MICROWAVE HONEY GLAZED CHICKEN
1/2 tsp. finely shredded orange peel
1/2 c. orange juice
2 tbsp. honey
1 tbsp. soy sauce
2 tsp. cornstarch
2 to 2 1/2 lbs. chicken pieces  

For sauce, in a 2-cup microwave-safe measure, combine all ingredients, except chicken. Cook, uncovered, on high 2 to 3 minutes or until mixture is thickened and bubbly, stirring every minute. Set aside. In an 8x12x2 inch microwave baking dish, arrange chicken pieces, skin side down, with meatiest portions facing toward the outside of dish. Cover loosely with waxed paper and cook on high 9 minutes, giving dish a half turn and rearranging chicken pieces once. Drain well. Brush chicken with sauce. Turn chicken and brush with sauce again. Cook on high 8 to 10 minutes more or until chicken is no longer pink. Keep warm. Cook remaining sauce, uncovered, for 1 minute or until heated through. Serve with chicken. Serves 4.
