STRAWBERRY AND MIXED FRUIT COBBLER
1 pkg. (16 oz.) frozen mixed fruit
1 pkg. (10 oz.) frozen sweetened strawberries
2 tbsp. all purpose flour
1/4 tsp. ground cinnamon
2 tbsp. butter
1/2 c. almonds, sliced
2 tbsp. sugar
1/8 tsp. ground cinnamon
2 tbsp. butter
1 c. buttermilk baking mix
1/4 c. half & half or milk 

  

Remove fruit and strawberries from packaging and place in medium mixing bowl. Microwave at high for 4 to 6 minutes or until fruit can be broken apart. Let stand 5 to 10 minutes. Drain juices into 1-1/2 quart casserole. Set fruit aside. Blend flour and 1/4 teaspoon cinnamon into fruit juices. Microwave at high for 3 to 4 minutes or until mixture thickens, stirring 1 or 2 times. Stir in reserved fruit. Set aside. Place 2 tablespoons butter in shallow bowl. Microwave on high for 45 to 60 seconds or until butter melts. Stir in almonds. Microwave on high for 1 to 2 minutes or until almonds are lightly brown. Stir in sugar and 1/8 teaspoon cinnamon. Set aside. Place 2 tablespoons butter in small mixing bowl. Microwave at high 45 to 60 seconds or until butter melts. Add baking mix and 1/4 cup half & half. Mix well. Drop by heaping tablespoons onto fruit mixture. Sprinkle with almond mixture. Microwave at high for 5 to 6 minutes or until dumplings spring back when touched slightly. Rotate dish 2 times. Serve warm with half & half. Yield 6 to 8 servings. Recipe can be doubled using additional packages of frozen peaches and 13 x 9 x 22 inch glass dish
