
jerking motions to transport pizza from paddle to stone. If
you are not careful at this point or you can end up with
your pizza at bottom of the oven or on the floor. Use paddle
to remove pizza when crust is browned and cheese is bubbly.
Do not try to remove stone from oven until cool.
from Jocelyne in Québec
This is for Leslie from
Tx who asked about the baking stone. I use mine mostly for
cookies. As to seasoning, it has been so long ago that I got
mine, but if I recall correctly, it gets seasoned as you use
it. Just remember not to wash with soap. Zelda from Grand
Prairie, TX
Barbara Ann and Nancy...Thank you for the Information on the

HI Nancy
Does anyone out there, have solution to my
cat "odor"
problem? My poor kitty had a bladder problem and used the
cement floor instead of his litter box. We have tried
everything we can think of to neutralize the odor, but
nothing seems to work. I could sure use some help before hot
weather sets in!
Thanks---Jackie Spencer--Ohio
Hi Nancy, I noticed that
some members have asked for the Blueberry Cake recipe
lately, and I just happen to have saved it in my files. Here
it is. I kept the name of the gal who originally sent it in,
at the bottom. I hope this is the one that was requested. I
haven't tried the recipe yet, but plan on doing so, as soon
as blueberries come down in my area.

Fresh Blueberry Cake
This is an original recipe created by Merry in MN
1 package yellow cake mix (without added pudding in mix)
1-4oz. package instant lemon pudding mix
1 cup sour cream
1/3 cup vegetable oil
4 eggs
½ cup water
Preheat oven to 350°. Grease and flour a 12 cup Bundt pan or
a 9x13 pan.
Mix all ingredients together and beat for 4 minutes.
Gently fold in 1 cup fresh blueberries. Pour into prepared
pan, and bake for 40 – 50 minutes for Bundt, or 25 – 30
minutes for 9x13, or until center tests done.
If using Bundt, let cool in pan 10 minutes before removing.
I just leave the cake in the 9x13. This cake needs no
frosting, it is so moist and delicious, but you can dust
with confectioners’ sugar if desired.
