MICROWAVE LASAGNA
FILLING
3/4 lb. ground beef (optional)
2 eggs
1/2 c. grated Parmesan cheese
1 c. (8 oz.) Ricotta or cottage cheese
1/2 tsp. oregano
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. parsley

OTHER INGREDIENTS
1 jar spaghetti sauce
1 box lasagna noodles
8 oz. Mozzarella cheese, shredded
1/2 c. Parmesan cheese

Crumble meat into casserole. Cover and microwave on high 3 to 4 minutes. In bowl, slightly beat eggs. Add remaining filling ingredients, mixing well. Cook noodles according to directions on the box. When cooked, cool with cold water. In 7 x 11 inch baking dish sprayed with Pam, spread some sauce. Place a layer (3 plus) of noodles on bottom. Spread beef filling over noodles. Repeat layers, spreading sauce on each first until all used up. Spread sauce on top and cover with plastic wrap. Microwave on High 8 minutes; then simmer 50% power for 8 minutes. Take out of microwave. Put Mozzarella cheese on top. Let sit 5 minutes with plastic wrap on. Cheese will melt and it will look great.
