About pizza stones:

We like larger stones; it's easier to get pizzas on and off. We found a rectangular stone, 13 x16, that is nice for pizzas and perfect for cookies. We now carry it on our site with peels. You can see the stone here if you are interested:

For Anna in MO re the Shrimp Salad
I make the shrimp salad like the other recipe that was posted today except I add ½ cup chili sauce to the mayo. Gives it a “shrimp” color and adds flavor.

Here is a Sweet Potato Casserole recipe that has been in my family for many, many years. It is one that my grandmother used and now my grandchildren enjoy especially at the holidays. Don't save it for the holidays, but try it any time. It is so very good.

Sweet Potato Casserole
2 cups grated, uncooked sweet potato (I put mine in food processor and chop)
1/2 stick melted butter
3/4 cup sugar
1/2 teaspoon cinnamon
Dash of nutmeg
1 cup evaporated milk-like Pet
1/2 teaspoon of grated lemon rine
2 teaspoon of lemon juice
2 eggs, well beaten

Place the grated potatoes in a bowl and mix well with beaten eggs. Gradually stir in the sugar, then follow with the milk, oleo, lemon rine and lemon juice. Add
nutmeg and cinnamon last. Mix well and pour into a sprayed 9x13 casserole dish. Bake 1/2 hour at 350º. Remove from oven and stir. Put back in the oven for 25-30 minutes longer. Will have a thickened consistencyy.

This is for Jackie Spencer wondering how to rid the cement of the cat urine odor. I suggest sprinkling the area with some cat litter and let it sit for a while. We had a cat die in the rafters along the side walls in a store room-so far gone my husband was removing it in pieces (sorry to be so gross and graphic!) He was wondering how we were going to get the smell out when I spotted a container of cat litter I had used for our kittens. I suggested he put some of that in the area, and it was amazing how quickly the smell was eliminated-as in almost immediately!! And it was hot at the time. Hope this suggestion helps.

This is for Teahag in upstate NY in the 06/08/06 newsletter wondering why her sweet potatoes get the black spots on them. I have several theories. White potatoes also turn brown if they sit a little while before cooking. Maybe it has something to do with the natural sugars. Also, bananas, apples and pears also turn brown and you treat them with something acidic-lemon juice or pineapple juice. I'm sure using the lemon juice on her sweet potatoes wouldn't alter the taste in the final result, just don't know if that would help the browning.

Here is a sweet potato casserole that I really like. I think I have sent it in before, but don't ask when!! It is different from all the sweet potato dishes that have been sent in this week. Hope you enjoy.

Sweet Potato Casserole
3 medium sweet potatoes, peeled and thinly sliced
2 lg. red apples or pears
2 c. mini marshmallows
3/4 c. brown sugar (I use the Splenda)
1 t. salt
1 t. cinnamon
1/2 c. water
2 T. cornstarch
4 T. butter or margarine

Spread one-half of the sweet potatoes in the bottom of a 3 qt. casserole dish. Top with one-half of the apples (pears) and marshmallows. Repeat the layering with remaining potatoes, apples and marshmallows. Combine sugar, salt and cinnamon; sprinkle over casserole. Dissolve cornstarch in water and pour over sugar mixture. Dot with butter; cover and bake at 350 degrees for 1 hour. I sprinkle half of the cinnamon/sugar mixture over the first layer and the rest on top of the last layer instead of putting it all on top.

Good Morning to you Nancy & cooking friends,

Has anyone tried HUMMINGBIRD CAKE? I made one last week and it was so good I want to share it.
Can also be refrigerated.

HUMMINGBIRD CAKE
3 cups flour
2 cups sugar
2 tsp. grated orange peel
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
3 eggs, beaten
2 cups chopped bananas
1 (8-oz) can crushed pineapple in its own juice, undrained
3/4 cup vegetable oil
1 1/2 tsp. vanilla extract
1/2 cup chopped pecans
Orange Glaze (recipe follows)

Preheat oven to 325 degrees. In a large mixing bowl stir together flour, sugar, peel, soda, cinnamon, and salt.

In a small bowl stir together eggs, bananas, undrained pineapple, oil, and vanilla. Stir into dry ingredients just until combined. Fold in pecans. Spread in a greased and floured 10-inch fluted tube/bundt pan. Bake for 65 minutes or until a wooden toothpick inserted in center comes out clean.

Cool in the pan on a wire rack for 10 minutes. Remove from the pan and let cool completely. Drizzle with Orange Glaze.

Orange Glaze:
In a small bowl place 2 cups sifted powdered sugar, mix in 2-3 tblsp. of fresh orange juice until of drizzling consistency. (I only used half of these ingredients for my glaze.)

I read a note written by Sandra from Oregon in the newsletter of June 4, 2006 regarding Peanut Butter Cheese Fudge with Velveeta cheese. I missed the recipe but would love to have it. I love Peanut Butter Fudge and also cheese. The combination of the two sounds like it would be delicious. Would love to have the recipe! Many thanks for the wonderful newsletter. I look forward to it daily and have tried so many of the wonderful recipes.

Hi Leslie! I used to sell Pampered Chef & for the stone you found you just let it season itself. I use mine for cookies, pizza & making taco rings. After you have used it you just run it under water & scrape the excess food off with the scraper & let it dry. If you just have to wash it (as some feel they need to do) you can scrub it with baking soda & warm water. I hope this helps, enjoy the stone!

Now I have a request for everyone out there. I have frozen berries in my freezer: blueberries, strawberries & one bag that’s a berry mix. What are some good recipes to use these in? I really prefer fresh berries; however I can’t find them in any store or farmer’s market to save my life. I remember picking strawberries on a farm back home in Illinois…….those were the days. Anyways, any good muffin or cake recipes to use these up would be much appreciated! Thank you.

Nancy in the 6/8 newsletter page 1 Lois, Kingston, WA is looking for Spreadable Garlic Cheese. I got on line and went to www.cooks.com and found a few recipes for the garlic cheese spread. I am listing just 4 of them. Hopefully one that I list will be what Lois is looking for.

Garlic Cheese Bread Spread
1-1/2 cup cheese, shredded, Cheddar, Mozzarella or American
1-1/2 cup Colby Jack cheese
1 teaspoon onion powder
1 teaspoon garlic powder
1 cup mayonnaise
Italian or French bread

Mix and spread on the bread that has been halved. Lay both halves on cookie sheet and bake at 400ºF until cheese melts and starts to turn brown.

Sue's Garlic Cheese Spread
l large pkg. cream cheese, softened
2 to 3 large garlic cloves, minced
½ jar cheese whiz

Mix all ingredients well. Serve at room temperature on French bread, hard rolls, crackers, etc. Keep unused portion refrigerated Good with steaks or hamburgers.

Cheese Dip for Veggies
1, 8 oz., cream cheese
1 jar Old English cheese spread
milk
dash of garlic salt

Mix cream cheese and Old English cheese together. Add milk until it reaches smooth consistency. Add garlic Salt. Mix well. Refrigerate. Serve with veggies or crackers.

Cheese Dip
1, 8 oz., pkg. cream cheese
1, 5 oz., jar Kraft Old English Cheese spread
1 cup mayonnaise
garlic salt, to taste
Worcestershire Sauce, to taste
Tabasco sauce, to taste

Soften cheeses and cream together. Add mayonnaise and other ingredients. Mix well; chill. Great for crackers, chips, vegetables.

Garlic Spread
1, (8 oz.), pkg. cream cheese softened
1/2 cup butter, softened
2 tablespoons chopped fresh parsley, optional
2 tablespoons chopped onion
1 large clove garlic, minced

In a medium mixing bowl combine cream cheese and butter, mixing until well blended. Add parsley, onion and garlic and mix well. Refrigerate for 1 to 3 hours. The mixture becomes more flavorful the longer it chills.

Garlic Cheese Logs
1 lb. sharp Cheddar cheese
1, (8 oz.) pkg. cream cheese, softened
1 cup chopped pecans, optional
2 tablespoons mayonnaise
2 tablespoons lemon juice
2 cloves garlic, chopped
1/2 teaspoons paprika

"This is a very strong-flavored cheese spread! Cut these flavorful logs into rounds and serve with round buttery crackers." In a medium bowl, mix the Cheddar cheese, cream cheese, pecans, mayonnaise, lemon juice and garlic. Form into 2 or 3 logs. Sprinkle each log with paprika. Chill the logs until firm, about 2 hours. Slice each log into rounds as needed, and serve with crackers.

In June 8 letter from Jackie in Ohio. several years ago I bought a gallon of ODO BAN at Sams. You mix 1/3 odo ban with 2/3 water in spray bottle. My cats have had all kinds of accidents and this stuff gets the stink out of all of them. I have 5 indoor cats and the neighborhood "toms" come pay a visit during the nite and spray my porch. In the morning I hose it (down while holding my nose lol) Then spray with this odo ban and don't smell anything until it happens again. I just spray this odo ban on the cement and let it dry. The porch is on the south of the house so it gets plenty of hot temps.

To Gay in LI in the June 7 (Page 2) newsletter - I would love it if you would send in the recipe for the fish in Francaise sauce. I have been trying a sauce of my own but it doesn't seem quite right. I use it on Tilapia. Thanks.
