APPLE CABBAGE FRUIT SALAD
2 (3 oz.) or 1 (6 oz.) pkg. Royal lime gelatin or 2 (.35 oz.) pkg. sugar free Royal lime gelatin
1 c. boiling water
1 (8 oz.) can crushed pineapple, drained
Cold water
1/2 c. chopped apples
1/4 c. mayonnaise
1 c. finely chopped cabbage

Dissolve gelatin in boiling water. Drain pineapple, reserving juice. Add enough water to juice to make 1 1/2 cups liquid. Stir into dissolved gelatin. Chill until slightly thickened. Measure 1 1/2 cups thickened gelatin into a separate bowl. Stir in pineapple and apple. Pour into 6-cup mold; chill just until set. Combine mayonnaise and cabbage with remaining thickened gelatin. Pour into mold over set gelatin. Chill until firm. Unmold and garnish as desired. Makes 6-8 servings.
