How to print out a section of the newsletter
1. Put cursor in the section you want to print. Click the mouse three
times to highlight the paragraph or section.
2. Choose the print option. Change the Page Range option from ALL to
SELECTION.
3. Press the Print button located on the lower part of the print screen
Note: The three clicks will be the area between the divider lines.
Oh 9-20-08 Boots in Va was asking about the roomba automatic sweeper. I
had one 3 years ago and I like it because it went on its own but you
need to use the little room guides that come with it so it doesn't roam
all over the room. Also the battery only
lasted a year and I had to replace it $59+S&H and then this only lasted
another year.
Now I can't afford to replace it a third time. The roomba was over $200
too which is
so expensive!

WW Milkshake
I love this milk shake. It's surprisingly thick and tasty.
SERVES 1
1 cup skim milk or 1% low-fat milk
4 ice cubes
1 teaspoon vanilla extract (or almond extract) or instant coffee
sugar substitute
Place all ingredients in blender.
Blend until all ice is crushed and milk shake is thick.
It really does become thick.
WW Danish
1 slice raisin bread
1/3 cup cottage cheese- either
1 regular or low fat
1/8 tsp vanilla or to taste
1 artificial sweetener to taste
1 cinnamon
Toast raisin bread. mix remaining ingredients
together and spoon on toast
spreading evenly over toast. Place under broiler or in toaster oven on top
brown only until hot and bubbly.
servings: 1
WW Snickers
12 oz. Weight Watcher's vanilla ice cream
1 c. Cool Whip
1 sm. pkg. chocolate sugar free Jello instant pudding, mixed as directed
1/3 c. chunky peanut butter
3 oz. Grape-Nuts
Mix all together. Spread in 8x8 inch pan. Freeze. Cut into 8 equal bars.
Wrap and freeze.
Mary, the milkshake is a great snack when you're craving something
sweet. Thanks for the reminder. I'll be making it again, too!

This is in response to the request in the Sept. 19 newsletter for Mary
in Ct. The recipe
I have for the WW Milkshake is:
1 diet soda (any flavor) and 3 oz. dietary frozen dessert- vanilla. Mix
in blender.
Equals- 1 fruit and 1/2 Milk.
The other recipe is for Chocolate Kisses. You use one package of
chocolate Alba, 1/4 c. applesauce and 1 TBsp. Peanut Butter. Mix and
drop on cookie sheet. Freeze. Equals- 1 milk, 1/2 fruit, 1 protein and 1
fat.

In response to Shirlee request on Sept 16 asking how to get
moist chicken breasts. You could be cooking your chicken to
long for one thing. Also, do you brine them? I find brining helps to
keep them moist.

1/4 c. cottage cheese
artificial sweetener to equal 1 t. sugar
dash of cinnamon
1/2 t. vanilla extract (you can try different flavors)
1 slice toast
Mix the cottage cheese, sweetener, cinnamon and flavor extract. Spread
on toast--be sure to spread it clear out to the edges of the toast or
they can burn--and place under broiler until bubble and hot.

I do not know if any of you saw Gena on Italian cooking on the Food
Network Friday night. She showed how to make donut's from pizza dough.
She took pizza dough, rolled out to 1/2 in. then cut doughnut's, deep
fried them, sprinkled sugar and cinnamon or
Grenache and nuts. Looked very easy, and would be good to do with
children. Yes, I know they are fried, but you know a little fried want
hurt you. Nancy, Happy Birthday! I hope you Gals in the Atlanta area got
to go by and see my beautiful eggs at Atlanta
Ga. Power Bldg. It closed today. Trophy's will be given out today, but I
can't go, had surgery this past Wednesday. I understand I won a trophy,
(money). Sure can use it!

In the September 19th newsletter Anita in Camarillo was looking for a
bread machine recipe. I have been baking my own bread for a long time. I
mix mine in the bread machine on the dough cycle and then put in bread
pans, let raise and bake in the oven at 375 degrees for about 20 minutes
or until done.

Sunflower Seed Bread for Bread Machines TNT
1 1/4 cups water
2 1/2 cups white bread flour
3/4 cup wheat bread flour
2 tablespoons dry milk
1/2 teaspoon salt
2 tablespoons butter
3 tablespoons honey
1/2 cup sunflower seed
2 teaspoons fast rise yeast or 3 teaspoons active dry yeast
Place ingredients in bread machine in order listed. Be sure water is at
room temperature. If using unsalted sunflower seeds, increase the salt
by a pinch.

Potato Bread (and Variation) TNT
1 1/4 cup water
1 egg
2 tablespoon olive oil
3/4 cup instant mashed potato flakes
2 tablespoon sugar
1/4 cup non-fat dry milk
2 teaspoon salt
3 cup bread flour
1 1/2 teaspoon fast-rise yeast
Place all ingredients in the bread machine, following your
manufacturer's directions as to the order. Use the white, dough setting.
After five minutes or so of kneading, check the
dough and add water or flour one tablespoon at a time, until you see a
nice ball of dough that does not stick to your finger, yet holds
together.
Potato Wheat Bread:
Follow all instructions for the original potato bread recipe at the top
of the page. For the flour, use 1-1/2 c. bread flour, and 1-1/2 c. whole
wheat flour, instead of the 3 c. bread flour.

1 cup warm water (110 degrees F)
1 tablespoon butter
1 tablespoon dry milk powder
1 tablespoon white sugar
1 1/2 teaspoons salt
4 1/2 tablespoons dried parsley
2 teaspoons garlic powder
3 cups bread flour
2 teaspoons active dry yeast
Place ingredients in the pan of the bread machine in the order
recommended by the manufacturer. Select Basic Bread cycle press Start.

I buy GFS frozen boneless skinless chicken breasts in a package. They
are never dry or tasteless. I pan fry them or use them in soups and
stews. Gordon Food Service is a food supply company with a store near
me.

Applesauce Cake Loaf
[Preheat oven to 350° F]
1 cup packed brown sugar
1/2 cup butter, softened
1 egg
1 tsp. vanilla
1 cup chunky applesauce
2 cups all-purpose flour
1 tsp. salt
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground cloves
1 cup raisins
1/2 cup chopped nuts
Beat together the brown sugar and butter in large bowl with electric
mixer on high speed 2 minutes. Beat in egg, vanilla, and applesauce.
Stir in flour, salt, baking soda, cinnamon, and cloves. Stir in raisins
and nuts. Pour batter into a loaf pan that has been
greased on the bottom only.
Bake 60-75 minutes, or until toothpick inserted in center comes out
clean. Cool 15 minutes. Loosen sides of loaf from pan; remove from pan
to wire rack. Cool completely, about 1 hour, before slicing.
YIELD: 1 loaf [24 slices]

In the Friday newsletter Gail in LA wanted a recipe for Applesauce Cake,
and this is one I have used many times, although not for a while. Hope
this is what she wants.
Applesauce Cake
1 cup melted butter
2 cups sugar
2 eggs
2 cups pitted, chopped dates
2 cups raisins
2 cups chopped nuts
3 cups applesauce (I use cooked dried apples)
4 cups sifted all-purpose flour
1/2 tsp. cinnamon
4 tsp. soda (YES 4 tsp.)
1/2 tsp. ground cloves
2 tsp. vanilla extract
Mix butter, sugar and eggs. Add dates, raisins,nuts and applesauce and
mix well. Sift flour with soda, cinnamon and cloves, add to applesauce
mixture. Add vanilla. Bake in tube pan at 325 degrees for about 1 hour,
or until tested done with toothpick.
ICING (Optional)
1/2 cup butter
1 cup brown sugar
1/4 cup evaporated milk
1 tsp. vanilla extract
Combine butter, sugar and milk. Bring to a boil, and boil for 2 minutes.
Remove from heat and add vanilla. Let cool and spread on cake.

To Judy in Ohio about the glass stove top....sounds like you have your
work cut out for you! I have found that baking soda works pretty well.
For something that bad I would spray an all purpose cleaner all over the
top and sprinkle on a box of baking soda. Might
be a good idea to let sit for an hour or two. You will have globs to
clean up but the baking soda will soften whatever is burned onto it.
I've also tried white toothpaste with success and have used a green
scrubbie--it hasn't harmed the top and gets it really
clean.

This is for Gail in La asking in Fri. Sept. 19th newsletter about an
Applesauce Raisin Cake. This is my mother's recipe. Although it doesn't
call for raisins, I'm sure you can add whatever amount you want.

Applesauce Cake
3 c. flour
2 c. sugar
2 t. cinnamon
2 t. baking soda
1/2 t. salt
1-1/2 c. vegetable oil
2 eggs
1 can (14-1/2 oz. or so-just your regular size) applesauce
1/2-1 c. raisins-you choose how much
Mix all ingredients, except raisins, and beat on medium speed for 6
minutes. Stir in raisins after beating other ingredients. Pour into a
floured and greased (I would use a baking spray) tube pan. Bake at 350
degrees for 1 hour 10 minutes or until cake tests done. Cool slightly
then turn out on serving platter.
Top with following:
Mix 1/2 c. butter, 1 c. powdered sugar, 1 t. vanilla , 1/2 t. cinnamon
and cook until it
boils. Spoon over warm cake.

Chocolate Shortbread Fingers
3 sticks (1-1/2 cups) unsalted butter, room temp, plus more for pan
2-1/2 cups plus 2 TB all-purpose flour
4 -1/2 TB Dutch-process cocoa powder
Heaping 1/2 ts ground cinnamon
1/2 ts salt
1/4 ts baking soda
1 cup superfine sugar
Granulated sugar, for sprinkling
Preheat the oven to 325 degrees F. Butter a 12 by 8 inch rimmed baking
sheet and line with parchment paper, leaving a 1-inch overhang on the
long sides; set aside. In a medium bowl, whisk together flour, cocoa,
cinnamon, salt and baking soda until
combined.
In an electric mixer fitted with the paddle attachment, beat the butter
and superfine sugar on medium-high speed until light and fluffy, 3 – 4
minutes, scarping down the sides of the bowl. Add flour mixture, and
beat on medium speed until just combined.
Using a small offset spatula, evenly spread dough in prepared baking
sheets. Chill in the freezer or refrigerator until dough is firm, about
15 minutes. Prick dough all over with a fork; bake until just firm to
the touch, about 20 – 25 minutes. Transfer to a wire rack,
let cool a bit. Then while still fairly warm, use a large knife to cut
shortbread into 4 by 1 inch pieces. Sprinkle with granulated sugar.
Cool.Can be kept in an air tight container for up to 1 week.
Note: I forked the dough before going into the freezer. I let these cool
a while before cutting them, and waited for a complete cool before
putting the decorative sugar on them since the heat of the bars only
melts the sugar.
To Eileen in MASS, haven't gone to Kane's Donuts, yet. We will, I can't
forget that place! We are in the process of buying a home, while going
to grad school and running my business; time is tight these days. But I
am dying to go there for sure.

Someone recently asked about making English muffins with large holes.
Since the sourdough muffins we love have an even texture without holes,
I decided to explore the subject. An internet recipe search lead to many
complaints from cooks about the lack
of holes in their homemade muffins. Then I think I hit paydirt with this
site and recipe.
I'll let you know if the addition of baking soda works next time I make
muffins. In the meantime, maybe some of you would like to try the
recipe.

Anita in Camarillo is looking for bread machine recipes
and this one has excellent flavor and moistness. I make a couple of
recipe changes. I put the drained sauerkraut and the flour into my food
processor and pulse for a few seconds to chop up the long
strands. I use the recipe as is for dark rye, but omit the molasses and
use 3 Tbsp brown sugar for light rye.

1 cup sauerkraut rinsed and drained
3/4 cup warm water
1 1/2 Tbsp molasses
1 1/2 Tbsp brown sugar
1-1/2 Tbsp butter
1 tsp caraway seed

1 cup rye flour
2 cups bread flour
1 1/2 tsp active dry yeast

Place ingredients in the pan of the bread machine in the order
recommended by the manufacturer. Select basic bread cycle; press start.
Lemonade Cookies
1 c. butter or margarine, softened
1 c. granulated sugar
2 eggs
3 c. all-purpose flour
1 tsp. baking soda
6 oz. frozen lemonade concentrate, thawed and divided
Preheat oven to 400F.
In a large bowl, cream the butter and sugar; add in the eggs. Combine
the flour and baking soda. Sift once, and to the creamed mixture
alternately with 1/3 C. of the lemonade concentrate. Mix well. Drop by
rounded teaspoonfuls onto ungreased baking
sheets. Bake for 8 minutes. Remove to wire racks. Brush with remaining
lemonade concentrate; sprinkle with some additional sugar while warm.
Cool. Yield: about 6 dozen

Here is a recipe I would like to share with all the good cooks out there
in "Nancyland".
Moon Cake
1 cup water
1 cup flour
2-1/2 cups cold milk
1 pkg. (8 oz.) cream cheese, softened
1 (8 oz.) tub whipped topping, thawed
1/2 cup butter
4 eggs
1 large pkg. (5 oz.) vanilla instant pudding
chocolate ice cream syrup
Bring water and butter to a boil in medium saucepan. Add flour all at
once, and stir quickly on low heat to form a ball. Remove from heat; add
eggs, one at a time, beating well after each. Spread in a ungreased 9 x
13 inch baking pan. Bake at 400º for 30 minutes. Cool. Prepare vanilla
pudding mix with the milk, as directed on package. Beat in cream cheese
at low speed of mixer just till blended. Spread over base. Cover with
whipped topping and drizzle with chocolate syrup. Refrigerate until
serving time. This
tastes like a éclair in a pan. Delicious!

Zucchini Muffins
1 spice cake mix
1 tsp vanilla
1 tsp cinnamon
1 cup raisins boiled w/ 1 cup water
eggs called for on cake mix box
oil called for on cake mix box or same amount of applesauce
1 to 2 cups chopped pecans
1 or 2 grated carrots
2 to 3 cups grated zucchini
Drain raisins, reserving liquid. Add enough water to make 1 cup. Sift
cake mix with cinnamon. Add vanilla, eggs, oil or applesauce, raisin
water and follow directions on box for beating batter. Add raisins,
pecans, grated carrots and zucchini (to make 3 cups
grated vegetables). Bake in cupcake papers or in well oiled muffin tins
in preheated 350 degree oven for 30 to 40 minutes or until a toothpick
inserted in center of muffin comes
out clean.

Blue Cheese Chopped Salad

Four entree-size portions
1 Head romaine lettuce
4 Heads iceberg lettuce
1 lb. Shredded carrot
1 lb. Shredded red cabbage
3 oz. Chopped chives
5 oz. Angel hair pasta (fried and broken)
5 oz. Blue cheese chopped in squares
5 oz. Balsamic vinegar
3 oz. Caramelized candied pecans
Chop lettuce in 1/2-inch squares. Mix lettuce with the carrot, cabbage,
pecans and vinegar. Add the angel hair pasta, blue cheese and chives.
Serve in a chilled bowl. Serving Suggestion: Top with sliced grilled
chicken breast.

To Suzie in NW Michigan who is trying to get rid of a smell in
the car. Has anyone suggested that a small animal may have
crawled in and died in the car? I had a mouse die behind my dishwasher.
That was easy enough to get rid of by moving the dishwasher out and
getting the mouse body. I also had a mouse or something small die behind
my kitchen cabinets. The odor was there for 6 months or more until it
finally probably dried up or mummified. There was no way to reach it
without taking the cabinet apart. I just put masking products in the
cabinet. Renuzit and other fresh air
products. Look in the engine. Look in the trunk and pick up the carpet
wherever possible. Take the car to a quick lube place and have them look
around under the car (while they're changing your oil etc.) If you tell
them the problem they'll try to solve it
for you. Good luck.

For Suzie in NW Michigan - I'm pretty sure you've probably already done
this, but have you taken everything out of your trunk to make sure the
culprit isn't there? One time a friend put a "doggie bag" from dinner in
my trunk and forgot about it. It got covered up
with other things and went unnoticed - until the most awful smell in the
world permeated my car. I checked every inch of the interior of the car,
thinking the smell originated there, and several days went by until I
found the rotted food in the trunk.
One removed, all the smell disappeared in less than a day. Just passing
this on, since you never know when something might help.

Try WD 40 to remove gum from the dryer. It is amazing
what this product removes. I use it to remove almost anything.

I miss Ditto trying to sneak up on Siggy. Ditto makes all sorts of
noises when he is sneaking up on anything. He does not know that
he is making noise because he can't hear. Siggy would act like he
was surprised although he could hear Ditto coming.
It is hard to come in the house each day after doing errands.
In the past both Siggy and Ditto (my cats) would be there to greet me at
the door. Because Ditto can't hear (even with the alarm system
making noise as I open the door) he does not meet me at the door.
Ditto is always glad to see me but I have to wake him up to let him know
I am back. Ditto misses Siggy too. They loved each other very much.
After I had total knee replacement (twice) Siggy would watch and watch
me while I was doing leg lifts. After watching me carefully for
several days he began doing leg lifts too. He would raise both his
hind legs up and down as I would do the leg lift exercises. I just wish
I had gotten a video of his leg lifts. He was such a wonderful
companion.
I have to smile the time Siggy got out the door and I chased him for
over two hours. Just couldn't catch him no matter what I did.
My neighbor come over to tell me she had good news and bad news.
The good news was Siggy was sitting on my porch. The bad news was I was
chasing the wrong cat for the past several hours.
It is really hard to sleep at night without Siggy sleeping on the pillow
next to me. He always snored very loudly. Ditto has taken
his place on the pillow but does not snore. After 17 years of cat
snoring next to me it is very quiet at night and I find myself waking up
a lot of night because it is too quiet.
Siggy was not only a faithful cat companion but also a certified service
cat. He learned to retrieve my cell phone anytime I fell. It
allowed me to call for help when I could not get back up after I fell. I
am the luckiest person to have such a wonderful cat to come into my life
for more than 17 years.
