APPLE BANANA ICE CREAM
8 oz. apple pieces (two apple pieces)
6 oz. banana pieces (two bananas)
2-2/3 tbsp. powdered sugar
1/4 tsp. Vitamin C powder
1/4 c. heavy cream
1/2 tbsp. lemon juice
1/4 tsp. vanilla extract

 

Peel fruit, cut into 1 inch chunks and freeze solid, at least five hours. Using food processor, pulse-chop fruit until coarsely chopped, 6 to 8 times. Combine for 40 to 60 seconds, scraping down work bowl as necessary, until fruit is a fine powdered ice. Scrape down bowl and add powdered sugar and Vitamin C powder. With machine running, slowly pour in remaining ingredients through opening. Serve immediately or keep in freezer and reprocess for 20 seconds before serving. For a healthier serving, substitute yogurt for the heavy cream. preparation time: about 6 minutes. Suggestion: keep a plastic storage bag full of frozen fruit for quick dessert or snack. Substitute other frozen fruits for a change of taste. e.g. use 1 package (16 oz.) frozen sliced unsweetened peaches. Adjust sugar to taste.
