How to print out a section of the newsletter
1. Put cursor in the section you want to print. Click the mouse three times to highlight the paragraph or section.
2. Choose the print option. Change the Page Range option from ALL to SELECTION.
3. Press the Print button located on the lower part of the print screen

Best Ever Banana Cake

2-1/2 cups flour
1-2/3 cup sugar
1-1/4 teaspoons baking powder
1-1/4 teaspoons baking soda
1 teaspoon salt
2/3 cup crisco shortening
2/3 cup buttermilk
1-1/4 cup ripe bananas mashed
3 eggs
2/3 cup chopped walnuts

Combine dry ingredients & set aside. In large bowl mix sugar, Crisco, & eggs. Add bananas, milk & dry ingredients. Add walnuts. Bake 350 degrees for 50-60 minutes in a 13x9 greased pan.

Fluffy Frosting for Banana Cake
Mix together 1/2 cup milk & 3 tablespoons flour; heat & stir till thick & pasty in small pan over low heat. Add 1/2 teaspoon vanilla & set aside to cool thoroughly. This MUST be cold! Now cream together 1/4 cup Crisco, 1/4 cup margarine, 1/2 cup granulated sugar & 1/4 teaspoon salt. (I used 1 stick margarine (1/2 cup) instead of Crisco). Now add the cold milk & flour mixture to sugar mixture & beat till light & fluffy. About 6-8 minutes.

(I add a mashed banana to this but it's optional.) Frost cake & sprinkle chopped walnuts on top.

For Alex who wants a good baked Rice Pudding--- this is a favorite!

Baked Rice Pudding
1 C. rice (Uncle Ben's Converted best)
2 C. water
1/2 tsp. salt
2 eggs
3/4 C. sugar
3 C. milk (can use part cream)
1 T. vanilla
6 T. butter

Cook rice with water and salt 17minutes or until water is absorbed; mix cooked rice with other ingredients & place in 2 1/2 or 3 qt. deep casserole ; bake at 375 for 45 minutes, or until browned on top and somewhat set (it thickens more as it cools.) Enjoy!!

Hi Nancy. There is no particular date in the information that I am sending. I just want to thank all of the ladies that were talking about the Fasta Pasta. It intrigued me so I went to QVC and ordered it, of course they were out of them but told me that they would send it to me as soon as they came in. Well I got them, was only expecting one, about 2 or 3 weeks ago and I don't know how I ever got along without one. I was so pleased that two came in the set as I now have one in my house and the other one is in our 5th wheel as we do a lot of camping. I have already used the one in the house about 5 times now and I just love it. No more waiting for water to boil for me. Thanks again ladies.

I still miss Siggy so much.  Siggy spent 17 years training me to be his master.
Ditto is such a sweet and loving cat. Siggy used to sleep right beside me at night and the second my eyes opened each morning would rub his whiskers on my check.  Ditto now has taken over the job doesn't wait until I wake up. Every morning at 7:30 he wakes me up and gets so excited that I am awake. He then curls up beside me and purrs and purrs. Ditto's most happy part of the day is when I carry him around from room to room and opening up the blinds on the windows. His job is to watch for the birds as I open the blinds.

Several weeks ago Ditto didn't allow me to hold him more than a minute or so.  He would climb up beside me and let me pet him.  Now he is a lap cat that wants to be held all the time. He is teaching me that he is now the top cat in the house and he is letting me live here for his entertainment.

NancyV, can you get more info from your new hubby? I'm in my 50's and my mother, who is no longer living, use to make what we called 'poh (poor) folks dumplings'. Made from boiling pork neckbones (or other boney pork cuts) with seasoning until meat is falling off the bone. Take bones out of broth. Drop small balls (teaspoonfuls) of hot water cornbread mix into slow boiling broth and cook until done. Makes its own thick soup from the loose cornmeal that comes off the balls(?). If this sounds to him like what he is wanting, let me know if you need more directions and I will try to help. Or if his mother is still able to remember I bet she would love to give you the recipe.

I am getting all my recipes together for the holidays.  I need some simple to prepare recipes for casseroles to take to my daughter's house.  Before I retired, I spent so much time on adjusting a recipe until it was just right.  Now if it has 4 or 5 ingredients and doesn't take a lot of time to put together the recipe is just right.  Not sure what happened in a few short years.  My daughter wants me to bring a green bean casserole, corn casserole, and a Jell-O salad.  Suggestions would be appreciated.

3 tablespoons granulated sugar
1 teaspoon cinnamon
1 package yellow cake mix without pudding
2 eggs
1/4 cup oil

Heat oven to 375 degrees F. Grease or spray cookie sheets. Mix cinnamon and sugar in small bowl and set aside. Combine remaining ingredients in large bowl until well mixed. Roll dough into 1-inch balls; roll in cinnamon sugar mixture. Place balls 2 inches apart on cookie sheet and flatten with bottom of glass. Bake at 375 degrees F for 8 minutes or till set. Cool on cookie sheet 1 minute then cool on a piece of foil on a flat surface. Chris in NM

Deep-Fried Sweet Potatoes
as many sweet potatoes as you want
deep fryer w/ hot oil
salt & pepper
butter

Clean and slice sweet potatoes in "french-fry" size slices. Place a few slices at a time in hot oil to fry. They will pop up to top when done. Drain on paper towels. Sprinkle with salt and pepper to taste. Serve with butter. Yummy!

Hubby and I prefer sweet potatoes fixed like russets, so we either just bake them and add butter, salt and pepper to taste, or French fry them. Another way we have fixed them is to mash them like russets. We add no sweeteners at all to our sweet potatoes! We feel it masks the natural taste of the potatoes, and also they are already sweet. I make this every year on Christmas. It takes quite awhile to get it all made but well worth it!

Jello Ribbon Salad
2 cups milk
1 cup sugar
2 packets Knox unflavored gelatin
2 teaspoons vanilla
1/2 cup cold water
16 ounces sour cream
4 boxes Jell-O
strawberry on bottom(for 1st layer)
lemon
lime
cherry

Dissolve each box of Jell-O in 1&1/2 cups hot water. Set aside to cool. Heat 2 cups milk to boiling; being careful not to scorch it. Dissolve 2 packages unflavored gelatin in 1/2 cup cold water. Add this to the heated milk & add 1 cup sugar, 2 teaspoons vanilla to heated milk also. Add this milk mixture to slightly beaten sour cream. Divide into 3 equal portions(about 1&2/3 cups) & set this aside.

Pour the 1st box of Jell-O(strawberry) into a 13x9 glass Pyrex pan & let set. Refrigerate till set. Now add 2nd layer which is the sour cream mixture & refrigerate till set. Continue on till all seven layers are in pan. The next layer will be lemon, sour cream mixture, lime, sour cream mixture & finish with cherry on top. Be sure to refrigerate each layer till set before adding another or they will run into each other. The purpose of using a glass dish is to see how pretty this looks when finished. To serve; cut into squares. I always get rave reviews on this.

Karen-My family really likes this recipe. It's simple and not to sweet. I actually add more apples since the kids love them so much.

Sweet Potato-Apple Bake
4 medium sweet potatoes (about 2 pounds)
3 tart apples
1 tablespoon lemon juice
1/3 cup packed brown sugar
1 tablespoon light butter
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg

Preheat the oven to 350°F. Lightly coat a shallow 1 ½-quart baking dish with nonstick spray.

In a medium saucepan, cover the sweet potatoes with water and bring to boil over medium-high heat. Cook for 20 minutes, or until slightly tender when pierced with a fork. Drain and let cook. When cool enough to handle, remove and discard the skins. Cut the sweet potatoes crosswise into ½ in. thick slices.

Meanwhile, peel and core the apples. Cut crosswise into ½ in. think rings. Sprinkle with the lemon juice to prevent discoloring.

Arrange half of the sweet potato slices in a layer in the prepared baking dish. Top with the apples and then the remaining sweet potatoes.

In a small microwaveable bowl, combine the brown sugar, butter, cinnamon, and nutmeg. Cook in the microwave on high power for 30 seconds, or until melted. Stir until smooth and blended. Drizzle over the sweet potato mixture. Cover with foil and bake for 45 minutes, or until very tender.
Makes 6 servings.

Per serving: 185 calories, 2 g protein, 43 carbohydrates, 1 g fat, 0.5 g saturated fat, 3 mg cholesterol, 29 mg sodium, 4 g fiber.

Philadelphia Rice Pudding
1 cup long-grained rice, rinsed, drained well
1-1/2 qt milk
1 cup sugar
1/2 tsp salt
Pinch of freshly grated nutmeg
1 tsp vanilla

Mix all of the above ingredients together and place in a 3 qt saucepan. Bring to a simmer on top of the stove and then place, covered, in a 300 degree oven. Bake, without disturbing, for 2:45. The pudding will almost caramelize and become a pale golden color.

Old-Fashioned Rice Pudding
1-1/2 cups milk
Pinch salt
5 tbsp sugar
1 tbsp butter, melted
1 tsp vanilla
5 eggs, beaten
1/4 cup brandy
2 cups cooked long-grained rice
1 tbsp freshly squeezed lemon juice
Cinnamon for topping

Combine first 7 ingredients; mix well. Add rice and lemon juice. Sprinkle a bit of cinnamon on top. Place in an 8 x 10" greased baking dish and bake at 325 degrees for 50 minutes or until it is lightly browned and the custard is set. Test with a table knife. Top with maple syrup, if desired.
Serves 6-8.

This is how I make my hard boiled eggs and they are perfect every time. There is no unsightly green around the yolk. Place cold eggs into cold water. Heat the water to boiling and then turn off the heat and cover for ten minutes. Then just run the pan of eggs under cold water until they are cool.

Tin Can Soup
2 cans Minestrone soup
2 cans Cream of Mushroom soup
2 cans Ranch Style Beans
2 cans Veg-All or other mixed vegetables
1 can Ro-tel tomatoes (original)
1 small can tomato sauce

Mix all together and heat until bubbly. I also add one pound of cooked ground beef. This makes a lot and can be frozen.

Snicker Doodle Cookie Recipe
1 Box yellow cake mix
2 Eggs
1/3 Cup oil

Mix the above together. In a separate bowl mix sugar and cinnamon. Make dough balls roll in sugar and cinnamon mix. Put on cookie sheet, press the dough balls with a fork 10-13 minutes at 350.
I got 2 doz cookies. AND they were delicious!

Karen C in Tx Is looking for a different way of making sweet potatoes. I cut them up like regular potatoes, whip them with my hand mixer adding butter, salt and maple sugar.. My husband loves them this way.

Nancy, below is a muffin recipe I would like to share with the group. These muffins are excellent. I am sure, if you like lemon, you will like these muffins. I did use real lemon juice and the zest.

Lemon Crumb Muffins

6 cups all-purpose flour
4 cups sugar
3/4 teaspoon baking soda
3/4 teaspoon salt
8 eggs
2 cups (16 ounces) sour cream
2 cups butter, melted
3 tablespoons grated lemon peel
2 tablespoons lemon juice

**Streusel:
3/4 cup all-purpose flour
3/4 cup sugar
1/4 cup cold butter

**Glaze:
1/2 cup sugar
1/3 cup lemon juice

In a large bowl, combine the flour, sugar, baking soda and salt. In another bowl, whisk the eggs, sour cream, butter, lemon peel and juice. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full.

In a small bowl, combine flour and sugar, cut in butter until mixture resembles coarse crumbs. Sprinkle over batter.

Bake at 350 degrees for 20 to 25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. In a small bowl, whisk glaze ingredients; drizzle over warm muffins. **Yield: 40 muffins.

**This makes a lot of streusel to sprinkle over muffins. I used 1 teaspoon per muffin but I think next time I will try 2 teaspoons. I froze what I did not use.

**I got 31 muffins, not 40 as the recipe reads.

I love the fall season with all the lovely colors from God's own paintbrush. Fall also reminds me of apples and pumpkins, and would like to share two recipes that I've tried recently, that are so good!

Honey Apple Pancakes
1-1/4 cups flour
2 tsp. baking powder
1/2 tsp. apple pie spice
1/4 tsp. salt
1/8 tsp. baking soda
1 egg
3/4 cup apple juice
1/3 cup milk
2 tbsp. honey
1 tbsp. cooking oil

In medium sized bowl, combine all dry ingredients. In small bowl, whisk together the egg, oil, honey, apple juice and milk. Add to dry ingredients and whisk only until dry ingredients are moistened..do not over mix, as mixture should still be somewhat lumpy. Use about 1/4 cup batter for each pancake and drop into a hot greased skillet, and cook until golden brown on both sides. Makes about 1 dozen. Serve with butter
and syrup. These are light tender and delicious.

Coconut Pumpkin Loaf
2 cups sugar
2 cups flour
1 tsp. baking soda
1/2 tsp, salt
1 tsp. cinnamon
1 tsp. nutmeg
2/3 cup flaked coconut
2 pkgs. (4 servings each) regular coconut pudding mix-not instant
5 eggs
1-1/2 cups cooking oil
2 cups cooked pumpkin

Mix together in large bowl, sugar, flour, soda, salt, spices, coconut and dry pudding mix. In small bowl mix together well the remaining ingredients. Add to dry ingredients and mix together until thoroughly blended. Pour into two greased and floured 9 x 5 inch loaf pans. Bake about 1 hour at 350º, or till tests done. Cool 10 minutes and remove
from pans to wire racks to cool completely. This was so tasty!

Due to arthritis in my hands I make bread in a bread machine. When friends come over I usually send them home with a loaf or if someone is sick or been in the hospital I will take a loaf with me when I visit in their home. My machine only makes one loaf at a time. Since Christmas is just around the corner I was thinking of making several loaves ahead. I was planning on freezing them and getting the bread out as I need it. Has anyone frozen fresh made bread that was made in the bread machine? I was wondering if it changed the texture, taste, how long it should it be keep frozen and etc. What would you wrap or store it in? Any suggestions would be helpful. TNT bread machine recipes would be greatly appreciated too.

Roasted Yams, Squash, and Chestnuts with Hazelnut Topping

Filling:
5 leeks, well rinsed & sliced into 3/4 in. chunks (white & light
green parts)
2 shallots, thinly sliced
2 large garnet yams, peeled & cut into 1 in. pieces (or two 10 oz.
bags frozen chopped sweet potato)
1 1 lb. butternut squash, peeled, seeded, and cut into 1 in. pieces
1 c. roasted chestnuts (or one 7 oz. jar roasted chestnuts, drained)
1 t. dried sage
1 t. dried marjoram
Salt & freshly ground black pepper, to taste
2 T. olive oil
1 c. low-sodium, fat-free vegetable broth

Topping:
1 c. freshly grated pecorino cheese
3/4 c. hazelnuts, coarsely chopped
1/2 c. dry whole-wheat panko or regular breadcrumbs
2 T. raw pumpkin seeds
3 T olive oil
Freshly ground black pepper

Preheat oven to 400. Combine all vegetables, chestnuts, sage, marjoram, salt & pepper in large roasting pan; drizzle w/olive oil & toss gently to coat. Roast for 45 min., stirring once or twice, or until vegetables are tender & browned. Remove from oven. Stir in broth. Transfer mixture to 9 x 13 in. baking dish lightly coated w/ cooking spray. In med. bowl, combine all topping ingredients. Sprinkle over filling. Bake for 30 min. or until filling is hot and bubbly. 422 cal. Serves 8. This is fiber rich and a true celebration of autumn. Save time by using bottled chestnuts & frozen sweet
potatoes.

(Before making almost any sweet potato recipe, you need to bake the vegetable first. Clean the sweet potato, prick the skins. Bake on the rack of a 400 oven about 45 min. or until easily pierced with a fork. Let them cool slightly before trying to peel them.)

Mashed Sweet Potato Casserole
6 med. sweet potatoes
1/2 stick butter, melted
1/4 c. honey
1 c. flaked coconut
1 T lemon juice
1/2 t. ground cinnamon or cloves
1 egg
4 T. milk.

Bake sweet potatoes. Let cool, peel & cut into chunks. Set chunks in large heavy bowl & mash by hand or with electric mixer. Add melted butter, honey, coconut, lemon juice & spices. Stir well. Beat egg w/ milk, & add to potato mixture. Turn into pretty oven-proof casserole dish & bake 300 about 25 min., until top is golden. Place small cube of butter on top to melt, just before serving. Serves 6.

1/2 cup rice
1/2 cup raisins
1/2 cup sugar
1/2 tsp. salt
1 qt. milk

Put in large casserole. Stir 'til sugar is dissolved. Add 1 tsp. vanilla and 1 tsp. cinnamon. Stir again and bake 350° for 30 minutes. Reduce heat to 325° and bake another ½ hour. Serve warm or cold

Rice Pudding With Wine Sauce
from Nancy’s Kitchen

4 lg. eggs, well beaten, mixed with
8 c. cooked, drained, long grain rice

In another pan bring to a boil:
2 c. white wine
1 c. honey
2 c. white raisins
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. nutmeg

Mix all ingredients and pour into a greased cake pan. Bake in a preheated 350 degree oven until moisture mostly gone. Don't allow the top to become too hard and crusty.

I made a variation of the 2 ingredient fudge yesterday. I used 1 can chocolate fudge frosting, an 8 oz. bag of dark chocolate baking pieces with the raspberry cream center and 2 oz. bittersweet chocolate wafers from The Prepared Pantry, 1 c. mini marshmallows and ½ c. chopped pecans. I then put the pan of fudge in the fridge to harden. Smelled so yummy!

For Karen C in TX - Two Different Version of Twice baked Sweet Potatoes.

Double Stuffed Sweets #1
6 med. sweet potatoes
1/4 c. brown sugar, packed
1/2 c. butter
1/2 tsp. grated orange peel
1 c. apple, diced
1/4 c. pecans, chopped

Bake sweet potatoes. Cut lengthwise; scoop out filling, leaving the shell with some "pulp" to stuff. Mix potatoes and all ingredients except apples and pecans. Beat with hand mixer until consistency of mashed potatoes. Stir in apples and pecans. Refill shells with potato mixture. Bake for 15 to 20 minutes at 375 degrees. Can also be made as a casserole without refilling the potato skins.

Twice Sweet Baked Potatoes
6 sweet potatoes, even in size and scrubbed
4 tablespoons brown sugar
4 tablespoons butter, room temperature
4 ounces cream cheese, room temperature
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
Salt and freshly ground black pepper

Preheat oven to 375 degrees F. Bake potatoes for 1 hr at 350 degrees

Remove most of potato from skins, reserve skins with some pulp to stuff. Keep potatoes in bowl to side. In another bowl, add brown sugar, butter and cream cheese and the all of the spices and mash to mashed potato consistency.

Add the butter and cream cheese mixture to the sweet potato flesh and fold in completely. Add the filling back to the potato skins and place on a half sheet tray. Bake for 15 minutes or until golden brown.

When my mom made "Fruit Duff", it was a fluffy steamed type pudding. Not real sweet but not tart either.

Nancy you are amazing to do all of this. You usually some how put the recipes I am thinking about: Sweet Potatoes. I just went today and bought my first bushel to start my holiday baking.

The first thing will be 10 pies, I use to fill the kids freezers every year but too old for that now. Hope you and Ditto are having a good day.

Nancy this is for Judi in Las Vegas, newsletter Oct. 8. : Judi ,yes mix cake as directed , then add other. It makes a big bundt cake. I use it quite often.

Jean in TN on hash brown casserole: I would think you could freeze it either way. I would probably try before cooking. Hope this helps.
