CREAMY RAISIN APPLE SALAD (3 points)
1 (4-serving) package Jello sugar-free instant vanilla pudding mix
2/3 cup Carnation nonfat dry milk powder
1 1/4 cups water
1 teaspoon vanilla extract
1/4 cup Cool Whip Lite
1/2 teaspoon Apple Pie Spice or cinnamon
1 1/2 cups diced, unpeeled red apples (3 small)
6 tablespoons raisins
2 tablespoons chopped pecans (1/2 ounce) 

In a large bowl, combine dry pudding mix and dry milk powder. Add water. Mix well using a wire whisk. Blend in vanilla extract, Cool Whip Lite and Apple Pie Spice. Add apples, raisins and pecans. Mix well to combine. Cover and refrigerate at least 30 minutes. Gently stir again just before serving.
 

Serves 6 (1/2 cup) Hint: To plump up raisins without "cooking," place in a glass measuring cup and microwave on high for 30 seconds. Each serving equals: 123 calories, 3 grams fat, 3 grams protein, 21 grams carbohydrates, 255 milligrams sodium and 1 gram fiber.
