Rudolph Cupcakes Recipe

I'm sending in a couple of suggestions for Ann in East Berlin, PA, who asked for fun holiday ideas for her office Christmas Luncheon. Last year my sister and I got together to make several fun yet simple desserts for the family to enjoy. We made a batch of "Rudolph Cupcakes" first. Next we had such fun preparing a very simple recipe that made pretty green Christmas wreath cookie type treats. They resemble Rice Crispie treats, but are made with corn flakes instead of rice. The flakes are colored
with green food coloring, then shaped into wreaths. You then add tiny red hots candies for extra color and taste. Both of these treats looked so cute and festive served together on a decorative platter. Lots of color. Here are the recipes if you care to try them. Happy Holidays!
Pam in Ohio

Rudolph Cupcakes
24 Paper Baking Cups
1 pkg. Chocolate Cake Mix
1 (16 oz.) Tub of Chocolate Frosting
Chocolate Sprinkles
24 Large Pretzel Twists
24 Miniature Marshmallows
24 Red Cinnamon Candies
24 Small Red Gumdrops

Prepare and bake cake mix according to package directions. Cool completely. Then frost cupcakes with chocolate frosting. Sprinkle the tops generously with the chocolate sprinkles. For each cupcake, cut pretzel twist in half. Arrange each pretzel half in cupcake for reindeer antlers by pressing into frosting. Cut miniature marshmallow in half; arrange on cupcake for eyes just below the antlers. Center gumdrop below marshmallow halves for nose. Place red cinnamon candy below gumdrop for mouth.

Christmas Wreaths
1/2 c. butter
1 (10 oz.) bag marshmallows
2 t. vanilla
4 t. green food coloring
4 c. corn flakes
1/4 cup small cinnamon candies

Microwave butter and marshmallows on high until melted (1-3 minutes depending your microwave). Stir once at halfway point. Stir until smooth. Add vanilla and green food coloring. Put corn flakes in a large bowl then pour butter mixture over them. Stir thoroughly and quickly. Grease hands with cooking spray or butter. Shape 1/2 c. of corn flakes on wax paper to form a cookie sized wreath. Sprinkle with the red candies. Continue on working quickly until all of the corn flake mixture is made into cookies.

Zucchini Cake Recipe
Good morning to the NL Gang : Here is a wonderful recipe I found in a recipe book many years ago. I think it was called "The Best Little Cook In Harrodsburg, Ky." It is a cake and not a bread recipe and so easy to make and absolutely delicious and sooo rich and moist. I make two batches and use 10" pans and then turn it into a four layer masterpiece with any really good frosting (no canned icing for this beauty). You would never know it has zucchini in it and even kids love it.
Beverly

Zucchini Cake
3 c allpurpose flour
3 c white sugar
1 t salt
1-1/2 t soda
4 T cocoa
1 t vanilla
1 1/2 c oil
1c chopped nuts
3 c grated zucchini
In a large bowl mix all ingredients together at once with mixer on medium speed and fold in zucchini last. Bake at 325 in 9x13 or 3- 9" or 2- 10" or 4- 8" pans for 35 minutes depending on pan size. I always line my layer cake pans with wax paper.

Icing for Zucchini cake:
1 8oz softened cream cheese
1 stick softened butter
1 pound powered sugar
1/2 t vanilla
cream all together.

Candy Recipes

Hi Nancy and Everyone!
I am about a week behind in reading newsletters, but am enjoying every minute of them! For those requesting my candy recipes, some were posted in the November 2nd newsletter. When my mother and I made the Butterscotch and Cashew Haystacks this last weekend, we added a package of white almond bark, a second can of cashew nuts, and enough Rice Krispies to make the candy stick together with dropped onto wax paper. Everyone have a great day!

Scalloped Potatoes Recipe

This is in response to Maryann from MN about scalloped potatoes. I don't have a recipe, just a way of doing it, which I've done for years. Slice the potatoes for the number of people you will be feeding, cover the bottom of a greased glass baking dish with potatoes. Sprinkle with flour, add chopped onion or cheese if you wish, & repeat layers. Heat enough milk in micro, with some butter added, and pour on the potatoes. Heat your oven to 300 F. Slow cook the potatoes for at least 2 hours. It's the slow cooking that makes good scalloped potatoes. Use your own recipe but slow cook. Hope this helps.
Muriel, FL 87

Scalloped Potato Recipe

This is the recipe for real scalloped potatoes the old-fashioned way--no soup. Both my mother and I always used it.
Jeanlock in McLean VA

Scalloped Potatoes
4 servings

4 medium potatoes, peeled and sliced 1/4 inch thick
salt
fresh ground pepper
3 tablespoons flour
4 tablespoons butter
1-1/2 cups milk

Preheat oven to 350 degrees F (180 C). Butter a 1 1/2 quart casserole. Cover the bottom of the casserole with a single layer of potatoes. Sprinkle generously with salt, pepper, flour and a few dots of butter. Repeat until all of the potato slices are used. Pour milk over the potato slices until the top is almost covered. Dot with the remaining butter. Bake for 1 hour or until the potatos are soft.

Request a Honey Baked Ham Recipe
Request on how to make mice cookies

I am looking for a recipes to make a ham similar to the Honey Baked hams that you can buy. I love the sugary coating on the ham.

Also for Ann that sent in the Bon Bon recipes. I would like to know how to make the mice cookies. Could you give detailed instructions please.

I am also looking for different cookies to take to a cookie exchange.
Thanks so much Nancy!
Marlene in Texas

Mice Cookies

They are tiny little mice made from dipping a maraschino cherry with a stem (that’s the mouse’s tail) into chocolate and attaching a Hershey kiss to it to make the face of the mouse. Then, you put the mouse onto an Oreo cookie that is split in half. I use icing to put a holly berry and vines on the white cookie filling and eyes on the mouse. They are really cute.

Two Mexican Food Recipes

For Sherry in West Texas wanting Mexican Food recipes:
Sherry, in the Aug. 17, 2005 newsletter there is a Crock Pot Mexican Fiesta Recipe that is so good. Also, in the Sept.10 newsletter there is a recipe for Mexican Cucumber Salad that I make to go with it. This has become a favorite of ours. And, by the way, I make the Mexican Fiesta Casserole in the oven more often than in the crockpot as it seems we decide that we want it at the last minute.
I am going to send the recipes in case you cannot pull them up in the archives.

Crockpot Mexican Fiesta Casserole
1 bag curshed white corn chips
1 lb. ground meat
1 can Ranch style beans
1 can Cream of Mushroom soup
1 can Cream of Chicken soup
1 can Mild Rotel Tomatoes (I use the "Milder" version as we do not like this to be hot to the taste)
2 teaspoons chili powder
1/2 cup chopped onion
3 cups or more grated cheddar or Colby jack cheese

Brown the ground meat with the onions, drain any fat. Add the Ranch Style beans , canned soups, Rotel tomatoes and chili powder and mix together well.
In a Pam sprayed Casserole place half the bag of crushed chips, pour 1/2 of the meat mixture over chips and top with 1/2 of the grated cheese. Repeat this ending with cheese on top and bake at 350º till bubbly and cheese is melted.

Mexican Cucumber Salad
1 medium cucumber, diced
1 can whole kernel corn, drained
1 (16 oz.) can diced tomatoes (I have used fresh tomatoes to good results.)
1 green bell pepper, small dice
1 red bell pepper, small dice (I have left this out when the price is sky high on them)
2 Tablespoons red wine vinegar or apple cider vinegar (not white, much too tart)
1/2 tsp. (or more to taste) crushed red pepper flakes
1/2 tsp. minced garlic
1/2 tsp. ground cumin
1 tablespoon fresh cilantro, chopped fine
1/4 tsp salt
1/8 tsp. ground black pepper
1 Tablespoon oil

Mix all together in a bowl and allow to sit for about an hour, taste for seasoning. I have, at times, had to add more salt or vinegar till the taste suited me.
This improves the longer it sits, I usually try to make it the day before.
Hope you try these.

Recipe Book Costs

Help to all Nancylanders out there!! I know that last year there was lot's of talk about making your own cookbook and giving it to your loved ones. Well, I had planned on doing that this year. I have it all ready and went to Office Depot, to have it put in binding spiral or the tabbed it's $1.29 per page!!! If I want it laminated that's another $1.29 per page!!
I have 277 pages!! Help!!!!

I thought that some of you had it done for alot less. Can anybody tell me where??
I really wanted to do this, we've moved away from our kids to Virginia (the kids are in New York) I'm missing them alot!

My youngest daughter said all she wanted for Christmas was my recipes. I know I can do it with three ring binders, but I wanted to have them in binding

Black Hole of Recipes

Hi Nancy, purrbabies and friends, I'm looking for a recipe that I keep losing. Not everyone would understand how I can lose so many recipes. If they could see my cookbook collection and all the recipes that I have printed they would understand. Combine that with "cleaning up" for company and you have the Black Hole of Recipes. My grandmother made a casserole when we were kids that my sister and I both loved. Over the years we have both made what we hoped would be the same recipe. I have come close but no cigar. It had noodles, hamburger, green pepper, onion, tomato sauce, and the big question is: how much sour cream, cottage cheese and cream cheese? Those last three ingredients are the stumper. I can fake the rest of it I think. The ingredients are layered and baked. If you have it would you please share it with us? I had one that was close a while ago but my computer ate all the recipes I had saved. I hope it had indigestion!

Stuffed Celery Recipe

To stuff celery--Mix 8 oz cream cheese with a can of shrimp, undrained (7 oz?), and thinly sliced green onions to taste. It will seem runny until thoroughly mixed. I can usually find the can of shrimp at the dollar store.

Stuffed Celery Recipe

To Sally in Pa who asked for fillings for stuffed celery. I make celery stuffed with lite (2.5 grams per serving) Laughing Cow cheese. Unlike so many other low fat cheeses, it's very flavorful. It comes in a round cardboard container. When I serve this as an appetizer, I can't refill the tray fast enough.

Stuffed Celery Recipe

for Sally in PA (11-29 newsletter)

Grandma Jewel’s Stuffed Celery
8 oz softened cream cheese
2 tablespoons mayonnaise
1/4 teaspoon salt
1/4 teaspoon lemon pepper
3/4 cup finely chopped sweet pickles (homemade sweet pickles are so much better)
3/4 cup finely chopped pecans

Blend cream cheese, mayonnaise, salt, and pepper together. Fold in pickles and pecans. If mixture is too thick, add a little pickle juice. Fill “finger” pieces of chilled, cleaned celery.

*This is my mother’s recipe. My mother always served this with a relish tray of homemade pickles, peppers, etc at Thanksgiving and Christmas. My daughters always request stuffed celery for holiday meals. This “stuffing” can be kept in the refrigerator for 2-3 weeks.

Good Morning Nancy and everyone in Nancyland, Lynette in Houston, TX is looking for a recipe for Ojarascus. I found this smaller version on www.cooks.com.

Hope this helps you.

Kolachy filling

This is for Diane in the 11/27 newsletter. The solo filling is usually found in the baking aisle. It is a short, narrow can. It is not the same as the pie filling, which come in larger size cans. I imagine if you cannot find Solo filling at your local store, although I would ask someone at customer service if they do carry it, you can use some sort of preserves or marmalade. You do not want to use jelly, as it will spread too much and run out of the pastry. I don't have the recipe in front of me, but you just put a scant 1/2 teaspoon of filling in the center of the squares, which mine are about 2-3 inches. As for the fresh filling, I wish I had the recipe, since I am no longer in Ohio. This filling was sold at Amish bulk stores. Although they did refer to it as pie filling, it was much thicker. This recipe is time consuming to make, but it is something I grew up with and never minded making. I have a lot of baking sheets, so I usually roll, fill and put on the baking sheets, then bake them in batches. I didn't like being in the middle of rolling out the next set of dough and having to stop and check the ones in the oven.

Hope this helps.
Gloria (SC)

Hi Nancy!
Im still hoping for a response from Sarah, MN. for the recipe she submitted in the 11/14/06 newsletter it was for Pineapple Cottage Cheese Mold, I just need to know if your supposed to drain the small can of pineapple or not??? I really want to try this recipe, but don't want to mess it up! LOL!!!

Thanks for the best newsletter, I have been enjoying it for years!!!

Thanks for info on how to print out long recipes
Diabetes Friendly Recipes

Just a quick note of thanks to readers for suggestions of how to print out long recipes. A special thanks to Doris and to Sandy. I used Sandy's suggestion of holding the shift key at the end of the recipe. Great success. Thanks again.

Also I got a newsletter pertaining to my diabetes and it mentioned a website for recipes. It says go to www.dLife.com and join to search 1000+diabetes-friendly recipes. This is NOT TNT as I have not checked it out as of yet but send it only as a possible resource as I often read about people looking for low calorie ideas. Even those not afflicted with this disease could perhaps learn some helpful tips.

Recipe for Rhubarb Pie

Rhubarb Pie

Rhubarb filling:
2-3 cups of diced rhubarb stems
1 to 1 1/2 cups of sugar

Mix together, set aside. Make the pastry below, line a pie plate with the dough, then add filling, and add a lattice or regular crust. Cook at 400 degrees for 40-45 minutes, until crust is golden brown. Let cool and enjoy!

PLEASE NOTE: DO NOT USE THE RHUBARB LEAVES- THEY ARE POISONOUS! ONLY THE STEMS!!!

Pastry (Double Crust)

I make this recipe in the food processor. No messes!

2 cups of flour
1 teaspoon of salt
2/3 cup of shortening or lard
6-7 tablespoons of cold water

1. Fit processor with steel blade. Combine flour, salt and shortening briefly in processor.

2. Add cold water a little at a time through the feed tube just until dough is moistening and forms a ball.

3. Roll out and use or freeze as desired. Martha Stewart suggested a tip I really like: after processing each crust, turn it out onto plastic wrap, fold the wrap over the pastry, and shape it according to the shape of the pan you will be baking it in (round and flat for pie dish, square and flat for cake pan or jelly roll pan). Just freeze them, stacked, in ziplocs, then when you need one, thaw and roll from center of dough. Voila!
Emma

For Cheryl, Ohio I made your Rum Cake tonight and it did not raise. I baked it in a 13X10 pan and it is only little more than an inch thick. Just wandering if that is as thick as it is suppose to be.

God bless you Edith! :o) Would have loved that walk you had. The weather has been incredible, but I'm sure there is something brewing that we won't enjoy so much. Bundle up and stay safe. How were the colors up there this year? Normally we come up for the fall peeping, but this year with all our planning for the move to Kentucky and all, we didn't make it in time.

I have a request for anyone who might be able to help me. The girls birthday is coming up on the 12th, this is the first birthday that they will need to take a treat to school. I would like to do something other than cupcakes for their treat to share. Anyone have any ideas? We aren't allowed to send a full blown cake. Too messy. Help!!! :o) I thought of cookies frosted and decorated. But that's a lot of cookies. lol

Crock Pot Reuben Casserole Recipe

Nancy on Friday, 12/1 we are to have snow and winds to 40 miles per hour. I know that my DH was going to finish decorating our yard. Last week-end he did the lights on the roof. I have a feeling that we are going to have a tree this year that take a couple of day to do.

The person that posted the Reuben Casserole got me thinking, that can cause trouble with me, that you could make this in the Crock Pot. A couple of days ago I got on the Internet and found one at www.southernfood.about.com/od/crockcornedbeef. I am going to make this Friday, 12/1, so we can get other things done. Every other Friday my DH is home for a 3 day week end. I have had to adjust how I do things so we can do things together. It is nice since November he was gone for a week and December he will be leaving to go for a week. These 2 trips I don't go on because you have nothing to do.

Crock Pot Reuben Casserole
1, 16 oz., can or bag sauerkraut, rinsed and well drained
4 to 6 oz., sliced lean corned beef, diced or chopped
4 to 6 slices Swiss cheese, may use reduced fat, shredded
1/2 cup Thousand Island Dressing, low fat or fat free

In slow cooker/Crock Pot, combine sauerkraut, corned beef, and Swiss cheese. Blend in Thousand Island dressing. Cover and cook on low for 6 or 8 hours. Serves 3 to 4.
I am going to put rye bread under the boiler and toast them and then butter them. Then on each serving of the casserole you can add the buttered bread.

Everyone have a great day. Nancy and 4 legged associates take care.
Susie Indy

Hi, Nancy and associates: I know this is long; please feel free to break it up if you have to, but I was asked some direct questions and couldn't let some of the others go by without my two cents - LOL. Glad you had a great holiday; again, thanks for all you do for all of us!

For Peggy NELA: The website for computer help you requested is www.seniornet.org. I highly recommend it for anyone - not just those needing help. There is a wealth of information on this site, as well as discussion groups on a large variety of subjects.

Jeff in L.A.: The cake is made with candy orange slices - the jellied kind with sugar on the outside.

For Jaye in 55 in Luther, OK: Hi, neighbor! The blue Jello I bought for the next time I make this gorgeous dessert (Rainbow Jello) is blueberry flavored and is, of course, blue in color. I don't know if they have it in sugar free, but the first one I made without the color blue was just as impressive (I just used what I had on hand). I layered it in a clear glass dish instead of a mold, and it was so beautiful. I used cherry, lime, peach, lemon, cranberry and grape. You can add as many colors/flavors as you desire. It's just so impressive!

Cathy K: I don't know why your search (or mine) in the Google box at the top of the newsletter didn't work, but I found the recipe for which you are searching easily by using the following search parameters on a regular Google webpage (www.google.com): "tomato soup cake" :nancyskitchen.com

You definitely need to put "tomato soup cake" in quotes so as to get just that and not everything with tomato, soup and/or cake in the title. The space and then the colon followed by nancyskitchen.com indicates that you want to search only that domain and none other.

The recipe, by the way, was in the November 4, 2006 newsletter.

Doris in Oklahoma City

To Margaret from ? and Suzz NE (11/29 newsletter): thanks so much for the recipe/ideas for hot cocoa mix: I plan to make and give this for Christmas (with a mug, marshmallows, candy cane, etc) and now have someplace to start! (plus I'm sure I'll find 'extra' recipes to try on the www.VeryBestBaking.com site!) Thanks again! Sue in WA

Need Finger Food Ideas

Nancy, I am in need of some nice looking finger foods for a Christmas Party my daughter is having. There will be a sliced ham, but would like some other main ideas, recipes and also nice looking sides.

They party will be on the formal side, not overly formal but want things other than nachos and dip, and casual party foods. No paper plates will be used, or plastic ware. So I feel I need to fix some rather eye appealing foods.
Thanks, Gloria, Indiana

Nancy: A couple of replies to requests:

SHANNON in Ohio, in the 29 Nov Newsletter wanted clarification on the Black Walnut Sheet Cake recipe I submitted which was posted in the 14 Nov Newsletter. The recipe calls for both the cake and icing to be hot (or warm) at the time the icing is poured over the top and spread over the surface of the cake. However, I've made this and poured the icing over a less than warm cake and it still turned out fine.

Sally in PA, in the same Newsletter requested suggestions for stuffing celery. While I'm allergic to peanuts and peanut butter, I've seen celery stuffed with both chunky and smooth peanut butter. Also, Kraft has small jars of various flavored processed cheese product that go very well stuffed in the hollow side of a celery stick, i.e., Old English, Sharp Cheddar, Pimiento Cheese, etc. Practically if not all cheese
spread products go well with celery so use your imagination and stuff away. Whip up your own celery stuffing using softened cream cheese and any one or a combination of: chopped ripe and/or green olives, finely diced green onion, finely diced green, red or yellow bell pepper, chopped dried beef or boiled ham, finely diced shrimp or crab meat, etc., etc., etc.
Mr. Myron Drinkwater - Lake Forest, CA

Hi everyone,
Is this a group where we can post recipes from books? Even untried? I'm asking this question because I have tons of recipe books that I want to share with people who love to try them out.

The purpose of the newsletter is to post tried and tested recipes. Many times a recipe may sound great but in reality my not be. We would love any recipes that have been tried and tested.

Request for Mexican Soup

Hello Nancy and your furry executives. I have asked for this recipe before but never got a response, so am trying again. Since it is getting close to Christmas, maybe someone out there will have a recipe for a Mexican soup that is served on Christmas Eve. Keep up the good work, Nancy as your Newsletter is a God send.

Use the Eagle Brand, cake mix, and Cool Whip in each

White or Yellow cake mix, Cream of coconut, flaked coconut for topping

Choc. cake mix, caramel ice cream topping, butterbrickle chips

Choc. cake mix, fudge ice cream topping, chocolate chips or Hershey pieces
Whatever I have, I try.

Spiced Almonds Recipe

Born and raised in Ohio – Rocky River, Lakewood, Fairview – I know where you are. I now live in foothills of N CA (by choice) Love Ohio change of seasons but do not miss the winters.

Somewhere someone was talking about the Westside Market and how great it was. Would like to hit some of the meat shops there again. Also to get fried Lake Erie perch and pierogi.

Here is another wonderful easy candy recipe—original came from Martha Stewart program a few years ago.

Spiced Almonds
2-1/2 C unblanched almonds - toasted 15 minutes in 350 oven
1-1/4 C sugar
1 t. cinnamon(or more)
1/4 C water

Put in pan and cook stirring constantly until sugar is golden and almonds are coated with granulated syrup. Spread on parchment covered cookie sheets to cool. They are supposed to be dipped in chocolate and then rolled in cocoa but I was pleased with the way they turned out with just the sugar coating. Takes a lot of stirring and your arm gets tired but eventually it turns from syrup to crystals. Made one with orange juice and orange peel which was good.

Hi Nancy and Everyone!
Nancy, thank you for posting my message requesting candy, jar gift, and chili recipes. My message was posted before and I received quite a few responses. I've received still more since you posted it the second time! I want to thank everyone who responded. My mother and I had a great weekend after Thanksgiving making homemade candies. We did make a couple of the recipes sent in. I have the ingredients for a few more. We ran out of time, so I will be making more in the next couple of weeks. As I mentioned before, our church is having a Christmas Bazaar and I intend to sell some of the candy, along with jar gifts, and some crafts.

For background information, I am not yet a senior, but am knocking on that door. I am 48. I am married to my third husband. My first husband and I have two children, an 18 yr old son and a 15 yr old daughter. My first husband died almost 7 yrs ago. My son is attending college. He wants to be a sports journalist. My daughter is a sophomore in high school. She has taken dance classes since she was about 3 yrs old. At this point, she wants to have her own dance school after college. My current husband, children and I live out in the country, outside Liberty, Texas. I commute to Beaumont five days a week, a drive of about an hour each way. I work for a law firm, where I have been for over 27 yrs now. My husband commutes to Houston, where he works for the U.S. Postal Service. He has a little shorter commute than I do. We have two dogs--a very spoiled 3 yr old Pomeranian named Missie, and a Dachsund named Jackson, and about 20 cats. My daughter and I love animals. The cats are mostly outside cats, but we have a few that come in from time to time.

This is for Cheryl in Ohio. I grew up on the near west side of Cleveland, moved to Brooklyn Hts, then Parma, when I got married, then on to North Royalton. Moved to South Carolina in 2003. My mother in law lived in Olmsted Falls on Garfield and my brother lived on Columbia Rd, by Sunset Memorial. I would love to chat with you more. I have tried to get to the other site, where we can post messages. Nancy did give me a password, but it didn't work, and didn't have time to request again, with all going on. Since this is such a busy time and a lot of recipes, hints, etc, being posted, I will try again after the first of the year.

Nancy, if you are able to post this, it would be great. If not, I understand and will send the info again after the holidays.

Suggestion for gift for artist

Nancy I know of a wonderful gift. If your friend is an artist then they must know of Dick Blick art supplies. One of the oldest and largest art suppliers around. Almost all artisits recommend them; they have everything an artist would want. I highly recommend them. www.DickBlick.com
A gift certificate from them would be an awesome gift. They do have a lot of stores around, so check out their website.
Hope this helps you. Dawn - Cape Cod, MA

Suggestion for Homemade Baby Gift

For Rose in NC, I drew the outline of my granddaughters' hands on paper, traced it onto fabric, embroidered it, dated it and made into a pillow for their mother. It made a great gift and keepsake. Norma in Lenoir, NC
