MICROWAVE EASY CORDON BLEU
2 lg. chicken breasts, boned and halved
4 thin slices ham
4 pieces cheese (1 x 1 x 1/2 inch)
4 tbsp. butter or margarine
1 tsp. lemon herb seasoned salt
1/2 c. grated Swiss cheese
 

Place each boned and halved chicken breast between two sheets of waxed paper. Flatten by pounding with a mallet. On each piece place a slice of ham and a piece of cheese. Pull up sides of chicken and cover ham and cheese. Secure with a wooden toothpick. Place butter in a 9 inch round glass baking dish. Microwave on high 30 seconds, or to melt. Add seasoned salt. Place chicken in seasoned butter. Spoon butter over chicken. Cover with waxed paper. Microwave at high 2 minutes. Spoon liquid over chicken; cover with waxed paper. Microwave at medium 7 to 8 minutes. Sprinkle grated cheese over chicken. Microwave at medium 2 minutes, or until cheese is melted. Let stand, covered 3 to 5 minutes. Serve with liquid. Yield: 4 servings.
