CROCK POT APRICOT APPLE CHOPS
2 Pounds pork filets or chops
1 Cup chopped apple
1 Cup chopped dried apricot
1/2 Cup fresh or dried cranberries, (optional)
1 Medium onion, chopped
2 celery ribs, sliced in 1/2" pieces
1/2 Cup apple juice
1/2 Cup brown sugar
1/4 Cup dry sherry or wine, (or more apple juice)
Salt, to taste
Freshly-ground black pepper, to taste
1-1/2 Tablespoons cornstarch, mixed with
2 Tablespoons cold water

Combine all ingredients; cover and cook 7 to 9 hours on LOW. A half hour before serving, pour liquid into a separate container to skim off excess fat. Stir in cornstarch mixture and return broth to crockpot. Continue cooking on LOW until smooth and thickened. This recipe yields 4 to 6 servings.
