MICROWAVE BAKED FISH
|
1 lb. fish fillet (my preference is Orange Roughy)
1 tsp. lemon juice per piece (assume 3 pieces per lb.)
1 tsp. melted butter per piece (assume 3 pieces per lb.)
1/4 tsp. salt
1/8 tsp. pepper
1/4 tsp. dill
1/4 tsp. garlic salt
1/4 tsp. blackened fish seasoning

Line bottom of baking dish with fish. Drip lemon juice and butter over fish. Sprinkle seasonings over fish and cook in microwave oven on high for approximately 7 minutes, rotating baking dish once. Adjust time according to amount of fish being cooked. (Fish should flake when done but not be rubbery.) Yield: 4 servings.
