CHICKEN ANDMUSHROOM STUFFING CASSEROLE
|
1 (8 oz.) pkg. herbed stuffing bread
3 c. cooked chicken
1/2 c. butter or oleo
1/2 c. flour
1/4 tsp. salt
Dash of pepper
4 c. chicken broth
6 slightly beaten eggs
1 recipe pimiento-mushroom sauce
(recipe follows)
Prepare stuffing. Spread in 9"x13" pan.
Top this layer with chicken. In saucepan melt
butter, blend in flour and seasonings. Add cool
broth and cook until thickened. Stir a small
amount into beaten eggs and then return it to
hot mixture. Pour over chicken and dressing.
Bake at 350 degrees for 45 minutes or until
knife inserted in center comes out clean.
Cut in squares and serve with Pimiento Sauce.
PIMIENTO SAUCE
1 can mushroom soup
1/4 c. milk
1 c. dairy sour cream
1/4 c. chopped pimientos
Heat and stir until hot. This will make 12 servings.
