Turkey and Rice Stuffed Peppers

4 TO 6 sweet green peppers sliced lengthwise, seeded and cleaned
1 tablespoon oil
1 garlic clove minced
1 pound fresh ground turkey
1 1/2 cups diced canned tomatoes
1 1/2 teaspoon basil
1 teaspoon dried oregano
1 bay leaf
salt and pepper to taste
2 cups cooked white or brown rice
1 cup cooked black beans
1/2 cup cooked kernel corn
1 2/3 cups shredded old cheddar cheese

Heat oil in large skillet over medium heat, add onion and cook stirring occasionally
until soft. Stir in garlic, turkey and cook until turkey is no longer pink.
Stir in tomatoes, basil, oregano and bay leaf, reduce heat, simmer 10 minutes.
Remove bay leaf.

In large bowl mix together the beans, rice, corn, and turkey from skillet. Add in 1 1/3 cups cheese.
Spoon filling into the peppers and place in a baking pan. Add A Bit Of Water To The Bottom Of Cooking Pan.

Cover with foil and bake at 350*F 30 to 40 minutes until peppers are tender.
Remove foil, top with remaining cheese and return to oven untill cheese melts.
Serve 4
